MY CANNOLI FILLING RUM CAKE

- For the cake: Preheat the oven to 350 degrees F. Grease the bottom and sides of two 9-inch round cake pans with 2 tablespoons of the butter.
- Make the cake batter: In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and granulated sugar on medium speed until smooth, 5 to 8 minutes. Add the eggs, one by one, and then add the lemon zest and juice. In a medium bowl, sift together the flour, baking powder and salt. Remove the bowl from the machine and stir in the dry ingredients. Do not overmix.
- Bake the cake: Fill each prepared cake pan with half of the batter. Place the pans in the center of the oven and bake until a toothpick inserted in the center of each cake emerges clean, 30 to 35 minutes. Cool the cakes in the pans on wire racks until cool enough to handle, then turn the cakes out onto the racks to cool completely.
- For the filling: In a medium bowl, whisk the ricotta until smooth. Sift in the confectioners' sugar, cinnamon and nutmeg. Mix to blend. In a separate bowl (or in the bowl of an electric mixer fitted with the whisk attachment), beat the heavy cream until fairly stiff.
- Using a rubber spatula, gently fold the cream into the ricotta mixture. Stir in the chocolate chips and lemon zest.
- For the rum glaze: Bring the rum to a simmer in a medium pot over low heat. Sift in the confectioners' sugar and a pinch of salt and simmer, whisking, until smooth, 2 to 3 minutes. Cool.
- Assemble the cake: Place one layer of the cake on a flat surface. Brush some of the rum glaze on the first layer and top with all of the ricotta filling. Place the second cake squarely on top and gently press the two layers together. Brush the second cake with rum glaze.
- For the toppings: Frost the whole exterior of the cake with the whipped cream. Sprinkle on the chocolate chips over top. Serve immediately or refrigerate until serving.

- Bake two 8-inch round cakes according to the package directions. Cool completely. Cut a parchment sheet into four 3-by-12-inch strips and set aside.
- Meanwhile, combine the butter, sugar and salt in the bowl of a stand mixer fitted with a paddle attachment. Beat on the lowest speed until the sugar is incorporated into the butter. Add the vanilla, increase speed to medium-high and beat until smooth, about 2 minutes. With the mixer running on medium high, add the milk, 1 tablespoon at a time, until the frosting is smooth and spreadable.
- To make the filling, remove 2 cups of the frosting and place in a medium bowl. Add the cinnamon and mini chocolate chips and stir until combined. Reserve remaining frosting.
- Using a serrated knife, trim the top of each cake to make level and straight. Line the edges of a cake stand with the parchment strips (to keep it clean when you frost and glaze the cake with chocolate). Place one cake in the center of the cake stand. Using a small offset spatula, spread the chocolate filling evenly over the top of the cake. Top with the second cake.
- With a large offset spatula, spread 3/4 cup of the reserved frosting in a thin layer on the top and sides of the cake. This is called a crumb coat. Place the cake in the freezer until the frosting is set, about 30 minutes.
- Once chilled, remove the cake from the freezer and spread with all but 1/2 cup of the remaining frosting. Smooth the sides and top of the cake using the offset spatula or a bench scraper. Return to the freezer for another 30 minutes to set the frosting.
- Meanwhile, make the ganache by placing the semi-sweet chocolate chips in a small heatproof bowl. Heat the cream until hot but not boiling. Pour over the chocolate and let sit for 5 minutes, then stir until smooth and glossy.
- Remove the cake from the freezer and pour the ganache over the top. Use the back of a spoon to completely cover the top, allowing some of the chocolate to spill over the sides in a drip pattern.
- Place the remaining 1/2 cup frosting in a pastry bag fitted with a medium star tip. Pipe rosettes on the chocolate around the top edge of the cake, spacing them about 1/2 inch apart. Place one end of a cannoli on each rosette, so the opposite ends meet in the center of the cake. Remove the parchment strips from beneath the cake and serve.

