HONEY ROASTED SWEET POTATOES

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Toss sweet potatoes, 1/2 cup honey, and olive oil together in a bowl until potatoes are completely coated. Spread potatoes out on a baking sheet and drizzle any remaining olive oil mixture over the top.
- Bake in the preheated oven until tender, 25 to 30 minutes. Cool on the baking sheet, 5 to 10 minutes; dust potatoes with cinnamon. Transfer sweet potatoes to plates and drizzle with remaining honey.

CANDIED SWEET POTATOES
These perfect candied sweet potatoes are soft, buttery, extra saucy, caramelized, and sweet. I especially love this Thanksgiving side dish because you can prepare the elements of this recipe ahead of time AND purchase the ingredients in advance, too.

- Peel then slice the sweet potatoes into 1/2 inch thick slices. Place in a greased 9×13 inch or other 3 quart baking dish. Sprinkle salt on top and toss to coat. I just use nonstick spray to grease.
- Preheat oven to 375°F (191°C).
- Cut stick of butter in half. (Helps it melt easier.) Combine all the butter, water, maple syrup, brown sugar, cinnamon, nutmeg, and ginger into a medium saucepan over medium heat. Cook and stir until the butter has melted. Stop stirring and bring to a gentle boil. Boil for 2 minutes without stirring. Remove sauce from heat and stir in the vanilla extract. (And orange zest, if using.)
- Pour sauce over potatoes and toss to coat.
- Bake for 1 hour, stopping and stirring the sweet potatoes every 20 minutes. After the first 20 minutes, I cover the dish with aluminum foil so the potatoes bake evenly.
- Remove from the oven, sprinkle with rosemary and sea salt (if using), then cool uncovered for 10 minutes before serving. The sauce is thin right out of the oven but thickens as it cools.
- Cover and store leftovers in the refrigerator for up to 1 week. Sauce will be thick after refrigeration, but thins out as you warm the leftovers up. Simply warm in the microwave.

- Place the sweet potatoes in a Dutch oven and cover with water. Cover and bring to a boil; boil gently 30-45 minutes or until potatoes can be easily pierced with the tip of a sharp knife. , While potatoes cool, preheat oven to 375°. When sweet potatoes are cool enough to handle, peel potatoes and cut into wedges. Place in an ungreased 11x7-in. baking dish. Sprinkle with brown sugar and cinnamon. Dot with butter; drizzle with corn syrup. , Bake, uncovered, 15-20 minutes or until bubbly, basting with sauce occasionally.

CANDIED SWEET POTATOES
This recipe is a family favorite and it is the number one requested food at family gatherings. I have no idea where the recipe originally came from, but I know my Mother has been perfecting it for years. Now in our family there are two thoughts on the proper way to eat them. Some like them with butter to cut the sweetness and the others eat them plain. Your choice! Enjoy.

- Boil sweet potatoes in skins for 15 minutes, rinse with cool water and remove skins.
- Mix brown sugar and water in sauce pan, and boil together for 5-minutes, stirring frequently forming a syrup.
- Add butter and stir until dissolved. Add salt and remove from heat.
- Cut sweet potatoes in quarters lengthwise with cut side down in a.

- Peel the sweet potatoes and cut them into slices.
- Melt the butter in a heavy skillet and add the sliced sweet potatoes.
- Mix the sugar, cinnamon, nutmeg and salt. Cover the sweet potatoes with sugar mixture and stir. Cover skillet, reduce heat to low and cook for about 1 hour or until potatoes are "candied". They should be tender but a little hard around the edges. Also the sauce will turn dark. You will need to stir occasionally during the cooking. Stir in the vanilla just before serving. Serve hot.

When Fred Harvey opened his first Harvey House restaurant in 1876 on the railway line in Topeka, Kan., his idea was radical for the time: Railroad passengers would be fed good food in a pleasant environment. His concept was so successful that it spawned 84 restaurants, a Hollywood movie and an official cookbook. And it was in "The Harvey House Cookbook" that we found this excellent recipe for sweet potatoes candied with confectioners' sugar and butter. It is best served warm rather than piping hot, which makes it convenient for big meals like Thanksgiving. Bake it before you roast your turkey, then reheat it briefly just before serving.

- In a large pot, boil sweet potatoes in their jackets in water to cover until fork-tender, 20 to 45 minutes depending upon their size. Drain and cool.
