3/4 cup butter, cubed
4 cups chopped peeled tart apples (about 4 medium)
2 cups sugar
1/2 cup raisins
1/2 cup chopped walnuts
3 teaspoons ground cinnamon
2 teaspoons vanilla extract
BREAD PUDDING:
6 large eggs
2-1/2 cups 2% milk
1-1/2 cups plus 2 tablespoons sugar, divided
1 cup heavy whipping cream
1-1/2 teaspoons vanilla extract
Dash ground nutmeg
1 loaf (1 pound) French bread, cut into 1-inch cubes
CARAMEL SAUCE:
1 cup sugar
1/4 cup water
1 cup heavy whipping cream
2 tablespoons butter

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add apples, sugar, raisins, walnuts and cinnamon; bring just to a boil, stirring constantly. Reduce heat; simmer, uncovered, until apples are tender, stirring occasionally. Remove from heat; stir in vanilla., For bread pudding, in a large bowl, whisk eggs, milk, 1-1/2 cups sugar, cream, vanilla and nutmeg until blended. Stir in bread cubes and apple mixture. Transfer to a greased 13x9-in. baking dish. Sprinkle with remaining sugar. Bake, uncovered, 40-45 minutes or until a knife inserted in the center comes out clean., For caramel sauce, in a small heavy saucepan, combine sugar and water; stir gently to moisten all the sugar. Cook over medium-low heat, gently swirling pan occasionally, until sugar is dissolved. Cover; bring to a boil over medium-high heat. Cook 1 minute., Uncover pan; continue to boil until syrup turns a medium amber color. Immediately remove from heat and carefully stir in cream and butter. Serve with warm bread pudding.

1 cup pure canned pumpkin puree

Vanilla Bean Creme Anglaise, recipe follows
Spicy Caramel Apple Sauce, recipe follows
Freshly whipped cream
4 tablespoons unsalted butter, softened, plus more for greasing
1 3/4 cups all-purpose flour
1/2 teaspoon fine salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground allspice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 1/2 cups sugar
1/4 cup vegetable oil
8 ounces (scant 1 cup) canned unsweetened pumpkin puree
2 large eggs
2/3 cup water
2 cups half-and-half
1/2 vanilla bean, seeds scraped
5 large egg yolks
1/3 cup pure cane sugar
1 cup heavy cream
1/2 cup apple juice
1 star anise
1-inch piece fresh ginger, peeled and chopped
4 whole cloves
2 cinnamon sticks
1/8 teaspoon ground nutmeg
1 1/2 cups granulated sugar
1/2 cup water
1 tablespoon apple cider vinegar
1 tablespoon apple schnapps

Steps:

  • Preheat the oven to 325 degrees F. Combine the cream, milk, vanilla bean and seeds in a small saucepan over medium heat and bring to a simmer.
  • Whisk together the yolks, sugar, maple syrup, and pumpkin puree in a large bowl. Slowly whisk in the hot cream mixture until combined, remove the vanilla pod, and whisk in the bourbon. Strain the custard into a clean bowl.
  • Scatter the pumpkin bread cubes in a buttered 9 by 13-inch baking glass baking dish. Pour the custard over the bread, pressing down on the bread to totally submerge it in the custard. Let sit for 15 minutes to allow the bread to soak up some of the custard.
  • Place the pan in a larger roasting pan and pour hot tap water into the roasting pan until it comes half way up the sides of the glass dish. Bake until the sides are slightly puffed and the center jiggles slightly, about 1 hour.
  • Remove from the oven and water bath and cool on a baking rack for at least 30 minutes before serving.
  • Spoon some of the Vanilla Bean Creme Anglaise into a shallow bowl, top with some of the bread pudding and drizzle with the Spicy Caramel Apple Sauce. Top with freshly whipped cream. Bread pudding is best served warm.
  • Preheat the oven to 350 degrees F. Butter or lightly spray the bottom and sides of a 9-inch loaf pan with nonstick cooking spray.
  • Whisk together the flour, salt, baking soda, baking powder, allspice, cinnamon, nutmeg, and cloves in a small bowl.
  • In the bowl of a standing mixer fitted with the paddle attachment, beat the 4 tablespoons softened butter, sugar, and oil at high speed until light and fluffy, about 1 minute, scraping down the sides and bottom of the bowl a few times.
  • Add the pumpkin puree and mix until combined. Add the eggs, one at a time, and mix until just incorporated. At low speed, slowly add the flour mixture and water and mix until just combined. Spread the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean, about 60 to 75 minutes. Let cool in the pan on a baking rack for 10 minutes. Remove from the pan and let cool completely.
  • Once the bread is cool, slice in half lengthwise, and then slice each half into 1/2-inch cubes. Spread the cubes on a large baking sheet and bake in a 325 degree oven until lightly toasted, turning once, about 20 minutes. Let cool.
  • Bring the half-and-half and vanilla bean and seeds to a simmer in a medium saucepan.
  • Whisk together the yolks and sugar in a medium bowl until at the pale ribbon stage. Slowly whisk in the hot half-and-half, return the mixture to the pot, and cook over medium heat, stirring constantly with a wooden spoon, until the mixture coats the back of the spoon. Strain into a bowl and set over an ice bath. Stir until chilled. Cover and refrigerate at least 1 hour before serving.
  • Combine the cream, apple juice, star anise, ginger, cloves, cinnamon sticks, and nutmeg in a small saucepan and bring to a simmer. Remove from the heat and let steep for at least 20 minutes. Strain the mixture into a clean, small saucepan and place back over low heat while you make the caramel.
  • Combine the sugar, water and, vinegar in a medium saucepan over high heat and cook without stirring, until it's a deep amber color, about 8 minutes. Slowly whisk in the warm cream mixture a little at a time, and continue whisking until smooth. Add the apple schnapps and cook for 30 seconds longer. Transfer to a bowl and keep warm. The sauce can be made 2 days in advance and refrigerated. Reheat over low heat before serving.