Lightly grease an 8 1/2" x 4 1/2" loaf pan. 2) In a medium-sized mixing bowl, beat together the butter, sugar, salt, vanilla, baking powder, espresso powder, and cocoa to make a sandy, somewhat clumpy mixture. Don't worry; the eggs will smooth things out. 3) Add the eggs one at a time, beating well after each addition. Scrape down the sides and bottom of the bowl midway through this process. 4) Add half the flour to the bowl, beating at low speed to combine. 5) Add all of the milk, beating at low speed to combine. 6) Add the remaining flour, beating gently just until the batter is smooth. 7) Pour the batter into the prepared pan. 8) Bake the cake for about 70 minutes, or until a toothpick inserted into the center comes out clean. The top may look a tiny bit damp; that's OK. If you have an instant-read thermometer, the center will register 210°F to 215°F, while just under the top will register about 198°F to 200°F. 9) Remove the cake from the oven, loosen the edges, wait 10 minutes, and turn it out of the pan onto a rack to cool. 10) Store completely cooled cake well wrapped, at room temperature, until ready to fill and frost. 11) To make the filling: Stir together the ricotta, sugar, vanilla, and chocolate chips. Cover and refrigerate until ready to use. 12) To make the frosting: sift the cocoa, confectioners' sugar, and espresso powder into a bowl. 13) Bring the cream to a simmer on the stove or in the microwave, and whisk into the cocoa mixture. At first the mixture will look grainy; continue whisking for a minute. You'll see the lumps disappear as the sugar dissolves and the cocoa hydrates. Scrape the bowl, then beat at medium speed for 1 minute. 17) To assemble the cake: Split the cake in thirds lengthwise, to make 3 layers. Brush the cut side of each layer with simple syrup or vanilla syrup; this will help keep the cake moist. 18) Place the bottom layer on a serving plate. Spread with half the ricotta filling. Top with the second layer, and spread with the remaining filling. Place the third layer on top. 19) Ice the cake - top and sides - with the frosting. 20) Serve immediately; or refrigerate, well-wrapped, until ready to serve, preferably not longer than 24 hours. Cut in crosswise slices to serve. Yield: 8 to 12 servings. tips: As with any cake, refrigeration will dry it out. If not served immediately, this should be refrigerated, and is best served within a day of preparation. - Cake: Preheat oven to 350 degrees. Butter two 8-by-2-inch round cake pans. Line pans with parchment; butter parchment. Dust with flour, tapping out excess. In a food processor, finely grind pistachios. Remove and reserve 1/4 cup ground pistachios, then add flour, baking powder, baking soda, and salt to processor and pulse to combine.
- Beat butter with granulated sugar on medium-high speed until light and fluffy, about 2 minutes. Add orange-flower water; beat to combine. Beat in eggs and yolks, one at a time, thoroughly combining after each addition and scraping down bowl as needed. Add pistachio mixture in three batches, alternating with sour cream and beginning and ending with pistachio mixture.
- Divide batter evenly between cake pans; smooth tops with an offset spatula. Bake, rotating pans once, until tops spring back when lightly touched, 30 to 35 minutes. Transfer pans to a wire rack; let cool 10 minutes. Turn cakes out onto rack; remove parchment and let cool 1 hour. Wrap in plastic and refrigerate at least 1 hour and up to overnight.
- Filling: Meanwhile, combine ricotta and cream in bowl of food processor; process until smooth. Add salt, vanilla, cinnamon, and confectioners' sugar; process to combine. Transfer mixture to a bowl and stir in chopped chocolate and orange peel. Refrigerate in an airtight container at least 1 hour and up to 2 days.
- Cut each cake horizontally into 2 layers. Stack on a cardboard cake round or a plate; brush edges with melted chocolate, then pat some of reserved ground pistachios onto chocolate. Separate, then refrigerate in a single layer until set, 10 minutes. Place one cake layer on a cake stand, bottom-side down; spread 1 1/2 cups filling evenly over top, then place second layer on top. Repeat with remaining filling and cakes, finishing with a cake layer, bottom-side up. Refrigerate at least 1 hour and up to overnight. Sprinkle with confectioners' sugar and remaining reserved ground pistachios.
CAKE AND CANNOLI CUSTARD CREAM FILLING
very good cream filling.. Note: I also made this with using only 250 ml of Nurti Whip and it turns out a little heavier but is great believe me..this is a three for one recipe here..as you can also use the filling without the nutri whip too with good tasting results. Use this filling for tarts, cream puffs, or cakes and although not a traditional cannoli filling its great in those too. Nutri Whip is a Canadian Product, it is similar to Rich's Ready to Whip Topping. It is liquid and needs to be beaten just like whipping cream, without sugar added.

