1 1/2 cups cold milk
1 cup espresso

Steps:

  • Using the steam attachment on an espresso machine, warm and froth milk. Divide espresso between 2 coffee cups. Pour 1/2 cup of the warmed milk from beneath the froth into each cup. Spoon milk foam on top and serve.

  • Place all ingredients in medium bowl; stir gently until well blended.

1 cup hot coffee
1/8 teaspoon salt
1 cup heavy cream
1 teaspoon vanilla

Steps:

  • Put marshmallows in double boiler.
  • Add coffee and salt-stirring,heat until smooth.
  • Chill until it begins to set.
  • Fold in stiffly whipped cream.
  • Add vanilla.
  • Chill until mixture will mound.
  • Serve in sherbert glasses.

1 tablespoon boiling water
2 teaspoons instant coffee granules
2-1/2 teaspoons ground cinnamon, divided
1/3 cup heavy whipping cream
6 ounces bittersweet chocolate, chopped
2 tablespoons butter, softened
3 tablespoons sugar

Steps:

  • In a small bowl, combine the water, coffee and 1 teaspoon cinnamon; set aside. In a small saucepan, bring cream just to a boil. Remove from the heat; whisk in chocolate and butter until smooth. Stir in coffee mixture. Press plastic wrap onto surface. Refrigerate for 1 hour or until easy to handle., In a small bowl, combine sugar and remaining cinnamon. Shape chocolate into 1-in. balls; roll in cinnamon-sugar. Refrigerate for at least 2 hours or until firm.

2 cups whipping cream
1/2 cup sugar
2 teaspoons instant espresso powder
5 large egg yolks
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon vanilla extract
3 tablespoons golden brown sugar

Steps:

  • Preheat over to 325. Arrange six 3/4 cup ramekins in 13x9x2 metal baking pan.
  • Combine cream, sugar and espresso powder in heavy saucepan. Bring to simmer over medium heat, stirring until sugar dissolves. Remove from heat.
  • Whisk yolks, cinnamon and nutmeg in medium bowl. Gradually whisk in cream mixture, then vanilla. Divide custard among ramekins.
  • Pour hot water into pan to come halfway up sides of ramekins. Bake until custards are softly set about 30 minutes. Remove from water. Chill until cold, at least 3 hours.
  • Preheat boiler. Press 1/2 tablespoon brown sugar through sieve onto each custard. Broil until sugar bubbles and caramelizes about 2 minutes. Chill until topping hardens at least 1 hour and up to 4 hours. Serves cold.

1 1/2 cups sugar
2 cups half-and-half
1 tablespoon instant espresso coffee granules
1 teaspoon vanilla
2 whole eggs
6 egg yolks
3 oz bittersweet baking chocolate

Steps:

  • Heat oven to 350°F. In large bowl, beat all ingredients except chocolate with wire whisk until smooth.
  • Pour mixture into 8 ungreased 6-ounce ramekins. Place ramekins in shallow roasting pan. Fill pan with hot water to halfway up sides of ramekins.
  • Bake 30 to 35 minutes or just until set. Remove ramekins to cooling rack. Cool 30 minutes. Meanwhile, in small microwavable bowl, microwave chocolate uncovered on High 30 to 40 seconds, stirring every 15 seconds, until melted and smooth.
  • Spoon about 2 teaspoons melted chocolate over top of each custard, spreading evenly to form a thin layer. Cover; refrigerate at least 1 hour or until well chilled.
