CANDIED ACORN SQUASH
Delicious side dish! No longer than 15 minutes prep AND cooking time. Buttery and sweet. Almost as good as dessert! A must-try!

Steps:
- Place both halves of the squash cut side up on a microwave-safe plate or dish. Put 2 tablespoons of butter, and 2 tablespoons of brown sugar into the cavity of each half.
- Cook for 8 to 10 minutes in the microwave on full power. Rotate the squash a couple of times to ensure even cooking. When the flesh is soft, scoop out soft flesh with the sugar and butter, and place it in a bowl. Mash it a little to blend the ingredients. Serve in a bowl, or your could even serve it in the shells.

SPICED ACORN SQUASH

- In a small bowl, mix brown sugar, cinnamon and nutmeg; spoon into squash halves. Sprinkle with raisins. Top each with 1 tablespoon butter. Wrap each half individually in heavy-duty foil, sealing tightly., Pour water into a 5-qt. slow cooker. Place squash in slow cooker, cut side up (packets may be stacked). Cook, covered, on high 3-1/2 to 4 hours or until squash is tender. Open foil carefully to allow steam to escape.

ACORN SQUASH RINGS
Steps:
- Slice the squash into one and one half inch rings. Remove seeds and strings and place on buttered nonstick baking sheet. Top with remaining butter, season with salt and pepper and bake at 375 degrees for approximately 25 minutes, turning once, so that the squash is cooked through and still retains its shape. Serve with cranberry relish.

- Here's a great way to get your kids to eat squash! Just pierce the stem end of a spaghetti squash with a knife or metal skewer, and place on roasting sheet. Roast at 350 for about an hour, open, and create strands by pulling away the flesh with your fork. Serve with butter and Parmesan cheese or tomato sauce.

- Cut squash in half lengthwise. Scoop out and discard seeds. Cut squash crosswise into 1-inch slices.
- Arrange slices slightly overlapping, in a buttered 13 x 9 x 2-inch baking dish. Bake, covered, in a 375 degrees oven for 35 minutes or until almost tender.
- Combine melted butter, brown sugar, syrup and cinnamon.
- Spoon over squash.
- Continue baking, uncovered, 15 minutes or until squash is tender, basting occasionally with syrup mixture from bottom of pan.

CANDIED ACORN SQUASH RINGS
Acorn squash is the only winter squash I have ever made. I guess I should try other ones. But, this one is plenty good! Choose from two toppings. Original recipes from Better Homes and Gardens New Cookbook 1978. Tweaked by me.

Steps:
- 1. Rinse whole squash; dry. Prick skin with a fork, all over. Place in large baking dish, and cook in microwave oven for about 10 minutes, or until soft. Let stand 5 minutes.
- 2. Preheat stove oven to 350°F. Cut acorn squash in half, remove seeds and any stringy material from the insides. Discard seeds & ends of squash. Slice into 1 inch slices.
- 3. Return slices to baking dish. Season very lightly with salt. Combine brown sugar and butter. Spread on squash slices.
- 4. Bake, uncovered, in oven for 15-20 minutes, basting occasionally.
- 5. VARIATION: Mix maple flavored syrup, spices, and butter, (no brown sugar), together in a glass measuring cup. Microwave for 15 seconds. Pour over squash slices. Follow step #4.
