This is an easy and creamy fudge. Can be made in a very short time and never fails.

1 lb. box powdered sugar
6 tablespoons butter
1/2 cup unsweetened chocolate
1/4 cup milk
1 tablespoon vanilla
1/4 teaspoon salt
1 cup black walnuts

Steps:

  • 1. In a medium sauce pan heat sugar, butter, cocoa, milk, vanilla and salt over low heat stirring until smooth.
  • 2. Stir in Black Walnuts
  • 3. Quickly spread mixture into a buttered 9x5 inch loaf pan
  • 4. Cool and cut into squares
  • 5. Can substitute pecans Makes 2 dozen

2 teaspoons butter
1/3 cup butter, cubed
2 cups sugar
2 cups heavy whipping cream, divided
1 cup light corn syrup
1-1/2 cups chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Line a 13x9-in. pan with foil; grease foil with 2 teaspoons butter., In a large heavy saucepan, combine cubed butter, sugar, 1 cup cream and corn syrup. Cook and stir over medium heat until a candy thermometer reads 238° (soft-ball stage). Stir in remaining cream very slowly so that mixture does not stop boiling., Using a pastry brush dipped in water, wash down the sides of the pan to eliminate sugar crystals. Cook and stir until thermometer reads 245° (firm-ball stage)., Remove from heat; stir in walnuts and vanilla. Immediately pour into prepared pan (do not scrape saucepan). Let stand until firm, about 5 hours or overnight., Using foil, lift candy out of pan; remove foil. Using a buttered knife, cut caramel into 1-in. squares. Wrap individually in waxed paper; twist ends.

5 cups granulated sugar
1/4 cup butter
2 cups half-and-half
1/2 cup milk
2 cups miniature marshmallows
1 teaspoon vanilla
1 cup black walnut, chopped

Steps:

  • Combine 4 cups of granulated sugar, half and half and butter in a heavy pan.
  • Cook over low heat, stirring gently.until sugar dissolves.
  • Cover and cook over medium heat for 2-3 minutes to wash down sugar crystals from sides of pan.
  • Sprinkle remaining 1 cup sugar in a heavy skillet.cook over medium heat, stirring constantly, until sugar melts and turn light golden brown.
  • Pour caramelized sugar and milk into fudge mixture.
  • MIXTURE WILL LUMP BUT WILL BECOME SMOOTH WITH FURTHER COOKING.
  • Cook over low heat, stirring constantly, without stirring, until mixture reaches soft ball stage, 240*,
  • Cool down to 160*.add marshmallows and vanilla.
  • Beat with a spoon until marshmallows melt and mixture begins to thicken.
  • Stir in black walnuts, pour into a buttered 9" square pan., spreading with a spatula.
  • Cool and cut into squares.

1 cup milk chocolate chips
¼ cup butterscotch chips
¼ cup creamy peanut butter
¼ cup butter
1 cup white sugar
¼ cup evaporated milk
1 ½ cups marshmallow creme
¼ cup creamy peanut butter
1 teaspoon vanilla extract
1 ½ cups chopped salted peanuts
1 (14 ounce) package individually wrapped caramels, unwrapped
¼ cup heavy cream
1 cup milk chocolate chips
¼ cup butterscotch chips
¼ cup creamy peanut butter

Steps:

  • Lightly grease a 9x13 inch dish.
  • For the bottom layer: Combine 1 cup milk chocolate chips, 1/4 cup butterscotch chips and 1/4 cup creamy peanut butter in a small saucepan over low heat. Cook and stir until melted and smooth. Spread evenly in prepared pan. Refrigerate until set.
  • For the filling: In a heavy saucepan over medium-high heat, melt butter. Stir in sugar and evaporated milk. Bring to a boil, and let boil 5 minutes. Remove from heat and stir in marshmallow creme, 1/4 cup peanut butter and vanilla. Fold in peanuts. Spread over bottom layer, return to refrigerator until set.
  • For the caramel: Combine caramels and cream in a medium saucepan over low heat. Cook and stir until melted and smooth. Spread over filling. Chill until set.
  • For the top layer: In a small saucepan over low heat, combine 1 cup milk chocolate chips, 1/4 cup butterscotch chips, and 1/4 cup peanut butter. Cook and stir until melted and smooth. Spread over caramel layer. Chill 1 hour before cutting into 1 inch squares.

3 cups granulated sugar
3 cups light brown sugar, packed
2 cups half-and-half or 2 cups cream
2 tablespoons light corn syrup
1/4 cup butter
1 cup black walnut, coarsely chopped
1 teaspoon vanilla

Steps:

  • In a heavy 5-quart kettle/pot over medium heat, bring the sugars, half-and-half or cream, and corn syrup to a boil, stirring until the sugars dissolve and the mixture begins to boil. Reduce the heat to medium low. Cover and cook 2 to 3 minutes to dissolve the sugar crystals on the sides of the pan. Remove the lid. Cook slowly, stirring only as needed to prevent scorching, to the soft ball stage (234°F to 240°F, with 234°F recommended).
  • Remove from the heat. Add the butter, and walnuts, without stirring or shaking the pan. Cool to lukewarm (110°F), about an hour. Butter a pan.
  • Add the vanilla. Beat by hand until the candy begins to thicken and lose its gloss. Pour into the buttered pan. Cool and cut into squares. Store in an airtight container.
