CANDY CANE HOT CHOCOLATE COOKIES

I developed these cookies over the past two Christmases, testing and retesting until they were perfect. They are super pretty, rich, and chewy from the additions of mini marshmallows and hot chocolate mix with just the right amount of peppermint flavor from the crushed candy canes. They are also the perfect accompaniment to a steaming mug of hot cocoa on a snowy day.

2 cups white sugar
1 cup butter, softened
2 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
2 cups all-purpose flour
¾ cup hot chocolate mix (such as Carnation® Rich and Creamy)
1 teaspoon baking soda
½ teaspoon salt
1 ⅔ cups chopped white chocolate
12 peppermint candy canes, crushed
1 (10.5 ounce) package miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat sugar and butter together in a bowl using an electric mixer until smooth and creamy; beat in eggs, 1 at a time, until incorporated. Stir vanilla extract and almond extract into butter mixture.
  • Whisk flour, hot chocolate mix, baking soda, and salt together in a separate bowl; stir into butter mixture until dough is smooth. Fold white chocolate into dough. Drop rounded teaspoonfuls of dough, about 2-inches apart, onto baking sheets. Generously sprinkle crushed candy canes over cookie dough.
  • Bake in the preheated oven until edges of cookies are slightly crisp, 8 to 10 minutes. Immediately arrange marshmallows onto hot cookies; cool on baking sheets until set. Transfer cookies to wire racks to cool completely.

A hot chocolate mix with variations a great gift idea or a winter drink, serve with a small candy cane and top whipped cream!

Number Of Ingredients 6

1 1/2 cups powdered sugar
1/2 cup unsweetened cocoa
1/2 cup coffee creamer
1/2 teaspoon salt
2 1/2 cups skim milk powder (I use carnation)
1 cup candy cane, crushed

Steps:

  • In a large bowl measure and sift powdered sugar, unsweetned cocoa, coffee creamer,salt and skim milk powder.
  • Break up and pulse in food processor til candy canes are very fine. Cover your ears its gonna get noisy!
  • Mix all together and store in air tight container until ready to serve.
  • To make hot chocolate mix 1/3 cup hot chocolate mix in a cup of boiling water. Top with whipped cream!
  • For a gift basket idea I make a batch of just plain hot chocolate, one batch with candy cane added and one batch with mini marshmallows. For a batch -one cup of mini marhmallows. Fill three decorative air tight containers with one of each of these kinds label with instructions for making, add a cute mug, nice gift for the holidays.
  • About 14 candy canes or 175 gram box will yield one cup.

9 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
1 cup crushed red-and-white-striped candy canes or hard peppermint candies
1/4 teaspoon salt
1 1/2 cups peppermint schnapps (optional)
Whipped cream
Additional crushed red-and-white-striped candy canes or hard peppermint candies

Steps:

  • Bring milk to simmer in heavy large saucepan. Reduce heat to medium-low. Add white chocolate, 1 cup candy and salt; whisk until smooth. Add schnapps, if desired. Ladle hot chocolate into mugs, dividing equally. Top with whipped cream and additional candy.

  • 1. Bring milk to simmer in heavy medium saucepan.
  • 2. Reduce heat to medium-low. Add white chocolate, 1/3 cup candy and salt; whisk until smooth.
  • 3. Add schnapps, if desired.
  • 4. Ladle hot chocolate into mugs, dividing equally. Top with whipped cream and additional candy.
