These Peach Cobbler Muffins are the perfect sweet snack! This is such an easy recipe that taste's just like Grandma's peach cobbler! And the best part? They're even easier to make than a traditional cobbler and have the perfect crumble topping!

1 1/4 cup all purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup white sugar
1 cups chopped fresh (or canned) peaches
1/2 cup whole milk
1 egg
1/4 cup vegetable oil
1 tsp vanilla extract
1/4 cup all purpose flour
3 tablespoons white sugar
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
4 tablespoons cold unsalted butter

Steps:

  • Preheat your oven to 350 degrees Fahrenheit and prepare a large muffin tin with 12 muffin cups.
  • Add the flour, baking powder, salt and sugar to a large bowl and whisk together to combine.
  • Add the peaches and stir well to coat.
  • Add the milk, egg, oil and vanilla extract, and stir together with a rubber spatula just until the flour disappears.
  • Portion the batter out into the muffin cups evenly (about 3/4 full).
  • Combine the flour, sugar and cinnamon and baking powder in a small bowl and stir.
  • Add the cold butter in chunks and break it up with your fingers in the flour mixture until it resembles coarse crumbs.
  • Top the muffins with a spoonful of the streusel topping.
  • Bake at 350 degrees Fahrenheit for about 20 minutes until golden brown and a toothpick inserted into one of the muffins comes out clean.

These are very moist easy muffins to make. Fruit cocktail is mixed into a simple batter. Be sure to not overmix or muffins will be too dense.

2 cups flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup melted butter
1 egg
3/4 cup milk
1 cup fruit cocktail, well drained

Steps:

  • Mix dry ingredients together in a large bowl.
  • Mix together melted butter, egg and milk and add to dry ingredients.
  • Stir just until mixed and then fold in fruit cocktail.
  • Fill paper lined muffin cups 2/3 full and bake at 400° for about 25 minutes.

2 cups all-purpose baking mix
¼ cup white sugar
1 egg
⅔ cup milk
1 (21 ounce) can cherry pie filling, divided
¼ cup all-purpose flour
¼ cup packed brown sugar
2 tablespoons melted butter
¼ tablespoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a 12 cup muffin pan with paper baking cups.
  • Stir together the baking mix, white sugar, egg, and milk in a bowl just until combined. Stir in 1/2 of the cherry pie filling. Fill the lined muffin cups 2/3 full. Top each muffin with 3 cherries from the remaining cherry pie filling.
  • Mix flour, brown sugar, melted butter, and cinnamon together in a small bowl with a fork until crumbly. Sprinkle evenly over unbaked muffins.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 22 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
