50g butter , softened
40g light brown muscovado sugar
1-2 tsp treacle
1-2 tbsp spiced rum
6 unpeeled bananas
ice cream , to serve (we like coconut)

Steps:

  • Mix the butter with the sugar and treacle, then add the rum. Make a split through the inside curve of each banana skin - be careful not to cut all the way through. Spread a spoonful of the spiced butter inside each skin.
  • Place the bananas, curved-side up - so the butter doesn't leak when it melts - onto individual sheets of foil large enough to wrap them completely. Crimp up the foil to make a parcel, then put onto the embers for 15 mins, turning once. The bananas should be sticky and caramelised, but check one and cook for longer if necessary. Serve with a scoop of ice cream.

2 tablespoons butter
1/3 cup light brown sugar
1/3 cup sour cream
2 medium bananas, peeled
1/2 cup mini chocolate chip
vanilla ice cream

Steps:

  • Melt butter in large skillet on medium heat.
  • Add sugar; cook until melted, stirring occasionally. Reduce heat to low.
  • Gradually add sour cream; cook 1 minute
  • Cut bananas in half lengthwise and crosswise creating 4 half slices each.
  • Add banana slices, cut sides down. Cook 1 minute or until bananas are evenly coated and tender, basting occasionally with sauce.
  • Spoon bananas evenly into 4 dessert dishes. Top each dish with 1/8 cup mini chips.
  • Top with a scoop of vanilla ice cream and remaining sauce.

1 1/2 cups milk (do not use low-fat or nonfat)
1 vanilla bean, split lengthwise
6 large egg yolks

For caramel syrup
1 cup sugar
1/3 cup plus 5 tablespoons water
For assembly

2 1-pound baskets fresh strawberries, hulled, sliced, or three 10-ounce package sliced frozen strawberries in syrup, thawed, drained well

Steps:

  • Make cake:
  • Preheat oven to 350°F. Lightly spray 15 1/2 x 10 1/2 x 1-inch jelly roll pan with vegetable oil spray. Line bottom of pan with waxed paper, extending paper slightly at short ends; spray paper. Using electric mixer, beat 5 eggs, 1/2 cup plus 2 tablespoons sugar, 1 3/4 teaspoons vanilla and 1/2 teaspoon salt in large bowl until mixture triples in volume and is thick enough to fall in heavy ribbon when beaters are lifted, about 12 minutes. (This means there is enough air and structure in the mixture to support the flour and batter.) Sift 1/2 cup plus 2 tablespoons flour over batter in 2 additions, gently folding just to combine after each addition. (To help prevent the batter from deflating, "fold" the flour in by cutting into the center with a rubber spatula; slide it across the bottom of the bowl, then up the sides, bringing up some batter each time.) Drizzle 2 1/2 tablespoons butter over and fold in gently (do not over mix or batter will deflate). Pour batter evenly into prepared pan.
  • Bake cake until golden and tester inserted into center comes out clean, about 12 minutes. Transfer pan to rack; cool cake. Repeat with remaining ingredients and another pan to make second cake. (Can be prepared 1 day ahead. Cover cakes with foil and store at room temperature.)
  • Make custard:
  • Place milk in medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to boil. Whisk yolks, sugar and flour in medium bowl until smooth. Gradually whisk in hot milk mixture. Return mixture to pan; whisk over medium heat until custard thickens and boils, about 4 minutes. Strain into medium bowl. Press plastic wrap onto surface. Chill until cold, about 3 hours.
  • Using electric mixture, beat cream in medium bowl to stiff peaks. Fold cream into cold custard. (Can be prepared 1 day ahead. Cover and refrigerate.
  • Make caramel syrup:
  • Stir sugar and 1/3 cup water in heavy small saucepan over low heat until sugar dissolves. Increase heat; boil without stirring until syrup turns deep amber, brushing down sides of pan with wet pastry brush and swirling pan occasionally. Remove from heat. Add 3 tablespoons water (mixture will bubble vigorously). Stir until caramel is smooth. Pour caramel into medium bowl; mix in remaining 2 tablespoons water. Cool. (Can be made 1 day ahead. Cover; let stand at room temperature.)
  • Assemble trifle:
  • Sift generous amounts of powdered sugar over 2 kitchen towels. Cut around pan sides to loosen cakes. Turn each cake out onto prepared towels. Hold the cake in place, and gently peel off the waxed paper, pulling it straight back and almost parallel to the cake.
  • Stir jam and 2 tablespoons rum in small bowl to blend. Cut each cake crosswise in half. Spread half of jam mixture over the golden sides of 1 piece of each cake. Gently press second piece of each cake onto jam.
  • Cut cake sandwiches crosswise into 3/4-inch-wide strips. Arrange enough cake strips in 3 1/2- to 4-quart glass trifle dish or bowl to cover bottom, trimming strips to fit and allowing jam layer to show at sides. Brush cake layer with 2 tablespoons rum. Next, set up a decorative row of strawberries around the side of the bowl; then fill in center.
  • Add banana slices to caramel syrup; gently stir to coat. Using slotted soon, remove banana slices, a few at a time, draining all excess caramel back into bowl. As with strawberries, layer half of banana slices atop berries, arranging some to show at sides of dish.
  • Spoon half of custard over bananas, spreading to side of dish, using the back of the spoon to press the custard to the edge of the bowl in a clearly defined layer. Repeat layering with cake, rum, berries, banana slices and custard. Arrange remaining cake strips atop custard; press gently to compact. Brush with 2 tablespoons rum. Cover trifle. Chill at least 4 hours and up to 10 hours. Cover remaining caramel syrup; store at room temperature.
  • Halve additional berries. Slice additional bananas. Arrange fruit atop trifle, leaving 1-inch plain border at edge. Brush fruit with enough caramel syrup to glaze. Spoon cream into pastry bag fitted with medium star tip. Pipe cream around fruit. Garnish with mint, if desired.

