1 ¼ cups packed brown sugar, divided
3 tablespoons butter
5 cups thinly sliced peeled tart apples
20 caramels
½ cup half-and-half
1 (8 ounce) package cream cheese, softened
1 tablespoon vanilla extract
2 teaspoons ground cinnamon, divided
1 egg, lightly beaten
1 (9 inch) unbaked deep-dish pastry shell
¾ cup chopped pecans
2 cups whipped topping

Steps:

  • Combine 3/4 cup brown sugar and butter in a large skillet. Cook over medium-high heat until sugar has dissolved, stirring occasionally, 3 to 4 minutes. Add apples and cook uncovered, stirring occasionally, until apples are tender, 12 to 15 minutes. Drain and set aside.
  • Combine caramels and half-and-half in a large, heavy saucepan. Cook over low heat, stirring frequently until smooth, 10 to 15 minutes. Remove from heat; keep warm.
  • Beat cream cheese, remaining 1/2 cup brown sugar, vanilla extract, and 1 1/2 teaspoons cinnamon together using an electric mixer in a large bowl until smooth. Add egg; beat on low speed until just combined.
  • Stir 1/2 the caramel mixture into apples and pour into pastry shell. Sprinkle pecans over apples, reserving 2 tablespoons for topping. Fold remaining caramel mixture into cream cheese mixture; spread over pecans. Cover edges loosely with aluminum foil.
  • Bake in the preheated oven for 20 minutes. Remove foil; return to the oven and bake until filling is set, 15 to 20 minutes. Remove from the oven and transfer to a wire rack to cool completely, 15 to 30 minutes. Chill in the refrigerator for 30 minutes.
  • Combine whipped topping and remaining 1/2 teaspoon cinnamon; spread over pie just before serving. Sprinkle with reserved pecans.

1 large Red Delicious apple - peeled, cored, and diced
1 cup cold water
1 tablespoon lemon juice
2 (8 ounce) packages cream cheese, softened
¼ cup brown sugar
2 teaspoons ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground allspice
1 cup white sugar
6 tablespoons unsalted butter, sliced and softened
½ cup heavy whipping cream, room temperature
¾ teaspoon sea salt
1 pastry for a 9-inch double-crust pie
1 egg, beaten
½ cup cinnamon-sugar
1 cup chopped pecans

Steps:

  • Mix diced apple, cold water, and lemon juice together in a small bowl; soak for 10 minutes. Drain.
  • Stir cream cheese, brown sugar, cinnamon, nutmeg, and allspice together in a bowl until smooth. Fold the diced apple into the cream cheese mixture.
  • Spoon the cream cheese mixture onto the center of a sheet of plastic wrap. Use the plastic to shape the cheese mixture into a log, wrap the plastic around the log, and refrigerate until set, about 2 hours.
  • Cook and stir white sugar in a 3-quart saucepan over medium-high heat until melted, smooth, and taking on an amber color, about 10 minutes; add butter and stir quickly with a whisk until the butter is melted, 1 to 2 minutes. Immediately remove saucepan from heat. Slowly stream heavy cream into the sugar mixture while continually stirring with the whisk to incorporate fully; add sea salt and stir. Transfer the caramel sauce to a glass bowl and set aside to cool.
  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  • Roll out pie pastry on a lightly floured surface to about 1/4-inch thick. Cut dough into rectangles about 2 inches long. Arrange dough strips onto the prepared baking sheet. Brush the tops of the dough strips with beaten egg. Sprinkle cinnamon-sugar over the strips.
  • Bake dough strips in preheated oven until golden brown, 10 to 15 minutes. Cool completely.
  • Spread pecans into a shallow dish. Unwrap cheese log and roll in the pecans to coat. Place coated log onto a plate and drizzle caramel sauce evenly over the log. Serve with the pie crust chips.

1½ cup graham cracker crumbs (about 12 full graham crackers)
3 tablespoons granulated sugar
½ teaspoon ground cinnamon
⅓ cup unsalted butter, melted
For the Caramel-Pecan Layer:
¾ cup salted caramel sauce
1 cup chopped pecans
For the Apples:
5 tablespoons unsalted butter
½ cup light brown sugar
1 teaspoon ground cinnamon
¼ teaspoon salt
5 Granny Smith apples, peeled, cored and thinly sliced
For the Cheesecake:
8 ounces cream cheese, at room temperature
¼ cup granulated sugar
1 egg, at room temperature
1 tablespoon lemon juice
1 teaspoon vanilla extract
For the Whipped Cream:
¾ cup heavy cream
3 tablespoons powdered sugar
For the Garnish:
Salted caramel sauce
Chopped pecans

Steps:

  • 1. Preheat oven to 375 degrees F. 2. Make the Crust: Whisk together the graham cracker crumbs, sugar and cinnamon. Add the melted butter and use a fork to toss the mixture together until all of the crumbs are evenly moistened. Dump the crumbs into a 9-inch springform pan or a 10-inch pie plate and press them into an even layer over the bottom and two-thirds of the way up the sides of the pan. Bake for 6 to 8 minutes, or until golden brown. Allow to cool for 10 minutes. 3. Pour the salted caramel sauce over the bottom of the crust, gently spreading it into an even layer. Sprinkle the chopped pecans evenly over top of the caramel layer. Place the pan in the refrigerator while the apples are prepared. 4. Reduce oven temperature to 350 degrees F. 5. Make the Apples: Melt the butter in a 12-inch skillet, then add the brown sugar, cinnamon and salt, stirring to combine. Cook the mixture until it is gently bubbling, about 1 minute. Add the apples to the pan and toss to coat with the butter mixture. Cook until the apples are very tender and just about all of the liquid has been evaporated, 15 to 20 minutes, stirring occasionally. Allow to cool for 10 minutes, then add to the pan on top of the caramel-pecan layer, spreading the apples into an even layer. Return the pan to the refrigerator. 6. For the Cheesecake: Using an electric mixer, beat the cream cheese and sugar on medium speed until completely smooth. Add the egg and beat until completely combined. Add the lemon juice and vanilla extract, and beat until completely smooth, another 1 to 2 minutes. Pour the cheesecake batter over the apples in the pan, smoothing it into an even layer. Bake until the cheesecake is set and doesn't jiggle in the middle, about 30 minutes. Transfer the pan to a wire rack to cool to room temperature, then refrigerate for at least 4 hours or overnight. 7. Make the Whipped cr. swirl caramel and sprinkle pecans
