2 tablespoons butter
1 cup chopped fresh apple (with skin)
2 tablespoons brown sugar
1 cup quick-cooking oats
1 cup apple cider
1 cup milk
2 teaspoons ground cinnamon
¼ teaspoon salt

Steps:

  • Melt butter in a saucepan over medium heat. Add apple and brown sugar. Cook, stirring occasionally, for 5 minutes.
  • Stir in oats, apple cider, milk, cinnamon, and salt and cook, stirring frequently, until oatmeal is creamy and thickened, about 3 minutes.

1/2 cup butter, softened
3/4 cup packed brown sugar
1/4 cup sugar
1 package (3.4 ounces) instant caramel pudding mix
2 large eggs, room temperature
1/2 cup unsweetened applesauce
1-1/4 cups all-purpose flour
1 teaspoon baking soda
3-1/2 cups old-fashioned oats
1 medium apple, peeled and chopped

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and pudding mix until light and fluffy, 5-7 minutes. Add eggs; mix well. Beat in applesauce. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Stir in oats and apple., Drop dough by tablespoonfuls 2 in. apart onto greased baking sheets. Bake until golden brown, 15-18 minutes. Cool on pans 3 minutes. Serve warm or remove to wire racks to cool completely. Store in an airtight container. Freeze option: Freeze cookies in freezer containers, separating layers with waxed paper. To use, thaw before serving.

1 tablespoon unsalted butter
1 medium Golden Delicious apple - peeled, cored, and chopped
¾ cup brown sugar, divided
¼ cup unsalted butter
2 cups heavy cream, or more as needed
2 cups oats (such as Quaker Oats®)
1 tablespoon flax seeds
1 tablespoon ground cinnamon
1 cup raisins
½ cup sliced almonds
¼ cup whipped topping

Steps:

  • Melt 1 tablespoon butter in a saucepan over medium heat. Add apple and 1/4 cup brown sugar; cook and stir until browned, about 2 minutes. Transfer to a small serving bowl.
  • Melt remaining butter in a small pot over medium heat. Add remaining brown sugar and stir until dissolved. Add 2 cups heavy cream; bring to a simmer. Add oats, flax seeds, and cinnamon; mix and stir until oats are full cooked and creamy, about 2 minutes, adding a touch more heavy cream if needed.