Steps:

  • Preheat the oven to 400 degrees F. Grease a 12-portion nonstick muffin tin with melted butter.
  • Cut circles out of the pie crusts using a 3 1/2-inch plain cutter and transfer them to the cups of the muffin tin. Press the dough evenly into the edges of each muffin cup, lining the sides. Whisk the milk, confectioners' sugar, egg yolks and egg together in a large glass measuring cup until smooth.
  • Carefully pour the milk-sugar mixture into each crust, leaving 1/8 inch at the top. Bake in the center of the oven until the pastry begins to brown, the filling is set but still jiggles, and a toothpick inserted into the center of a tart comes out clean, 12 to 15 minutes. Cool in the pan for 10 minutes before removing.

1/2 cup heavy cream
2 tablespoons banana liqueur
1 to 2 teaspoons freshly grated nutmeg
1/4 cup bourbon (recommended: Maker's Kentucky Bourbon)
1 ripe banana, sliced into 4 strips
1/2 cup whiskey (recommended: Jim Beam Kentucky Bourbon Whiskey)
Couple of shakes from a cinnamon container
2 store-bought brownies

Steps:

  • Sauce:
  • Preheat grill to high.
  • Place all ingredients, except bourbon, in a small saucepan over high heat on the grill. Bring to boil and reduce by 1/3 until thickened. Remove from heat, add bourbon, and reduce by half. Remove from grill, cool slightly, and pour into a plastic container. As the sauce cools, it will thicken more.
  • Bananas:
  • Brush bananas with whiskey. Place bananas over medium-low heat on the grill. Generously sprinkle cinnamon over banana. Grill for 2 minutes and remove from the grill to a plate. Pour 1/2 cup of whiskey over bananas. Return bananas to the grill until a little charred. Flip bananas over to char the other side.
  • To assemble: Crumble brownies into 2 martini glasses, lay sliced bananas in an ornate fashion around rim of glass, and top with sauce.

1 teaspoon unsalted butter
3 tablespoons pure maple syrup (may use brown sugar in a pinch)
1 teaspoon pure vanilla extract

  • Cut bananas in half crosswise then lengthwise.
  • Melt the butter over medium-high heat in a large skillet and place the bananas in the butter, coating them using a pastry brush.
  • Move the bananas to one side of the pan.
  • Slightly tip the pan (with bananas on upper side), then add the maple syrup (or brown sugar), vanilla and lemon juice.