- Combine sugar, flour and salt in a pot.
- Whisk to combine well.
- Add milk gradually to get no lumps.
- Stir over medium heat until it thickens and comes to a low boil, about 10 minutes.
- Beat yolks in a bowl.
- Add some hot mixture into the bowl just a little to bring to a warm temperature.
- Add all back into the pot of mixture on the stove and continue to low cook until thick, do not boil.
- Remove and blend in the vanilla and pkg of dry pudding mix.
- Stir well until blended.
- Cool two hours, covered with saran (not to get a skin on top) or until cold.
- Beat nutri whip and then fold into the cold custard.
- Blending well, the cold mixture is hard to fold in( as it has set to a thick custard) so using beaters low speed is also good results.
- Fill cannoli-- or filling and topping for cakes.this should be stored in the refrigerator, because of the Nutri whip topping.
- I have never made this with reg. whipping cream, always Nurti Whip.

- Preheat oven to 375 degrees F (190 degrees C). Grease one 15 1/2 x 10 1/2 inch jelly-roll pan and line with parchment paper.
- Separate the eggs. In small bowl, with mixer at high speed, beat egg yolks, vanilla, and 1/4 cup granulated sugar until very thick and lemon colored, about 5 minutes. Set beaten yolk mixture aside.
- In large bowl, with clean beaters and with mixer at high speed, beat egg whites, cream of tartar, and salt until soft peaks for. Beating at high speed, gradually sprinkle in 1/4 cup granulated sugar until sugar dissolves and whites stand in stiff peaks.
- Transfer beaten egg yolks to another large bowl. With rubber spatula, gently fold beaten egg whites into beaten egg yolks, one-third at a time. Sift and fold flour, one-third at a time, into egg mixture.
- With metal spatula, spread batter evenly in pan. Bake at 375 degrees F (190 degrees C) for 10 minutes or until top of cake springs back when lightly touched with finger.
- Meanwhile, in a cup, mix 2 tablespoons orange liqueur with 1 tablespoon water and 1 tablespoon sugar until sugar dissolves.
- Sprinkle clean cloth towel with confectioners' sugar. When cake is done, immediately invert hot cake onto towel. Carefully peel off parchment paper and discard. Brush cake with orange-liqueur mixture. Starting from a long side, roll cake with towel jelly-roll fashion. Cool cake roll, seam side down, on wire rack until completely cool, about 1 hour.
- To Make Ricotta Filling: In food processor, with knife blade attached, blend the ricotta cheese, cream cheese, 1/2 cup confectioners' sugar, 1/2 teaspoon vanilla and cinnamon. until smooth. Transfer filling to bowl and stir in 1/4 cup of the chocolate pieces. Cover and refrigerate filling while cake cools.
- Assemble Cake: Gently unroll cooled cake. With metal spatula, spread filling over cake almost to edges. Starting from same long side, roll cake without towel. Place rolled cake, seam side down, on platter.
- To Make Frosting: In small bowl, with mixer at medium speed, beat whipping cream and 3 tablespoons confectioners' sugar until soft peaks form. With rubber spatula, fold in 2 tablespoons orange liqueur and 1/2 teaspoon vanilla. With metal spatula, spread whipped-cream frosting over cake. Refrigerate cake at least 2 hours before serving. Sprinkle top of cake with chopped pistachios and chocolate pieces just before serving.

