These cappuccino muffins are an easy muffin recipe that has a deep coffee flavor that pairs beautifully with the chocolate chips!

Number Of Ingredients 11

2 1/3 cups (280 g) all-purpose flour
2 teaspoon (10 ml) baking powder
1 teaspoon (5 ml) salt
1 teaspoon (5 ml) ground cinnamon
¾ cup (180 ml) hot water
2 tablespoon (30 ml) espresso powder or instant coffee
¼ cup (60 ml) milk
2 eggs
1 cup (200 g) sugar
¾ cup (180 ml) vegetable oil
1/3 cup (80 ml) mini chocolate chips

Steps:

  • Preheat oven to 425F (218C)
  • In a small bowl combine hot water and espresso powder, stir to dissolve. Add milk, stir to combine and set aside to cool.
  • In a medium bowl whisk together the flour, baking powder, salt, and cinnamon. Set aside.
  • In a large bowl, whisk together eggs, sugar, and oil. Then slowly add the coffee mixture, stir to combine. Then add the dry ingredients in thirds, whisking gently until smooth. Add chocolate chips, stir to combine.
  • Place the muffin papers in a 12-cup muffin tin. Fill each cup halfway.
  • Bake for 17-20 minutes until risen and set. Serve with your favorite cup of coffee.

ESPRESSO SPREAD:
4 ounces cream cheese, cubed
1 tablespoon sugar
1/2 teaspoon instant coffee granules
1/2 teaspoon vanilla extract
1/4 cup miniature semisweet chocolate chips
MUFFINS:
2 cups all-purpose flour
3/4 cup sugar
2-1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup 2% milk
2 tablespoons instant coffee granules
1/2 cup butter, melted
1 large egg
1 teaspoon vanilla extract
3/4 cup miniature semisweet chocolate chips

Steps:

  • In a food processor, combine the spread ingredients; cover and process until well blended. Transfer to a small bowl; cover and refrigerate until serving., In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, combine milk and coffee granules until coffee is dissolved. Add the butter, egg and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Fill greased or paper-lined muffin cups two-thirds full. Bake at 375° for 17-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans to wire racks. Serve warm with espresso spread.

2 cups all-purpose flour
1/2 cup sugar
2 1/2 teaspoons baking powder
2 teaspoons instant espresso coffee powder (or instant coffee)
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup milk
1/2 cup butter, melted and cooled
1 egg, slightly beaten
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat oven to 375°F
  • Line muffin tins with papers or grease well.
  • In a large bowl, whisk together flour, sugar, baking powder, espresso or instant coffee, salt, cinnamon, and nutmeg.
  • Set aside.
  • In a medium bowl, mix milk, butter, egg, and vanilla until combined.
  • Stir milk mixture into flour mixture only until combined.
  • Do not over mix.
  • Fill muffin cups 3/4 full.
  • Bake 15 to 20 minutes for standard muffins, 10 to 12 minutes for mini-muffins.
  • Cappuccino muffins freeze well.

1/2 cup brown sugar, packed
2 teaspoons baking powder

1 cup milk
1/2 cup butter, melted
1 teaspoon vanilla extract
1 cup semisweet mini chocolate chips
6 tablespoons flour
1/4 cup brown sugar, packed
1/2 teaspoon cinnamon
1/4 cup butter, cold

Steps:

  • Preheat oven to 375. Paper or grease 15 muffin cups.
  • In a mixing bowl, combine first seven ingredients.
  • In a smaller bowl, whisk egg, milk, melted butter and vanilla. Stir into dry ingredients in other bowl, just until moistened. Add cup of choc. chips.
  • Fill muffin cups 3/4's full. Set aside.
  • TOPPING: combine remaining dry ingredients, cut in butter to resemble coarse crumbs. Sprinkle over batter in cups.
  • Bake at 375 for 24 minutes, check with a toothpick. Cool for 5 minutes.
  • LEFTOVERS: Either reheat in the toaster oven or serve at room temperature Split in half and spread with butter & honey, alongside a cup of tea or cappuccino.

