My family's favorite vegetable. They are great for the holidays, too!

Number Of Ingredients 5

1 pound carrots, cut into 2 inch pieces
2 tablespoons butter, diced
ΒΌ cup packed brown sugar
1 pinch salt
1 pinch ground black pepper

Steps:

  • Place carrots in a pot of salted water. Bring water to a boil, reduce heat to a high simmer and cook about 20 to 30 minutes. Do not cook the carrots to a mushy stage!
  • Drain the carrots, reduce the heat to its lowest possible setting and return the carrots to the pan. Stir in butter, brown sugar, salt and pepper. Cook for about 3 to 5 minutes, until sugar is bubbly. Serve hot!

This is a good recipe. I have added ground cinnamon and ground cloves to this before. I especially like to add the ground cloves when I serve these with ham. Just 1/4 tsp. of either when you add it in. I bet allspice or nutmeg would be good in this too. You can use fresh carrots in this dish. Just adjust the cooking time accordingly.

2 (16 ounce) packages frozen sliced carrots
3/4 cup pancake syrup
1/4 cup brown sugar, packed
1 cup walnuts, chopped

Steps:

  • Combine all ingredients in crockpot. Stir well. Cover and cook on HIGH for 5 hours.
  • NOTE: Cooking times do vary by crockpot used. Use your judgement if you think it is done sooner.
  • ENJOY!

Smokey Candied Carrots with Walnut Gremolata image

1 1/2 pounds baby carrots, cleaned, washed and trimmed
1/3 cup smoked sugar or smoked maple syrup
3/4 teaspoon kosher salt
1 tablespoon unsalted butter, at room temperature
1 cup toasted walnuts, chopped
1 cup Italian parsley leaves, chopped
2 teaspoons thyme leaves, chopped
1 teaspoon grated lemon zest
1/4 teaspoon kosher salt

Steps:

  • For the carrots: Place the carrots in a 10-inch saute pan. Add 1 1/2 cups water, the sugar or maple syrup and salt. Place the pan over high heat and bring to a boil, stirring occasionally with a rubber spatula to dissolve the sugar. Reduce the heat to medium-high and continue to simmer vigorously, stirring occasionally, until the liquid has thickened to a syrup and the carrots are fork tender, about 12 minutes. Stir in the butter. Remove from the heat and cool for 5 minutes before serving.
  • For the gremolata: Meanwhile, mix together the walnuts, parsley, thyme, lemon zest and salt in a medium bowl.
  • To serve, gently toss the carrots to coat them in the thickened syrup. Spoon them onto a platter and sprinkle with half of the gremolata. Serve the remaining gremolata on the side.

3 cups fresh carrots, sliced
1 1/2 tablespoons butter
1/3 cup walnuts, chopped
2 tablespoons honey
1/8 teaspoon ground black pepper (to taste)
1/8 teaspoon cinnamon
salt
1 -2 tablespoon lemon juice (optional)

Steps:

  • Steam carrots until tender about 15 minutes.
  • In a small skillet, heat butter and saute walnuts until lightly browned about 3 - 5 minutes. Add honey, seasonings and lemon juice if using. Stir well then add steamed carrots tossing gently to coat.
  • Serve hot.
