MELON COOLER

1 (750-ml) bottle dry white wine or 3 cups white grape juice
2 (8-ounce) bottles fresh watermelon juice
1 1/2 cups mixed melon balls, cantaloupe and honeydew
Ice cubes
1 (33.8-ounce) bottle club soda

Steps:

  • In a large pitcher, combine wine, melon juice, and melon balls. Chill for at least 1 hour. Just before serving, add ice, stir, pour in soda, and stir lightly again.

Cantaloupe, peeled and seeded
1/4 cup honey
Finely grated zest and juice of 1 lime

Steps:

  • Using a sharp knife, slice the cantaloupe as thin as possible. Mound the slices on 4 serving plates, dividing evenly.
  • Drizzle the cantaloupe with the honey, and then sprinkle with lime zest and juice. Serve immediately.
  • Using a sharp knife, slice off the top and bottom of the melon so that it sits flat on a work surface.
  • Following the shape of the melon, slice off the peel in strips, from top to bottom.
  • Halve the peeled melon lengthwise, and scrape out the seeds with a spoon before slicing.

1/4 cup sugar
1/4 cup lightly packed mint sprigs, plus more for serving
6 cups peeled, chopped watermelon
1/3 cup fresh lime juice
1 ounce tequila (optional)

Steps:

  • In a small heatproof bowl, pour 1/2 cup boiling water over sugar and mint; stir until sugar has dissolved. Let cool completely, about 20 minutes. Strain syrup into a blender; discard mint.
  • Add watermelon, lime juice, and 1 3/4 cups cold water; blend until smooth. Strain through a fine-mesh sieve.
  • Serve over ice, garnished with a mint sprig, or refrigerate in an airtight container up to 3 days. If using tequila, stir a shot (1-ounce) into each glass before serving.

8 heaping cups lush, ripe cantaloupe, cut into 2-inch chunks
1 1/2 cups mango nectar or orange-mango juice
1 tablespoon lime juice
2 to 3 tablespoons agave nectar or maple syrup, to taste
Pinch of cinnamon
Pinch of ground nutmeg
1 cup berries, any variety, for garnish
Fresh mint leaves for garnish, optional

Steps:

  • Set aside about 2 cups of the melon chunks and place the rest in a food processor or blender. Process until smoothly pureed, then add the juices, nectar, and spices. Process again until thoroughly blended. Transfer the mixture to a serving container.
  • Cut the reserved melon chunks into 1/2-inch dice and stir them into the soup. Cover and chill for an hour or so before serving. Garnish each serving with some berries and 2 or 3 mint leaves, if desired.

1/3 cup sugar
1/2 cup packed mint leaves
Lime slices and mint leaves for garnish