1 tablespoon butter
1 1/2 teaspoons toasted peanut oil, divided
1 tablespoon honey
2 tablespoons firmly packed brown sugar
3 tablespoons low-fat milk
1 tablespoon dark raisin
1 tablespoon walnuts, coarsely chopped
2 firm bananas
2 tablespoons dark rum

Steps:

  • In a small saucepan, melt the butter over medium high.
  • Stir in 1 tablespon peanut oil, honey and brown sugar, stir until sugar is dissolved, about 3 minutes.
  • Sit in milk, 1 tablespoon at a time.
  • Stir and cook until the sauce thickens slightly, about 3 minutes.
  • Remove sauce from heat and stir in raisins and chopped walnuts.
  • Set aside and keep warm.
  • Peel the bananas, cut each crosswise into 3 sections and then cut each section in half lengthwise.
  • Add the additional 1/2 teaspoon peanut oil to a nonstick frying pan and place over medium-high heat.
  • Add the cut bananas and saute until they begin to brown, 3 to 4 minutes each side turning once.
  • Transfer to individual serving plates.
  • Pour the rum into the pan, bring to a boil, and deglaze the pan.
  • Cook until rum is reduced by half.

  • For peanut butter ganache:
  • Bring cream, sugar, and corn syrup to simmer in heavy medium saucepan. Add chocolate and stir until melted and smooth. Transfer mixture to medium bowl. Add peanut butter and whisk until mixture is smooth. Cover and chill until ganache is firm, about 2 hours.
  • Using 1 level tablespoon ganache for each, form 1 1/4-inch balls. Place on baking sheet. Freeze ganache balls overnight.
  • For beignet batter:
  • Whisk flour, cocoa powder, sugar, and salt in large bowl to blend. Add club soda, then eggs and melted butter. Using electric mixer, beat until mixture is well blended and smooth.
  • Pour enough oil into heavy large skillet to reach depth of 1 1/2 inches; heat to 350°F. Remove peanut butter ganache balls from freezer. Working with a few ganache balls at a time, dip into beignet batter, coating balls completely. Lift balls out with fork and slowly slide into hot oil; fry until batter is set and slightly crisp, about 1 1/2 minutes. Using slotted spoon, transfer beignets to paper towels to drain. Keep warm.
  • Meanwhile, prepare caramelized bananas:
  • Melt butter in large nonstick skillet over medium-high heat. Add brown sugar and stir until sugar begins to melt, bubble, and form thick mass, about 4 minutes. Add rum and lemon juice; simmer until mixture thickens slightly, about 3 minutes. Add bananas and cook until glazed with caramel, about 1 minute.
  • Place 3 beignets on each plate. Dust with powdered sugar. Place caramelized bananas and scoop of Bitter Caramel Ice Cream alongside beignets. Sprinkle ice cream with peanut brittle and serve.

I found this in the LA Times Food Section years ago, and adapted it for a crowd. We make these when we go camping and we're sick of S'mores. We just bring a bunch of bananas and the components we prepared ahead of time and make them until we can't eat any more. Don't be tempted to use store bought caramel; home made sauce really makes a diference, and it's quick and easy to make. IMPORTANT: When you go to the store, you DO NOT want the Crema Agria - that's like sour cream. Crema Mexicana is like Creme Fraiche and tastes sweet, like heavy whipping cream.

8 bananas, that are nice and yellow,no spots,but not green either
1 cup white sugar
1 tablespoon cinnamon (more if you like)
1 (15 ounce) jar Mexican crema
1 cup brown sugar
3 tablespoons butter
3/4 cup warmed heavy cream

Steps:

  • Make caramel:.
  • Melt butter in medium saucepan over medium-low heat, then add brown sugar and whipping cream
  • Simmer over medium heat and stir occasionally (about 8 minutes).
  • Sauce is ready when it is golden brown; it will thicken as it cools.
  • Cool completely, then pour into a container (I use one of those squeeze bottles to take with our camping stuff).
  • It's OK to keep at room temp, but I would put in fridge if you want to keep longer than a couple of days.
  • Prepare bananas:.
  • Combine sugar and cinnamon.
  • Slice each banana in half lengthwise.
  • Roll each banana half in cinnamon sugar, until completely coated.
  • Grill coated bananas over hot coals (ideally, you will grill them after dinner, when the coals are nicely glowing; we don't want a raging fire here).
  • Grill bananas until the sugar begins to carmelize, but be careful; don't let them burn.
  • To serve, put two banana halves on a plate, drizzle with caramel sauce and serve with a dollop of crema Mexicana.

Deep-fried bananas, Vietnamese Style. Dipped in a crisp hazelnut and breadcrumb coating, served with a warm caramel and coconut sauce, and accompanied by ice-cream, these are the perfect finish to an Asian meal.

