KEYSHAWN'S MOM'S CANDIED YAMS
I was looking for a sweet potato dish that was quick and easy to do for Thanksgiving, as well as, a recipe that did not require oven space or time. Lucky for me, a colleague from work, gave me this recipe from www.foodtv.com. It was exactly what I was looking for.

Steps:
- Peel potatoes and cut into 2 inch cubes.
- Place potatoes in large pot, cover with sugar, brown sugar and butter cook over medium heat until potatoes are for tender (approx 20 mins) but not mushy.

- Preheat oven to 350°F. In an ungreased 2-quart baking dish place sweet potato slices, overlapping slightly and covering the dish. In a saucepan, melt butter over low heat. Stir in brown sugar, cinnamon, nutmeg, and salt. Cook until sugar is dissolved, then add the orange slices. Pour the mixture over the potatoes, covering the entire surface. Cover the dish tightly with foil. Bake 40 minutes, or until the sweet potatoes are tender when pierced with a fork. Remove foil and bake 20 to 25 minutes more or until the top is golden brown. Let stand 15 minutes before serving.
CANDIED SWEET POTATOES
My town is known as the Yam Capital of the United States. These candied sweet potatoes go well with baked ham or roasted turkey.

- Place the sweet potatoes in a Dutch oven and cover with water. Cover and bring to a boil; boil gently 30-45 minutes or until potatoes can be easily pierced with the tip of a sharp knife. , While potatoes cool, preheat oven to 375°. When sweet potatoes are cool enough to handle, peel potatoes and cut into wedges. Place in an ungreased 11x7-in. baking dish. Sprinkle with brown sugar and cinnamon. Dot with butter; drizzle with corn syrup. , Bake, uncovered, 15-20 minutes or until bubbly, basting with sauce occasionally.

MAMA'S CANDIED SWEET POTATOES
The combination of orange juice with sweet potatoes is outstandingly delicious! My mother was a great cook. Her dishes always had plenty of exciting flavors. I'm passing on one of her favorites which we enjoyed.

Steps:
- Boil sweet potatoes for 30 minutes. Let potatoes cool and then peel. Cut into quarters.
- Place in a large saucepan and add butter, orange juice, syrup and sugar.
- On top of stove cook at low heat for about 1 3/4 hours to glaze potatoes. Tilt saucepan often to coat all potatoes. Place oranges slices in pot 30 minutes before serving. (She never used a crock pot, but I bet it would work as well.) Freezes well -- just reheat and serve.

- Peel sweet potatoes and cut them in half the long way (tip to tip), then cut each half into 3/4 inch slices. Melt butter and margarine in pot. Add sugar, nutmeg cinnamon, vanilla, and water and bring to boil Add sweet potatoes to pot and stir. Reduce heat to low and cover. Cook for about 20 minutes or until potatoes are candied. They should be tender but a little hard around edge. Serve hot.
