CARAMEL APPLE GRANOLA BARS



Caramel Apple Granola Bars image

Easy oatmeal bars made with caramel bits and apple chips.

Number Of Ingredients 14

3/4 c. butter
3/4 c. brown sugar
2 eggs
2 tsp. caramel extract
1 1/2 c. flour
2 1/2 c. quick oats
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. Rolos, quartered
1 c. apple chips, crushed lightly
3/4 c. miniature marshmallow bits
1/4 c. chocolate chips
1/2 tsp. shortening

Steps:

  • Cream the butter and sugar until light and creamy. Add the caramel extrac and eggs and cream again. Stir together the flour, cinnamon, nutmeg, and salt. Slowly add it to the butter mixture. Add the oatmeal a little bit at a time. The dough will be very stiff. Stir in the Rolos, marshmallows, and apple chips by hand.
  • Spread in a greased 9x13 baking pan. Bake at 350* for 20-22 minutes. Cool completely. Cut into 16 bars.
  • In a microwave safe bowl, combine the chocolate chips and shortening. Heat for 30 seconds and stir. Repeat until melted and creamy. Place in a plastic bag and cut one corner off. Drizzle over the bars. Let set. Store in a sealed container.