- Puff Pastry:Preheat oven to 400 degrees with rack in center. Place two rounds of puff pastry on a parchment-lined rimmed baking sheet. Position a wire rack, upside-down and diagonally, on rim of baking sheet. Bake 10 minutes. Reduce oven temperature to 375 degrees and bake 20 minutes more. Remove from oven and carefully remove rack. Switch oven to broiler setting. Dust rounds liberally with confectioners' sugar and return to oven, with rack in lower third. CUSTARD FILLED CANNOLI IN DOUBLE CHOCOLATE CAKE

- First make custard for the cannolis. Heat milk in medium saucepan over medium heat-don't let it boil, just get very warm. While that heats up, whisk together egg yolks, sugar, corn starch, and salt in another medium bowl. Slowly whisk in a cup of hot milk, stirring constantly so the milk doesn't cook the egg. Pour mixture back into pan of hot milk & continue heating on medium heat, again stirring constantly for 5 minutes. Once mixture starts to thicken (or reaches about 170 degrees), remove from heat and immediately stir in butter and vanilla. Pour into a clean bowl (run it through a fine strainer first to remove any lumps) and let cool in fridge. Place plastic wrap directly on surface of custard to keep a skin from forming. While it cools, prepare the batter. First, pre-heat oven to 350. In medium bowl stir flour and cocoa powder together and set aside. Cream together butter and sugar in a stand mixer. Add eggs one at a time, then add baking powder, vanilla, baking soda, salt. Once combined, stop the mixer and scrape down the sides of the bowl. Mix for another 30 seconds, and slowly drizzle in cooled melted chocolate. Add flour/cocoa mixture and milk, 1/2 c of each at a time, mixing constantly. Fill six of the cannoli shells with cooled custard. A pastry bag makes this really easy, but you could also use a spoon. Just make sure custard gets into center of the cannoli shell Put heaping 1/2 c of batter into bottom of six small loaf pans. Place a filled cannoli in the center of each pan then spoon more batter on top, gently spreading to edges of pans. You want sides and top of cannoli to be completely covered, but pans should only be 3/4 full. Bake for 30 minutes at 350 until cake is set and cracks in top are dry. Allow to cool completely then sprinkle with powdered sugar.

Cut 3 of the sections into quarters; set aside for later use. Cover and refrigerate remaining orange sections for snacking or other use. - REFRIGERATE 4 hours. Top with the quartered orange sections and remaining 5 wafers. Cut dessert into 24 pieces to serve. Store leftover dessert in refrigerator.

- 1. Beat cream cheese in a small bowl until fluffy. Add the remaining filling ingredients (except the chocolate chips) and beat until completely smooth. Stir in chips. Refrigerate while you are making the cake.
- 2. Grease a 15x10x1 jelly roll pan, line it with waxed papper and grease the paper.
- 3. In a bowl, combine the cake mix with the other ingredients. Beat on low for 30 seconds and then on medium for 2 more minutes. Pour into pan.
- 4. Bake at 350° for 12-14 minutes. The center of the cake should spring back when lightly touched. Cool for 5 minutes. Dust a linen towel with confectioner's sugar and invert the cake onto the towel. Peel off the waxed paper, then roll up the cake (towel and all), starting with a short side. Cool completely on a wire rack.
- 5. When cool, gently unroll the cake. Spread filling over the cake, leaving 1/2 inch around the edges. Roll the cake up again and place seam side down on a platter. Refrigerate at least 2 hours. Dust with confectioner's sugar before serving.

