It only takes 40 minutes, Bisquick, Roma tomatoes, mozzarella, basil and shredded parmesan to make our pizza.

Yellow cornmeal (for sprinkling)
3 cups Original Bisquick™ mix
2/3 cup very hot water
3 tablespoons olive or vegetable oil
2 to 3 fresh plum (Roma) tomatoes, sliced
6 oz fresh mozzarella cheese, sliced
1/2 cup fresh basil leaves, loosely torn
1/2 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 450°F. If you're using a pizza stone or 12-inch pizza pan, lightly dust with cornmeal. (If you don't have a pizza stone or pizza pan, prepare cookie sheet lined with parchment paper and dust with cornmeal.)
  • In medium bowl, stir Bisquick mix, water and 2 tablespoons of the oil until soft dough forms. Cover; let stand about 10 minutes. Pat or press dough onto stone or pizza pan into 12-inch circle, using fingers dipped in Bisquick mix. Bake 6 to 7 minutes or until lightly browned around edges.
  • Remove dough from oven and brush with remaining tablespoon of oil and top with sliced tomatoes. Follow with cheese slices, basil, and finish by sprinkling Parmesan across the top. Bake 10 to 12 minutes or until crust is golden brown and cheese is melted.

For Beef:
2 1/2 - 3 lbs. chuck roast, (mine weighed 2.71 lbs.)
2 tsp. kosher salt
1 tsp. coarse ground black pepper
2 tsp. onion powder
2 tsp. garlic powder
4 tsp. dried oregano
1 (10 1/2 oz.) can beef consommé
4 large garlic cloves, grated
For 1 Italian-Style Pita Pizza:
1 - 6" pita bread round
1 1/2 Tbl. basil pesto
1/2 - 1 cup pulled beef
3 thick slices fresh mozzarella
4 semi-thin slices roma tomato
1 small piece (end piece) fresh mozzarella
pepper to taste
extra-virgin olive oil (EVOO), a light drizzling
sweet aged balsamic vinegar, a light drizzling
2 large fresh basil leaves, stacked, rolled lengthwise, and sliced thinly into chiffonade ribbons

Steps:

  • Pat one side with half of the seasonings.
  • In crock pot, add beef consommé and grate in garlic. Stir.
  • Place roast in seasoned side-down.
  • Season other side with rest of seasonings.
  • Place on lid and turn crock pot on to High for 15 minutes.
  • Reduce heat to Low, and continue cooking until fall-apart tender, about 6 hours.
  • Remove meat to a baking sheet, pour juices from crock into a large glass measuring cup, and refrigerate juices.
  • Shred meat with 2 forks, or leave in bite-sized chunks if preferred. Cover to keep moist.
  • When fat has solidified on top of juices, remove, then pour most of the juice over the meat to keep it from drying out.
  • Use what you need, and freeze the rest for later uses.
  • For 1 Italian-Style Pita Pizza:
  • Preheat oven to 375º F.
  • Warm beef a little to melt any fat left, drain, and set aside. Place pita bread round onto a small baking sheet. Spread with basil pesto almost to the edge. Pile with beef. Top with slices of fresh mozzarella, then tomato, then one last small piece of mozzarella.
  • Pop into oven and bake for 20 - 25 minutes until cheese has fully melted and just starting to brown in small patches.
  • Remove from oven and transfer pizza to a cutting board. Sprinkle with black pepper. Drizzle with EVOO and balsamic vinegar. Sprinkle with fresh basil chiffonade.
  • Cut into fourths, serve hot, and enjoy!

1 cup all-purpose flour, plus more for dusting
1/4 teaspoon baking powder
Kosher salt
5 tablespoons extra-virgin olive oil, plus more for brushing
1 15-ounce can cannellini beans, drained and rinsed
2/3 cup drained giardiniera (Italian pickled vegetables), chopped, plus 2 tablespoons brine
1/2 cup fresh basil, torn, plus small leaves for topping
2 tablespoons chopped fresh parsley
Freshly ground pepper
3 medium heirloom tomatoes (about 1 1/4 pounds)
1 small clove garlic, grated
1/4 cup grated parmesan cheese
8 ounces fresh mozzarella cheese, thinly sliced

Steps:

  • Place a pizza stone or inverted baking sheet in the lower third of the oven and preheat to 450 degrees F. Mix the flour, baking powder and 1/2 teaspoon salt in a medium bowl. Stir in 1/3 cup water and 2 tablespoons olive oil until a shaggy dough forms. Turn out onto a lightly floured surface and knead into a smooth ball, 1 to 2 minutes. Wrap in plastic wrap and set aside for 15 minutes at room temperature.
  • Meanwhile, toss the beans, giardiniera and brine, basil, parsley and 1 tablespoon olive oil in a large bowl. Season with salt and pepper; set aside. Slice the tomatoes, place on paper towels and sprinkle lightly with salt; set aside.
  • Roll out the dough into a 12-inch round on a lightly oiled piece of parchment paper. Slide the parchment with the dough onto an inverted baking sheet. Rub 1 tablespoon olive oil and the garlic all over the dough. Sprinkle the parmesan on top. Slide onto the hot stone and bake until browned and crisp, about 8 minutes.
  • Remove the crust from the oven and top with the mozzarella, tomatoes and basil leaves. Drizzle with the remaining 1 tablespoon olive oil and season with salt and pepper. Serve with the bean salad.

Steps:

  • Build a campfire and place a grill grate on top. Allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire.