6 firm ripe Asian bananas (preferably Lady Finger or Sugar bananas)
1 large egg, lightly beaten
1/2 cup ground hazelnuts
1/4 cup packaged breadcrumbs
4 cups vegetable oil or 4 cups peanut oil, for deep-frying
coconut ice cream or mango ice cream, to serve
4 teaspoons butter
4 teaspoons dark rum
3/4 cup firmly packed brown sugar
1/4 cup water
1 (10 ounce) can coconut milk

Steps:

  • Peel bananas and cut in half lengthways.
  • Place lightly beaten egg in a shallow bowl, and the combined ground hazelnuts and breadcrumbs in another shallow bowl.
  • Dip banana pieces firstly into egg, and then coat in hazelnut and breadcrumb mixture.
  • Heat cooking oil in a wok to 375ºF, and deep-fry bananas, in batches, until golden brown.
  • Drain on absorbent kitchen paper, and keep warm until all the banana has been cooked.
  • For the caramel sauce, melt butter in a small pan, then add remaining ingredients and stir.
  • Bring to the boil and cook, uncovered, until sauce has thickened slightly, about 8 minutes.
  • Serve each individual portion with icecream of choice.

2 Tbsp new jersey salted caramel *see recipe
2-3 overripe bananas
1/2 stick butter
3 Tbsp dark brown sugar
1/2 c heavy cream
2 Tbsp dark rum or brandy (optional because there is rum in the caramel)
1/4 tsp cinnamon
1/4 tsp allspice

Steps:

  • 2. Place all ingredients in the saucepan, if you intend to flambe table side, do not add brandy/rum/or even banana liqueur now. If not, do so.
  • 3. This is different than a typical bananas foster, because it is accenting the caramel instead. If you aren't flambe-ing, cook until the alcohol is for the most part cooked out. Stirring and re-thickening back to a nice caramel.
  • 4. To flambe, place in a thick glass ice cream dish or ceramic bowl, put about 1/2-1 tablespoon of brandy/rum/banana liqueur and light.
  • 5. This serves about 4 people over 2 scoops of ice cream each, and what was left if pictured in this jar. Perhaps 6-8 servings altogether.

3 CUPs heavy whipping cream
6 TBSPs (3/4 stick) unsalted butter
3 TBSPs honey
3 vanilla beans, halved lengthwise
3 TBSPs bourbon
10 large bananas, unpeeled
2 QUARTs vanilla ice cream
chopped toasted pecans

Steps:

  • Combine brown sugar, cream, butter, and honey in heavy large saucepan. Scrape in vanilla seeds; add beans. Stir mixture over medium heat until sugar dissolves. Increase heat and bring to boil. Reduce heat to medium-low and boil gently until sauce coats spoon thickly and is reduced to 3 2/3 cups, stirring occasionally, about 25 minutes. Mix in bourbon. Prepare barbecue (medium-high heat). Cut unpeeled bananas in half lengthwise. Arrange, cut side up, on baking sheet. Brush cut sides with caramel sauce. Place bananas, still cut side up, on grill rack. Close barbecue; grill until peels are slightly charred and fruit is tender and beginning to come away from peel, about 4 minutes. Place 1 banana half, cut side up, on each plate. Top each with ice cream, warm caramel sauce, and pecans.

2/3 cup all purpose flour
3 tablespoons unsweetened cocoa powder (preferably Dutch-process)
1/2 cup powdered sugar
1/4 cup (1/2 stick) unsalted butter, room temperature
3 large egg yolks
1/2 cup plus 1 tablespoon sugar
3 tablespoons water
2 teaspoons light corn syrup
1/4 teaspoon fresh lemon juice
1/3 cup heavy whipping cream
1 tablespoon unsalted butter
1 cup heavy whipping cream
1 tablespoon light corn syrup
3 whole star anise*
4 1/2 ounces bittersweet (not unsweetened) or semisweet chocolate, coarsely chopped
2 tablespoons (1/4 stick) unsalted butter, room temperature
1 ounce bittersweet (not unsweetened) or semisweet chocolate, finely chopped
4 teaspoons (generous) plus 2 tablespoons chopped lightly salted roasted cashews
1/4 cup sugar
2 tablespoons water
1/2 cup strained orange juice
1 2-inch piece peeled fresh ginger, grated, pressed through garlic press to extract 1/2 teaspoon juice
1/2 vanilla bean, split lengthwise in half
3 tablespoons unsalted butter
2 tablespoons (packed) golden brown sugar
1 large banana, sliced

Steps:

