BAKED BRIE WITH PECANS
Toasted pecans and maple syrup complement the creamy Brie in this hors d'oeuvre. For the best texture, let the cheese cool before topping it with the syrup mixture.This recipe is by Everyday Food reader Kathy Quinn of Montclair, New Jersey.

Steps:
- Preheat oven to 350 degrees. Place cheese on a rimmed baking sheet; bake until softened, 15 to 20 minutes. Transfer to a serving plate; cool about 20 minutes.
- While cheese cools, place nuts on a clean baking sheet; bake until toasted and fragrant, 7 to 10 minutes. Sprinkle nuts over cheese.
- In a small saucepan, combine sugar and maple syrup. Bring to a boil over medium heat; simmer until foamy, 1 to 2 minutes. Drizzle warm sauce over slightly cooled cheese and nuts; serve with crackers or baguette.

Steps:
- Heat oven to 350F degrees.
- Spray a small ovenproof dish with nonstick cooking spray.
- Place the Brie in this dish.
- Spread sour cream over brie as though frosting a cake.
- Sprinkle top with brown sugar, then with pecans.
- Dot top with butter.
- Bake until cheese is very soft to the touch, 15-18 minutes.
- Increase heat to 425F and bake 5 minutes longer.
- Brie will be starting to melt on the bottom and the sugar will be bubbling on the top.
- Serve with bread, sliced apples and crackers.
BAKED BRIE WITH CANDIED PECANS AND BACON
Top gooey baked brie with dried cherries, pecans, bacon and thyme.

Steps:
- Preheat the oven to 325 degrees F.
- Cook the bacon in a large skillet over medium heat until golden and crisp, 4 to 5 minutes per side. Transfer to paper towels to drain and cool and then finely chop.
- Mix the bacon, cherries, pecans, vinegar, rosemary, thyme, pinch of salt and a few grinds of pepper in a small bowl.
- Trim off the top rind of the Brie, leaving a 1/4-inch border around the edges and put in a small baking dish. Top with the pecan mixture, letting it mound and fall into the dish around the Brie. Cover the dish with foil, and bake until the cheese is warm and gooey, 30 to 35 minutes.
- Serve warm with bread and/or crackers.
