These absolutely decadent dessert bars are great at any time of the year. Be prepared to listen to ecstatic raving after your guests taste them! Cook time includes chill time.

1 cup flour
3/4 cup oats
1/2 cup sugar
1/2 cup margarine
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup chopped salted peanuts
1/2 cup caramel ice cream topping
1/2 cup chopped peanuts
1 1/2 cups mini marshmallows
1/2 cup chocolate pieces or 1/2 cup chocolate chips

Steps:

  • Grease 9-inch square baking pan.
  • Electrically beat all "Crumb" ingredients except nuts.
  • Stir in peanuts.
  • Press 2/3 of the mixture into the baking pan.
  • Bake at 350°F for 12-17 minutes or until golden brown.
  • Spread 1/2 cup caramel ice cream topping over baked crumb mixture.
  • Sprinkle 1/2 cup peanuts, 1.5 cup mini marshmallows, and 1/2 cup chocolate pieces over caramel.
  • Cover with the remaining 1/3 of crumb mixture.
  • Return to oven and bake for 20 minutes.
  • Chill bars in refrigerator for 2-3 hours.
  • Cut into squares and keep refrigerated until served.

Caramel apples are taken down a rocky road by rolling in marshmallows and pecans. A dark chocolate drizzle finishes them off.

6 Granny Smith apples
6 wooden sticks
1 (14 ounce) package individually wrapped caramels, unwrapped
2 tablespoons water
½ teaspoon vanilla extract
1 ½ cups miniature marshmallows
1 ½ cups chopped pecans, toasted
1 cup semisweet chocolate chips

Steps:

  • Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a cookie sheet covered with lightly greased aluminum foil.
  • Combine caramels and water in a saucepan over low heat. Cook, stirring often, until caramel melts and is smooth. Stir in the vanilla. Dip each apple into the caramel and gently run apples around insides of saucepan to scrape off some of the caramel. Scrape excess caramel from the apple bottoms using the side of the saucepan.
  • Combine the miniature marshmallows and pecans on a dinner plate. Roll the apples in the mixture to coat. Place on the aluminum foil and chill.
  • Put the chocolate chips in a microwave-safe bowl. Cook in the microwave for 30 second intervals, stirring between each, until melted and smooth. Drizzle over the apples and return them to the refrigerator until ready to serve.

Crust:
1 c all-purpose flour
3/4 c quick-cooking oats
1/2 c sugar
1/2 c margarine, softened
1/2 t baking soda
1/4 t salt
1/4 c chopped honey roasted peanuts
Topping:
1/2 c caramel ice cream topping
1 1/2 c miniature marshmallows
1/2 (7 oz) milk chocolate bar, cut into chunks (or 3/4 cup milk chocolate chips)

Steps:

  • Heat oven to 350 degrees. Combine all crust ingredients except peanuts in large mixer bowl. Beat at low speed, scraping bowl often, until mixture is crumbly (1-2 minutes). Stir in 1/4 cup peanuts. Reserve 3/4 cup crumb mixture. Press remaining crumb mixture onto bottom of well-greased 8-or 9-inch square baking pan. Bake 5 minutes. Meanwhile, place ice cream topping in small microwave-safe bowl. Microwave on high until hot (about 1 minute). Drizzle topping over hot partially baked crust. Sprinkle with 1/4 cup peanuts, marshmallows and chocolate chunks. Sprinkle with reserved crumb mixture. Continue bakine 15-20 minutes until marshmallows are lightly browned. Cool completely. Cut into bars.

Steps:

  • Grease a 20cm X 20cm tin/dish and line with baking parchment.
  • Place the white and dark chocolate, the condensed milk and the butter in an ovenproof bowl and place over a saucepan of shallow simmering water. Ensure that the bowl does not touch the water. When the ingredients have melted, stir to combine. Leave to cool for 10 mins.
  • Place the remaining ingredients in a large mixing bowl. Add the chocolate mixture and quickly stir to combine. Pour into the tin/dish and even out with the back of a spoon. Refrigerate for at least four hours.
  • When the rocky road slab has set, loosen the edges with a knife and turn out onto a board. Cut into 3-4cm squares and dust with sieved icing sugar.
