Number Of Ingredients 17

1 cup packed light brown sugar
1 cup white sugar
1 1/2 cups vegetble oil
3 eggs
3 cups flour
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
5 granny smith or golden delicious apples, cored, peeled and cut in 1/2 inch pieces
1 1/4 cups chopped pecans or walnuts
2 1/4 tsp. vanilla extract
4 tbsp. butter
1/4 cup granulated sugar
1/4 cup light brown sugar
pinch salt
1/2 cup heavy cream

Steps:

  • 1. Preheat oven to 325. butter and flour a 9 x 13 inch pan.
  • 2. to make the cake, beat both sugars and oil in mixing bowl til very well blended. Add eggs, one at a time, beating well after each addition. Sift together flour, baking soda, cinnamon, nutmeg and salt. Gradually add to eggs, mixing just til blended. Stir in apples, pecans and vanilla; pour into pan.
  • 3. Bake for 50 to 75 minutes or til toothpick inserted in center comes out clean. Let cool in pan while making the glaze.
  • 4. For glaze, melt the butter in a pan over low heat. Stir in both sugars and salt. Cook over medium low heat for 2 minutes. Add cream and boil for 2 minutes, stirring constantly
  • 5. Poke holes in the cake with skewer or toothpick. Pour on the glaze. Serve warm or at room temperature. Top with whipped cram or ice cram if you wish. Makes 12 servings.

MY Mother made this family favorite from scratch and it was the most requested birthday cake. We could hardly wait for apple harvest to begin, because we kids knew what would be baking in the oven. The tempting aroma brought us right into the kitchen.

1/2 cup sugar
1/2 cup canola oil
1 egg
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped peeled tart apple
1/3 cup chopped walnuts
1/4 cup sweetened shredded coconut, chopped
GLAZE:
1/3 cup packed brown sugar
3 tablespoons butter
1 tablespoon 2% milk

Steps:

  • In a large bowl, beat the sugar, oil, egg and vanilla until well blended. In a small bowl, combine the flour, baking soda and salt; gradually beat into sugar mixture until blended. Stir in the apple, walnuts and coconut., Spread into a greased 8-in. fluted tube pan. Bake at 350° for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. , In a small saucepan, combine the glaze ingredients; bring to a boil. Remove from the heat; drizzle over cake.

2 1/2 cups plus 1 tablespoon flour
1 1/4 teaspoons ground cinnamon
1/4 teaspoon fresh-ground nutmeg
1 teaspoon baking soda
1 teaspoon salt
1 cup oil
2 cups sugar
3 eggs
1 1/2 teaspoons vanilla
3 tablespoons orange juice
1 1/4 pounds Granny Smith apples, peeled and cut into 1/2-inch chunks (3 1/4 cups)
1 cup chopped pecans

Steps:

  • Generously grease 12-cup capacity bundt cake pan and lightly flour. Sift together 2 1/2 cups flour, cinnamon, nutmeg, baking soda and salt onto sheet of wax paper. Combine oil, sugar, eggs and vanilla in large mixer bowl. Beat 3 minutes until thick and smooth. Add sifted ingredients and orange juice. Mix to combine. Toss apples and pecans with remaining 1 tablespoon flour. Stir into batter with wooden spoon. Batter will be very thick. Transfer batter to prepared pan. Smooth surface. Bake at 350 degrees until wood pick inserted in center comes out clean, about 1 hour. Let rest on cooling rack 5 minutes. Invert cake onto rack placed on sheet of foil. Brush warm cake with Glaze, reapplying Glaze as it drips onto foil. Makes 12 servings. Note: Cake is best eaten warm. Glaze"
1 stick butter, unsalted
1 cup packed light brown sugar
1/4 cup whipped cream

Steps:

  • For Cake, put rack in center of oven; heat oven to 350 degres. Generously grease a 12 cup bundt pan; coat lightly with flour, tapping excess out. Sift together 2 1/2 cups flour, spices, baking soda and salt; set aside. Put vegetable oil, sugar, eggs and vanilla in large mixer bowl. Beat until thick and smooth, 3 minutes. Add sifted ingredients and orange juice; mix to combine. Toss apples and pecans with 1 T flour and stir into batter with wooden spoon; it will be very thick. Transfer to prepared pan and smooth the surface. Bake until toothpick inserted in center comes out clean, about 1 hour. Let rest on cooling rack for 5 minutes. While cake is cooling, make the glaze.
