Steps:
- In a large pitcher, combine wine, melon juice, and melon balls. Chill for at least 1 hour. Just before serving, add ice, stir, pour in soda, and stir lightly again.

Steps:
- Using a sharp knife, slice the cantaloupe as thin as possible. Mound the slices on 4 serving plates, dividing evenly.
- Drizzle the cantaloupe with the honey, and then sprinkle with lime zest and juice. Serve immediately.
- Using a sharp knife, slice off the top and bottom of the melon so that it sits flat on a work surface.
- Following the shape of the melon, slice off the peel in strips, from top to bottom.
- Halve the peeled melon lengthwise, and scrape out the seeds with a spoon before slicing.
WATERMELON-LIME-MINT COOLER

- In a small heatproof bowl, pour 1/2 cup boiling water over sugar and mint; stir until sugar has dissolved. Let cool completely, about 20 minutes. Strain syrup into a blender; discard mint.
- Add watermelon, lime juice, and 1 3/4 cups cold water; blend until smooth. Strain through a fine-mesh sieve.

- Place melon cubes in a single layer on a baking sheet. Cover and freeze 30 minutes or until firm. Position knife blade in food processor bowl. Add frozen melon, sherbet, and lime juice. Process until smooth. Pour into glasses. Garnish with strawberries, if desired. Serve immediately.
CHILLED CANTALOUPE SOUP

- Set aside about 2 cups of the melon chunks and place the rest in a food processor or blender. Process until smoothly pureed, then add the juices, nectar, and spices. Process again until thoroughly blended. Transfer the mixture to a serving container.
- Cut the reserved melon chunks into 1/2-inch dice and stir them into the soup. Cover and chill for an hour or so before serving. Garnish each serving with some berries and 2 or 3 mint leaves, if desired.
