This is a family favorite and always finds a place onto our Christmas treat tray! It's pretty with the colored marshmallows, tasty, and quick! These also freeze very well.

2 lbs white chocolate bark
2 cups peanut butter Captain Crunch cereal
2 cups Rice Krispies
2 cups dry roasted peanuts
2 cups colored miniature marshmallows

Steps:

  • Melt chocolate.
  • Add cereals and peanuts. Mix well.
  • Add marshmallows, stirring well to coat.
  • Cool slightly, then drop by teaspoons onto waxed paper.
  • Place in freezer 5 minutes to set.

2 pounds white candy coating, coarsely chopped
1-1/2 cups peanut butter
1/2 teaspoon almond extract, optional
4 cups Cap'n Crunch cereal
4 cups crisp rice cereal
4 cups miniature marshmallows

Steps:

  • Place candy coating in a 5-qt. slow cooker. Cover and cook on high for 1 hour. Add peanut butter. Stir in extract if desired. , In a large bowl, combine the cereals and marshmallows. Add the peanut butter mixture and stir until the cereal mixture is well coated. Drop by tablespoonfuls onto waxed paper. Let stand until set. Store at room temperature.

1 (18 ounce) box Cap'n Crunch cereal
6 tablespoons butter
1 (16 ounce) bag marshmallows
1/2 teaspoon pure vanilla extract
salt, a pinch

Steps:

  • Grease a 13 x 9 inch baking pan with softened butter or spray with nonstick cooking spray.
  • Add the cereal to a bowl; set aside.
  • Melt the butter in a large saucepan over low heat.
  • Add the marshmallows, vanilla, and salt; cook, stirring constantly, until the marshmallows are melted into the butter.
  • Immediately pour the marshmallow mixture over the cereal and stir with a large wooden spoon until all the cereal is coated with melted marshmallows.
  • Spoon the cereal mixture into prepared pan.
  • With buttered hands, gently but firmly press the cereal into the pan to compact the mixture.
  • Let the mixture cool completely.
  • When cool, cut into 15 large bars.
  • Serve right away, or wrap each bar separately with waxed paper or plastic wrap and store in covered container for up to 2 days.

This is a copycat to Planet Hollywoods Cap'n Crunch Chicken. The first time I made it, I burned it, and we could barely eat it. The second time I made it, it came out perfect and boy is it good! We enjoy ours with my homemade honey-mustard sauce. They make the best combo!

2 1/2 cups Cap'n Crunch cereal
1 cup corn flakes
1 egg
1/2 cup milk
1/2 cup flour
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon black pepper
2 lbs chicken breasts, cut in 1 oz. tenders
vegetable oil (for frying)
1/2 cup mayonnaise
2 tablespoons honey
1 tablespoon prepared mustard

Steps:

  • Coarsely grind or crush the two cereals and set aside.
  • Beat the egg with milk and set aside.
  • Stir together the flour, onion and garlic powders and black pepper; set aside Dip the chicken: pieces in the seasoned flour and coat well; shake off the excess flour.
  • Dip in the egg wash, coating well, then dip in the cereal mixture, coating well.
  • Heat oil in a large heavy skillet to 325.
  • Drop coated chicken tenders carefully in the hot oil and cook until golden brown and fully cooked, 3 to 5 minutes depending on size.
  • Drain and serve immediately with sauce.
  • For sauce, combine all ingredients and mix well.
  • Yield: 4 to 6 servings.
