This is one of my favorites not only to have on hand at home, but to pull together for a last minute hostess gift.

2 cups raw peanuts
1 cup white sugar
⅓ cup water
1 pinch coarse sea salt, or to taste
1 pinch ground cinnamon
1 pinch chili powder

Steps:

  • Grease a baking sheet or line with a silicone mat.
  • Cook and stir peanuts, sugar, and water together in a wide, heavy skillet over medium heat until liquid evaporates and nuts begin to crust with the hardening sugar; about 5 minutes.
  • Reduce heat to low and continue to cook and stir, scraping the bottom of the pan to coat peanuts with syrup as the sugar begins to melt and darken to a deep caramel color, about 10 minutes. Tilt pan away from the heat as needed to allow peanut mixture to darken without burning. Remove from heat immediately when peanuts are deeply bronzed; stir.
  • Sprinkle peanuts with sea salt and cinnamon or chili powder; tilt peanuts onto prepared baking sheet to cool completely. Break up clumps. Store in an airtight container at room temperature for up to 1 week.

Steps:

  • Spray 4- to 5-quart slow cooker with cooking spray.
  • In large bowl, stir together sugars and cinnamon. Set aside.
  • In small bowl, beat egg whites and vanilla until a little frothy.
  • Place nuts in slow cooker.
  • Pour egg white mixture over nuts, and stir until nuts are evenly coated.
  • Sprinkle cinnamon sugar over nuts, and stir until nuts are all coated well. Cover; cook on Low heat setting 3 hours, stirring every 20 minutes.

1/2 cup granulated sugar
1/4 cup water
1/2 teaspoon orange zest
1/4 teaspoon ground cinnamon

  • Combine all ingredients in a medium size heavy skillet. Heat over medium-high heat to boiling.

6 cups sugar
3 1/2 tablespoons cinnamon
2 teaspoons ginger powder
1 teaspoon nutmeg
2 teaspoons salt
6 cups whole pecans or walnuts
Vegetable oil, for frying

Steps:

  • In a large bowl combine sugar, cinnamon, ginger, nutmeg, and salt.
  • Blanch nuts in boiling water for 1 minute. Drain and dry them off in a kitchen towel. Lightly toss them into the sugar mixture until coated. Remove nuts, and set aside the sugar spice mixture.
  • Bring the oil in a deep fryer or a heavy-bottomed pan to 330 to 350 degrees-F (do not let the oil burn). *Hint: place 1 nut in the oil and when it starts to sizzle, add the rest of the nuts.
  • Fry approximately 1 minute, the nuts will turn golden in color, and float. Remove from the oil and add directly to the sugar mixture and toss again. Carefully remove nuts and shake off excess sugar, let cool and serve.

MICROWAVE CANDIED NUTS



Microwave Candied Nuts image

This is a recipe my Mom used to make for Christmas gift giving. You can use any kind of nuts you want. It is particularly good with pecans or cashews. Make sure to do some peanuts this way as well, use blanched peanuts so you dont have the skins collecting the candied mixture in the bottom of the dish. You can make separate batches of different nuts, then mix them together after they have cooled. It is very important to use unsalted nuts. If there is any salt your mixture will not candy properly. These were done in a 600 watt microwave. With a higher wattage oven you will likely have to cook these at about 5 or 6 for the power level. As all microwaves cook differently it is a good idea to start with a batch of peanuts. If your sugar mixture starts to brown rather than crystalize you may have some salt in the nuts or the power level is too high. When cooked at the correct power level these nuts will have a lovely white crystalized coating on them. These taste so good it is worth the effort to figure out what power level works for your microwave.

I guessed on how to prepare these nuts after having tried a wonderul Asian inspired salad with candied macademia nuts at a party. This recipe also works well with pecans and walnuts, etc. Use the candied nuts in salads, or as an addition in your favorite trail mix. Our favorite way to eat these nuts is in a simple mixed greens' salad with a light sesame oil and rice vinegar dressing of which many good salad dressing recipes on Zaar may be found. Very easy but messy to prepare!!

1 cup macadamia nuts
3 tablespoons unbleached cane sugar (okay to use white granulated sugar although I prefer the cane sugar) or 3 tablespoons brown sugar

Steps:

  • In a clean, dry castiron skillet on medium heat lightly toast the nuts for about 3 minutes.
  • Add the sugar; mix well.
  • The sugar will start to melt as it comes to temperature.
  • At this point you want to watch the skillet carefully so that the sugar doesn't burn. Reduce heat if necessary. Should the sugar burn, you must start over.
  • NOTE: If the skillet starts to smoke, remove pan quickly and reduce heat.
  • Continue cooking until the sugar is entirely melted and the nuts are coated, about 2 minutes. This is a messy recipe but worth the hassle.
  • Remove promptly from the stove and place the nuts on parchment paper, spreading out as best as possible. Cool.
  • Much of the candied nuts will stick together like candy brittle but will easily break apart once cooled.
  • Store in airtight container and refrigertate any leftovers.
  • (These are highly addicting and usually only half of the nuts end up in a salad because I eat most of them beforehand.).