FOR 12 MUFFINS:
2 c all purpose flour
1/2 c sugar
1/4 c brown sugar
2 tsp baking powder
2 tsp instant coffee powder
1/4 tsp salt
1 tsp cinnamon, ground
1 c milk
1/2 c butter, melted
1 egg
1 tsp vanilla extract
3/4 c semi-sweet mini chocloate chips or
4 oz semisweet chocolate, chopped into 1/2 inch pieces
CRUMB TOPPING:
1/4 c butter
6 Tbsp all-purpose flour
4 Tbsp brown sugar
1/2 tsp cinnamon

Steps:

  • 1. Preheat oven to 400 F
  • 2. In a large bowl, combine flour, sugar, brown sugar, baking powder, coffee powder, salt and cinnamon
  • 3. In another bowl, mix together milk, melted butter, egg and vanilla
  • 4. Pour liquid ingredients into the dry mixture. Stir to combine but do not overmix. Use a maximum of 15 - 20 strokes, and don't worry about lumps in the batter. Stir in the chocolate chips or chopped chocolate.
  • 5. Spoon batter into 12 paper lined muffin cups
  • 6. Use a pastry cutter and combine the crumb topping ingredients in a small bowl
  • 7. Sprinkle topping evenly over the unbaked muffins
  • 8. Bake for 20 minutes or until a toothpick inserted in the center comes out clean
  • 9. These muffins are best served hot (warm at least!) I can't tell you if they keep well, they never last that long! A pot of fresh-brewed coffee + a bowl of fresh strawberries + these muffins = breakfast at my mom's house!!

1 cup all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 egg
1/3 cup milk

CRUMB TOPPING:
4 teaspoons all-purpose flour
2 teaspoons sugar
Pinch ground cinnamon

Steps:

  • In a small bowl, combine the first five ingredients. Whisk the egg, milk, butter and espresso powder until espresso powder is dissolved. Stir into the dry ingredients just until moistened. Fill greased or paper-lined muffin cups two-thirds full., For topping, combine the flour, sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle about 1 teaspoon over each muffin. , Bake at 400° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack. Serve warm.

Browning the butter for the crumbs adds a rich, caramelized depth that rounds out the flavors of vanilla and lemon zest in the batter. These muffins keep well for several days stored airtight at room temperature, and freeze perfectly for up to two months.

1/2 cup/115 grams unsalted butter (1 stick)
1 1/3 cups/165 grams all-purpose flour
1/2 cup/110 grams dark brown sugar, packed
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground allspice or cardamom
1/4 teaspoon fine sea salt
3/4 cup/180 milliliters sour cream
2 large eggs
2 teaspoons vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon finely grated lemon zest
1 1/2 cups/190 grams all-purpose flour
2/3 cup/135 grams granulated sugar
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon fine sea salt
1/2 cup/115 grams unsalted butter (1 stick), cut into 1-inch slices and softened

Steps:

  • Heat oven to 375 degrees and line a 12-cup muffin tin with liners.
  • Make the topping: In a medium saucepan over medium-high heat, melt butter, then let it simmer until the foam on top falls to the bottom of the pot and turns brown, 4 to 6 minutes. It will smell nutty when it's ready. Immediately pour butter into a small bowl to keep it from getting any browner, and let cool for 5 minutes.
  • Whisk together flour, sugar, spices and salt in a medium bowl. Pour in the brown butter and stir, pinching the mixture together, until crumbs form. Set aside.
  • Make the batter: Whisk together sour cream, eggs, vanilla, almond extract and lemon zest in a mixing bowl.
  • In a large bowl, using a stand mixer fitted with the paddle attachment or a handheld electric mixer, mix together flour, sugar, baking soda, baking powder and salt until combined, about 10 seconds. Add softened butter and beat for 20 seconds to work it into the flour. Add egg mixture and continue beating until the batter is very smooth, about 1 minute.
  • Sprinkle a scant tablespoon of the topping crumbs into the bottom of each muffin liner. Spoon the batter on top of the crumbs, dividing it evenly.
  • Bake muffins for 5 minutes to firm up the tops so the crumbs don't sink into the batter. Remove muffin pan from the oven and lower heat to 350 degrees. Sprinkle the remaining crumbs on top of each muffin. Continue to bake until the muffins are springy to the touch and a toothpick inserted into the center comes out clean, 25 to 30 minutes longer. Cool on a rack for 15 minutes. Use an offset spatula or butter knife to lift the muffins out of the pan. Finish cooling muffins on a rack.