- 1. Cake: Preheat oven to 350 degrees. Grease with shortening, three metal 8 inch by 2 inch tall round cake pans. Line bottoms with parchment paper rounds. Grease parchment papers with shortening. Lightly flour greased cake pans. Place 6 ounces chopped bittersweet chocolate and 6 ounces chopped unsweetened chocolate in a metal bowl set over a saucepan of simmering water. Stir until melted and smooth. Set aside to cool.
- 2. Combine 2 cups brown sugar and 1/2 cup coconut oil in a large stand mixer bowl. Beat on medium speed for 5 minutes. Add 4 eggs on low speed, one at a time, beating well after each addition. Add 1 1/4 teaspoons orange extract, 1 teaspoon vanilla extract,1 1/2 cups cooled brewed coffee and melted, cooled chocolate mixture. Once all ingredients are combined well, beat for 3 minutes on medium speed. On low speed, add 2 1/2 cups all-purpose flour, 2 teaspoons baking soda, 3/4 teaspoon baking powder, 1 1/4 teaspoon salt alternating with 1 1/2 cups buttermilk. Divide batter evenly among 3 prepared pans. Bake in preheated 350 degree oven for 30-35 minutes or until a cake tester or wooden toothpick stuck into the center of each layer comes out clean. Transfer to wire racks to cool in pans for 10 minutes before removing from pans. Run a blunt knife around the rim of the pan before removing. Carefully peel off the paper liners. Leave on wire racks until completely cooled. Wrap each layer in plastic wrap and place in freezer for 30 minutes. This makes it easier to put the filling and first layer of frosting on cake.
- 3. Cannoli: While cake is baking, prepare cannoli filling. In a small saucepan, combine 3/4 cup half and half cream and 2 tablespoons cornstarch. Cook over low heat, whisking constantly, until the mixture thickens,about 5 minutes. Remove from heat and let cool to lukewarm. Place 1 3/4 cups ricotta cheese,1 cup powered sugar, 1 tablespoon grated orange zest, 1 teaspoon orange extract and 1 teaspoon vanilla extract in a large mixing bowl and combine on low speed, about 1 minute. Add the lukewarm half and half mixture, beating about 1 minute or until creamy. Fold in the 3/4 cup mini semisweet chocolate chips. Cover and store in the refrigerator until cake has cooled and been in the freezer for 30 minutes.
- 4. Orange Buttercream: Place 8 ounces cream cheese, 1 cup unsalted butter, 2 tablespoons meringue powder, 1 teaspoon vanilla extract, and 1/2 teaspoon orange extract in a large stand mixer bowl. Blend on low speed until well combined, about 1 minute. Add powdered sugar, 1 cup at a time until all 7 1/2 cups have been added. Increase the speed to medium and beat until ligh and fluffy, about 1 to 2 minutes. Blend in 2-3 tablespoons of whole milk until desired spreading consistency.
- 5. Assemble Cake: Place one cake layer flat side up on serving plate. Cover the top with half of cannoli filling. repeat with the second layer, topping with the other half of cannoli filling. Set the third layer on top of second layer. Spread a thin layer of orange buttercream on sides and top. Don't worry if some of the cake shows through. This layer is to seal the crumbs. Refrigerate uncovered for at least 30 minutes to allow the icing to set. Cover the remainder of the icing and set aside at room temperature. Remove cake from the refrigerator and frost the top and sides of the cake with the remaining icing. Use leftover icing for decorating if desired. Store the cake in the refrigerator while making the ganache.
- 6. Ganache: Place 1/2 cup heavy whipping cream in a small heavy saucepan. Bring to a low simmer. Remove from the heat and add 1 cup mini semisweet chocolate chips. Stir until chocolate cips are melted. Stir in 1/4 teaspoon orange extract. Let it sit at room temperature for 10 minutes or until cool and slightly thickened. Pour over top of iced cake, allowing it to run over the edges of the cake. If it does not run over the edges by itself, you can use the back of a tablespoon to help over the edges of the cake. Deccorate the top of the cake with white and dark chocolate curls and grated orange zest, if desired. Store cake in the refrigerator.