1 1/2 cups macadamia nuts (about 6 ounces)
27 store-bought sugar cookies (6 3/4 ounces), such as Pepperidge Farm Bordeaux
1/4 cup (1/2 stick) unsalted butter, melted
1 cup fresh pineapple juice
1/2 teaspoon finely grated orange zest, plus 1/4 cup fresh orange juice
1 1/2 cups plus 1 tablespoon sugar
3 tablespoons cornstarch
1/2 teaspoon coarse salt
1/2 teaspoon pure vanilla extract
4 cups chopped fresh pineapple
1 1/2 cups cold heavy cream

Steps:

  • Preheat oven to 375 degrees. Pulse 3/4 cup macadamia nuts in a food processor until they resemble coarse crumbs; set aside in a small bowl. Pulse cookies in a food processor until they resemble coarse crumbs. Add cookie crumbs and melted butter to nuts; stir to combine. Press mixture into a 9-inch pie plate. Bake until golden, 8 to 10 minutes. Transfer to a wire rack; let cool completely.
  • Put pineapple juice, orange zest and juice, 1/2 cup sugar, cornstarch, salt, 1/4 teaspoon vanilla, and the chopped pineapple into a medium saucepan. Simmer, stirring occasionally, over medium heat until thick and transparent, 5 to 7 minutes. Let cool 5 minutes. Pour into crust. Refrigerate 1 hour (up to overnight).
  • Heat 1 cup sugar and 1/4 cup water in a small saucepan, stirring to dissolve sugar. Cook over medium heat until thickened and golden brown, about 5 minutes. Remove from heat. Stir in remaining 3/4 cup nuts. Spread nuts onto a baking sheet lined with parchment, and let cool completely. Coarsely chop.
  • Beat cream with remaining tablespoon sugar and 1/4 teaspoon vanilla until soft peaks form. Spread whipped cream over pie, and refrigerate 30 minutes. Serve sprinkled with candied nuts.

2/3 cup walnuts
2/3 cup hazelnuts, blanched
2/3 cup macadamia nuts
2 1/2 cups pure maple syrup
3 cups canola oil

Steps:

  • Combine nuts and maple syrup in small saucepan. Bring to a boil over medium-high heat, and continue to cook until syrup begins to coat nuts, about 30 minutes.
  • In a medium saucepan, heat canola oil to 350 degrees. Strain nuts to remove any excess syrup. Transfer to a baking sheet to cool. Fry nuts until crispy and any excess caramel is removed. Remove to a baking sheet lined with a Silpat baking mat. Let cool.

2 Tbsp brown sugar, firmly packed
2 Tbsp pecans and/or almonds
1 1/2 tsp brandy
8 oz brie, firm and ripe
sliced apples
crackers
sliced baguette

Steps:

  • 1. Stir together brown sugar, nuts, and brandy. Place cheese in a baking dish a little larger than the Brie wheel. Bake at 425 for about 6 minutes until cheese begins to soften in the middle.
  • 2. Sprinkle the sugar mixture evenly over the cheese.
  • 3. Bake until the sugar melts (3-5 minutes more).
  • 4. Serve with apples, crackers or sliced baguettes. *You can use a 17.6 oz wheel of Brie for this recipe for a larger crowd. Just triple the other ingredients.

1 large egg white
1 teaspoon water
4 cups roasted salted mixed nuts
1 cup sugar
1 1/2 tablespoons cinnamon or 1 1/2 tablespoons pumpkin pie spice

Steps:

  • Whisk together the egg and water till frothy.
  • Stir in nuts.
  • Combine sugar and cinnamon.
  • Add egg mixture to sugar/cinnamon mixture.
  • In a lightly buttered shallow pan spread mixture.
  • Bake (in middle of oven) at 250 degrees for 50 minutes.
  • Cool 1/2 hour and break into chunks.
  • Will keep 5-days in tight container.

I have made these with both almonds and pecans and they turned out so good. I have also made them using sugar and brown sugar with the same ratios and they are great, I just decided to make up this particular recipe because I have several members in my family that are diabetic and it didn't seem fair that they didn't get to...

3 c splenda, granulated
3 c brown sugar splenda
6 Tbsp ground cinnamon
1/4 tsp salt
2 egg whites
4 tsp vanilla extract
6 c almonds or pecans (or a mix)
1/4 c water

Steps:

  • 1. In a large bowl or large heavy duty freezer bag, thoroughly mix together sugars, cinnamon, and salt. Set aside. In a medium sized bowl, combine egg whites and vanilla and whisk together until it starts to get frothy and bubbly. Add nuts and toss until well coated. Then pour mixture into dry mix and toss until well combined.
  • 2. Spray inside of crockpot with Pam and add nut mixture. Turn setting to low (note- if your crockpot cooks at a higher temperature, you may want to use the warm setting, I have two crockpots and they each cook differently!).
  • 3. Cook with the lid on 3-4 hours, stirring every 20-30 minutes. If your crockpot cooks at a higher temperature, it may cook faster so keep an eye on it and use your nose to make sure it doesn't burn! In the last hour, add the water and stir very well. Continue stirring every 15 minutes for at least 45 minutes to ensure they are well coated. Line a baking sheet with parchment paper and spread the mixture flat to cool and harden. Make sure there are not large clumps. Once they harden, break apart and store in an airtight container. Enjoy!