The polenta crust needs to chill at least 2 hours before baking, so prep it the night before (or in the morning before you run to work-it's that easy).

2 tablespoons olive oil, divided
3 cups 1 percent milk
2 teaspoons salt
1 1/2 cups cornmeal
2 large shallots, thinly sliced
2 garlic cloves, thinly sliced
2 pints cherry tomatoes,halved
3/4 lb fresh mozzarella, cubed
10 basil leaves, coarsely torn

Steps:

  • Lightly coat a large rimmed baking sheet with 1 tablespoon oil. In a large pot, bring milk, 3 cups water and salt to boil over high heat. Whisk in cornmeal in a gentle stream and reduce heat to medium-low. Simmer, stirring often, until polenta is thick and no longer gritty, about 20 minutes. Working quickly, pour polenta into prepared pan, spreading evenly to the edges. Let stand 10 minutes; cover with plastic wrap and press polenta along sides of pan to form edges of crust. Refrigerate at least 2 hours or overnight.
  • Heat oven to 450°. Bake chilled crust until it begins to brown at edges, 45 minutes to an hour. Heat remaining 1 tablespoon oil in a large saucepan. Sauté shallots and garlic over medium-high heat until soft, 3 minutes. Add tomatoes and cook, stirring occasionally, until they begin to soften, 5 minutes. Mash with the back of a spoon and cook until thickened, 3 minutes more. Season with salt and pepper. Spoon sauce onto the crust, top with cheese and bake until cheese is bubbling, 10 to 15 minutes. 12 roma tomatoes halved
1 tbsp fresh thyme (1 tsp dry thyme)
1 tbsp sugar
1 large red onion cut into 8 intact wedges
2 bulbs of garlic with tops cut off

Crust:
prepared pizza dough
handful of cornmeal
Remaining Pizza Toppings
1/2 lb fresh mozzarella (bocconcini)cut into 1/4 inch slices or 1.5 cups shredded mozzarella
2 tbsp grated parmesan cheese
balsamic glaze (reduced balsamic vinegar)
2 tbsp roasted pine nuts
1 cup arugula

Steps:

  • Roasting Vegetables: Preheat oven to 300 F. Scoop out flesh and seeds of tomatoes and place tomatoes skin side down on baking sheet. Sprinkle tomatoes with thyme and sugar. Place onion wedges (narrow side up) and garlic bulbs on sheet with tomatoes. Sprinke onions and garlic with a generous pinch of salt. Sprinkle olive oil over tomatoes, onion and garlic. Place in oven and roast for 1 hour. Take out of the oven and let the vegetables cool. Once cooled, squeeze out the roasted garlic gloves into small bowl. Slice onion in half lengthwise and separate the wedges. Season tomatoes with salt and pepper. (Roasted vegetables will keep in sealed container for 2 or 3 days) Assembling Pizza: Preheat Oven to 450 F Roll out pizza dough until 1/4 inch thick. Sprinkle cornmeal in pizza pan. Place rolled out dough on the pan. Spread garlic and onion slices over pizza . Cover with slices of mozzeralla (so onion and garlic won't burn). Place tomoatoes on top of cheese. Bake in oven for 10-15 minutes until the crust is golden. Take pizza out of the oven and sprinkle parmesan over hot pizza. Sprinkle pine nuts and arugula over pizza. Drizzle with balsamic glaze. Slice and enjoy!

1 (12 inch) prepared pizza crust, uncooked (not prebaked)
2 -3 tablespoons olive oil
1 garlic clove, minced
1 cup shredded mozzarella cheese
1 lb heirloom tomatoes, chopped or 1 lb heirloom cherry tomatoes, halved
6 -8 large basil leaves, sliced into thin shreds (chiffonade)
1/4 cup olive oil
2 tablespoons balsamic vinegar
sea salt, to taste
fresh ground pepper, to taste
8 ounces fresh mozzarella cheese, sliced into rounds

Steps:

  • Combine chopped tomatoes, basil leaves, olive oil, salt, and pepper in a small bowl.

How to make Mediterranean Phyllo Pizza Caprese

20 sheets phyllo dough, 14x9 inches
5 tablespoons melted butter
10 tablespoons grated Parmigiano Reggiano cheese
10 ounces mozzarella cheese
1/2 onion, paper-thinly sliced
2 tomatoes, thinly sliced
dried oregano
salt and pepper
10 roasted pistachio nuts, finely chopped
1 tablespoon basil leaves, finely chopped

Steps:

  • Preheat an oven to 375 degrees F.
  • Spray a baking sheet, 15x10x1 inches, with cooking spray.
  • Follow directions on packaging of phyllo dough to get it ready to work with.
  • Unroll one roll of the phyllo dough and cut in half.
  • Line the bottom of the baking sheet with 2 pieces of phyllo dough. The edges of the phyllo dough should go up the sides of the baking sheet.
  • Brush with butter and sprinkle with some Parmigiano Reggiano cheese. Repeat this procedure until you run out of phyllo sheets. Keep the phyllo sheets you're not working with under a damp kitchen towel; you have to prevent them from drying, because they will break as soon as you touch them.
  • Top the phyllo dough with the tomato, mozzarella and onion slices; alternate and make sure they slightly overlap.
  • Sprinkle with salt, pepper and oregano and place baking sheet in the oven.
  • Bake in oven for approx. 25 minutes.
  • Cut the pizza in half and cool half for another day.
  • Cut the half you want to eat in cute triangles and sprinkle with pistachio and basil.