  • Sift flour and cocoa into small bowl. Using electric mixer, beat powdered sugar and butter in medium bowl until well blended. Beat in flour mixture. Beat in egg yolks 1 at a time. Gather dough into ball; flatten into disk. Chill at least 1 hour and up to 1 day. Soften slightly at room temperature before rolling out.
  • Preheat oven to 375°F. Roll out dough on floured surface to 1/8-inch thickness. Using 5-inch-diameter plate or bowl as guide, cut out rounds. Reroll dough scraps if necessary to form four 5-inch rounds total. Press each dough round onto bottom and up sides of 4 1/4- to 4 1/2-inch-diameter tartlet pan with removable bottom. Pierce crusts all over with fork. Freeze crusts 10 minutes. Bake until firm to touch and beginning to pull away from sides of pans, about 15 minutes. Cool crusts completely in pans on rack.
  • Combine sugar and next 3 ingredients in heavy small saucepan. Stir over medium heat until sugar dissolves. Increase heat and boil without stirring until deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 7 minutes. Remove from heat; add cream (mixture will bubble vigorously). Stir over low heat until any caramel bits dissolve and caramel is smooth. Whisk in butter. Set aside.
  • Bring cream and corn syrup to boil in heavy small saucepan. Add star anise; remove from heat. Cover; let steep 15 minutes. Discard star anise. Return mixture to boil. Remove from heat. Add 4 1/2 ounces coarsely chopped bittersweet chocolate and butter; whisk ganache topping until smooth.
  • Stir 1 ounce finely chopped bittersweet chocolate in top of double boiler set over simmering water until melted. Brush inside of each crust with melted chocolate, then sprinkle each with 1 generous teaspoon chopped cashews. Spoon caramel filling over nuts in crusts (about 2 tablespoons for each). Chill tartlets until caramel sets slightly, about 30 minutes.
  • Rewarm chocolate ganache topping just until pourable, if necessary. Spoon chocolate ganache atop caramel filling. Refrigerate just until ganache sets, about 45 minutes, then let tartlets stand at room temperature. (Can be made 1 day ahead. Cover tartlets loosely and let stand at room temperature.)
  • Stir 1/4 cup sugar and 2 tablespoons water in heavy small saucepan over low heat until sugar dissolves. Increase heat and boil without stirring until medium (not deep) amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 5 minutes. Remove from heat; slowly add orange juice and 1/2 teaspoon ginger juice. Scrape in seeds from vanilla bean. Return mixture to boil, stirring until any caramel bits dissolve. Boil until sauce is slightly syrupy and reduced to 1/4 cup, about 4 minutes. (Can be made 1 day ahead. Cover; let stand at room temperature. Rewarm over low heat just until pourable.)
  • Preheat oven to 450°F. Melt butter in heavy small saucepan over low heat. Add brown sugar; whisk until blended, about 1 minute. Add banana slices and toss to coat. Transfer banana mixture to small baking sheet. Bake until bananas begin to brown slightly around edges and sugar mixture bubbles, about 4 minutes.
  • Remove sides from tartlet pans. Place tartlets on plates. Drizzle ginger caramel sauce around tartlets. Arrange banana slices alongside. Sprinkle with remaining 2 tablespoons cashews and serve.

Please also note that in Australia pre-rolled pastry sheets are about 22/23 cm square.

1/2 sheet puff pastry (cut into strips)
icing sugar
125 g unsalted butter (sweet butter)
125 g caster sugar

Steps:

  • Preheat oven to 200°C.
  • Lay out pastry trimmings if using or cut strips from the 1/2 sheet.
  • Place the banana down on top of pastry.
  • Dust with icing sugar, then wrap the pastry around the length of the banana.
  • Bake in pre-heated for 10 to 15 minutes.

3 tablespoons butter
3 tablespoons golden brown sugar (packed)
2 teaspoons fresh lemon juice
3/4 teaspoon ground cinnamon

2 small ripe bananas, peeled, cut on diagonal into 1/2-inch-thick slices
vanilla ice cream

Steps:

  • Preheat broiler.
  • Place the doughnuts on small baking sheet; then set aside.
  • To make the caramel sauce: stir the butter and brown sugar in a heavy medium skillet over medium heat until the butter is melted.
  • Boil for 1 minute, stirring occasionally.
  • Remove from heat.
  • Mix in lemon juice and spices, then rum; stir to blend.
  • Cool caramel sauce 3 minutes.