6 cups cubed day-old French bread
2 medium apples - peeled, cored, and chopped
½ cup dark raisins
4 large eggs
1 cup light brown sugar
1 ½ teaspoons pure vanilla extract

¼ teaspoon ground nutmeg
¼ teaspoon salt
3 cups whole milk
1 cup apple cider

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Combine bread cubes, apples, and raisins in a very large bowl.

1/2 cup buttermilk
1 tablespoon light corn syrup

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9 by 13-inch baking dish with cooking spray or butter.

Mix together oil and sugar with a mixer on medium speed until combined. With machine running, add eggs, 1 at a time. Reduce speed to low, and beat in flour mixture in 3 additions, alternating with 1/2 cup cider and the brandy (if not using brandy, use an additional 1/4 cup cider), beginning and ending with flour. 2 cans Immaculate Baking Co.™ Organic Cinnamon Rolls with Icing
4 eggs
1/2 cup milk
1 teaspoon vanilla
1 tablespoon cinnamon
1/2 teaspoon salt
2 tablespoons butter
2 tart or sweet apples, cored and thinly sliced
1 cup packed light brown sugar
1/4 cup caramel sauce, homeade or storebought

Steps:

  • Heat oven to 375°F. Line 9-inch square or round pan with foil; spray bottom and sides with cooking spray.
  • Open cinnamon rolls per instructions on cans. Cut each roll into 9 pieces. Arrange half of cut rolls in single layer in bottom of prepared pan. In medium bowl, whisk eggs, milk, vanilla, cinnamon and salt.
  • In medium skillet over medium-low heat, melt butter. Add apples and brown sugar and stir to coat. Cook on low heat 8 to 10 minutes, stirring often, until apples are softened and mixture is caramelized.
  • Pour and scatter half of apple mixture over cut rolls in pan. Top with remaining cut rolls and apple mixture. Pour milk mixture evenly over top. Drizzle 1 packet icing from cinnamon rolls over top.
  • Bake 40 to 50 minutes until center of mixture is fully baked and set (cover lightly with foil if top begins to get too brown before finished baking). Cool 10 minutes. Spread or drizzle remaining icing packet over top, then drizzle caramel sauce over top. Serve warm or at room temperature.

6 apples (Golden Delicious, McIntosh or Winesap apples, about 2 1/2 inches in diameter, peeled, halved and cor)
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/2 cup brown sugar, packed, divided
1/2 cup dried cherries or 1/2 cup dried currant
4 cups brioche bread (cut or torn into 1 to 2 inch pieces) or 4 cups stale croissants (cut or torn into 1 to 2 inch pieces)
2 eggs, at room temperature
2 egg yolks, at room temperature
2 cups milk, room temperature
1 teaspoon vanilla
1/8 teaspoon ground nutmeg

Steps:

  • Place the baking rack in the center of the oven and heat to 350 degrees F.
  • Butter a shallow 1 1/2-quart baking dish (11 by 7 by 1 1/2 inches), or spray generously with cooking spray.
  • Cut the apples into 1/2-inch-thick slices. In a large bowl, mix together apples, lemon juice and cinnamon. Set aside.
  • Melt the 1/4 cup of butter and 1/4 cup brown sugar in a 10- to 12-inch heavy skillet over medium-high heat. Stir in the apple mixture using a wooden or heat-resistant spatula and cook over same medium-high heat, stirring frequently until the apples are softened and begin to turn golden brown, about 10 to 15 minutes. Stir in the walnuts or dried fruit and transfer the mixture to a large bowl. Set aside to cool slightly, about 10 minutes.
  • While the caramelized apple mixture is cooling, toast the bread on a baking sheet in the oven until crisp and the edges are just starting to color, about 6 to 8 minutes. Set aside on baking rack.
  • Once the caramelized apple mixture is slightly cooled, gently and evenly spread half into the buttered baking dish. Add the toasted bread to the remaining apples in the bowl and stir to combine; then spoon the mixture into the baking dish.
  • In a medium bowl combine the eggs, egg yolks, milk, remaining 1/4 cup of brown sugar, vanilla and nutmeg and whisk until the sugar is dissolved, about 2 minutes. Then pour evenly over the apple and bread mixture and let it sit for 10 minutes until the bread has absorbed the liquid.
  • Bake until puffed and browned on the top and the custard is set, about 45 to 55 minutes. Serve hot, warm or chilled.

2 Granny Smith apples, unpeeled and cut into matchsticks
Juice of 1 lemon
1 tablespoon unsalted butter, room temperature
1 day-old, 8-ounce loaf brioche
1 1/4 cups heavy cream
3 large eggs
1/2 cup sugar
1/2 teaspoon salt
2 teaspoons pure vanilla extract
1/4 teaspoon ground nutmeg
Caramel Bourbon Vanilla Sauce

Steps:

  • Heat oven to 325 degrees. Place apples in a small bowl, and toss with lemon juice; set aside. Butter six 8-ounce ramekins or custard cups; place in a roasting pan. Cut brioche into 8 slices, then quarter each slice; set brioche aside.
  • In a large bowl, whisk together cream, eggs, sugar, salt, vanilla, and nutmeg. Add brioche, and toss to coat.
  • Place 1 tablespoon sauce into each ramekin. Add approximately 1/3 cup apple mixture, then 1/3 cup bread mixture. Add a second layer of sauce, apple, and bread.
  • Fill roasting pan with hot water to within 1/2 inch of ramekin tops. Cover pan with foil.
  • Carefully place the roasting pan on the center oven rack. Fill roasting pan with hot water to within 1/2 inch of ramekin tops. Cover pan with aluminum foil. Cook 20 minutes. Remove foil; cook 20 minutes more. Remove roasting pan from the oven, and transfer ramekins to a wire rack to cool 5 minutes. Using a towel, invert ramekins onto serving platter. Serve warm with remaining caramel sauce on the side.

1 cup packed brown sugar
1/2 cup buttermilk
1/2 cup vegetable oil

  • Heat oven to 350°F. Grease bottoms only of 2 (8x4-inch) loaf pans with cooking spray or shortening.
  • In large bowl, stir together apples, 1 cup brown sugar, the buttermilk, oil and eggs. Stir in remaining bread ingredients just until dry ingredients are moistened. Pour into pans.
  • Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes on cooling rack. Loosen sides of loaves from pans; remove from pans and place top sides up on cooling rack. Cool completely, about 1 hour.
  • In 1-quart saucepan, melt butter over medium heat. Stir in 1/4 cup brown sugar. Heat to boiling, stirring constantly; reduce heat to low. Boil and stir 2 minutes. Stir in milk. Heat to boiling; remove from heat. Cool to lukewarm, about 30 minutes.
  • Gradually stir powdered sugar into glaze mixture. Place saucepan of glaze in bowl of cold water. Beat with spoon until smooth and thin enough to drizzle. If glaze becomes too stiff, stir in additional milk, 1/2 teaspoon at a time, or heat over low heat, stirring constantly. Drizzle glaze over loaves. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

15 caramels
1 1/2 cups flour, divided
1/2 cup room temperature butter
2 cups confectioners' sugar
1 1/2 teaspoons vanilla
3 eggs
1 teaspoon cinnamon
1 teaspoon allspice

2 apples, cored,peeled and finely chopped

Steps:

  • Heat oven to 350° and grease and flour a 9x5 loaf pan.
  • Unwrap caramels and with a scissors, cut each one into 8 small pieces.
  • Toss caramels with 1 tablespoon of the flour in a small bowl to keep them from sticking together; set aside.
  • Beat together butter, sugar and vanilla until fluffy.
  • Add eggs, one at a time and beat well after each.
  • In another bowl, stir together remaining flour, cinnamon allspice and salt.
  • Add flour mixture to butter mixture and blend well.
  • By hand, stir in apples and caramel mixture.
  • Spoon batter into prepared pan.
  • Bake for 60 to 65 minutes or until toothpick inserted in center comes out clean.
  • Cool completely on a wire rack, then remove from pan.

1/2 c butter, softened
1/2 c sugar
1/2 c packed brown sugar
1/3 c plain yogurt
2 tsp baking powder
2 large eggs
1 tsp vanilla
2 c flour
1 Tbsp fresh ground flax seed (optional)
1/2 tsp pumpkin pie spice (or apple pie spice)
1/2 tsp salt
1/2 c toasted pecans or walnuts, chopped
1/2 c caramel apple butter (or regular apple butter)
STREUSEL TOPPING:
1/4 c packed brown sugar
1/2 tsp cinnamon
3 Tbsp flour
2 Tbsp butter
1/3 c toasted pecans or walnuts, chopped

Steps:

  • 1. Lightly coat a 9x5 loaf pan with nonstick spray. Preheat oven to 325 degrees F for glass loaf pan or 350 degrees F for metal loaf pan.
  • 2. In a large bowl, cream together butter, sugar and brown sugar. Stir in yogurt and baking powder until well combined. Add eggs and vanilla; combine well.
  • 3. In a separate small bowl, combine flour, pumpkin pie spice, salt and nuts; fold into creamed batter until combined- do not over mix!
  • 4. Spoon half of mixture into prepared pan. Spread caramel apple butter over batter in pan, then spread remaining batter over apple butter. If desired, run a knife through batter to give a swirled appearance but it is not necessary.
  • 5. In a small bowl, combine together ingredients for streusel topping using a fork or your fingers until mixture resembles coarse crumbs. Sprinkle evenly over batter in pan.
  • 6. Bake in preheated oven for about 60 minutes or until a toothpick comes out clean. Completely cool bread on wire rack before slicing.

1 recipe Delicious Slicing Bread dough
1 teaspoon vanilla extract
2 1/2 tablespoons granulated sugar
1 1/2 teaspoons ground cinnamon
1 medium Granny Smith or McIntosh apple, peeled, sliced, and coarsely chopped
4 tablespoons (1/2 stick) butter or margarine
1/2 cup packed brown sugar
1/2 cup chopped pecans, optional

Steps:

  • Prepare the Delicious Slicing Bread, adding the vanilla extract to the dough. Set aside.
  • Lightly grease a 10-cup Bundt pan or fluted pan.
  • Combine the sugar and cinnamon in a small bowl. Toss 1 tablespoon of the sugar mixture over apples in a medium bowl and stir to coat. Set aside.
  • In a microwave-proof bowl, melt the butter in the microwave on medium high for 30 to 40 seconds, until melted. Stir in the brown sugar until dissolved. Pour into the bottom of the prepared pan and sprinkle half the pecans, if using, over the brown sugar mixture.
  • Spray a 1/4-cup scoop with vegetable spray. Scoop out balls of the bread dough and arrange in one layer over the pecan and brown sugar mixture. (This will yield about eight scoops or half the dough.) Sprinkle half of the remaining cinnamon sugar over the balls of dough. Spread the apples over the dough and top with a second layer of balls of dough, using all the remaining dough. Sprinkle with the remaining cinnamon sugar and the remaining pecans over the top. Cover loosely with plastic wrap and set in a warm, draft free area to rise about 45 minutes.
  • Preheat the oven to 375°F. Remove the plastic wrap from the dough and bake for 30 to 35 minutes, until the top is brown. Remove to a wire rack and cool for 10 minutes. Invert onto a serving plate. Let cool an additional 10 minutes. Pull apart or slice with a bread knife. The monkey bread is best served warm, and can be reheated in a 350°F oven for 5 to 7 minutes.
  • Shortcuts:
  • Use a commercial bread mix in place of the Delicious Slicing Bread.
  • Place pecan halves in a plastic zip-top bag and seal. Crush with a rolling pin until coarsely chopped.
