Number Of Ingredients 9

1 cup all-purpose flour
3/4 teaspoon salt, divided
1/2 cup plus 3 tablespoons cold butter, divided
1/2 cup 4% small-curd cottage cheese
3 large sweet onions, sliced (about 6 cups)
4 ounces Canadian bacon, diced
1/4 teaspoon pepper
3 large eggs, lightly beaten
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a small bowl, mix flour and 1/4 teaspoon salt; cut in 1/2 cup butter until crumbly. Gradually add cottage cheese, tossing with a fork until dough holds together when pressed. Shape into a disk., On a floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge., In large skillet, heat remaining butter over medium heat. Add onions; cook and stir until golden brown. Stir in Canadian bacon, pepper and remaining salt. Remove from heat; add eggs and cheddar cheese. Pour into crust., Bake on a lower oven rack 40-45 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

Nonstick vegetable oil spray
1 1/4 pounds russet potatoes, peeled, sliced into 1/4-inch rounds
1 tablespoon olive oil
1 cup chopped onion
1 cup chopped red bell pepper
1/2 teaspoon dried thyme
1 cup diced Canadian bacon
8 large eggs
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 ounces smoked cheddar cheese, grated (about 1 cup packed)

Steps:

  • Preheat oven to 350°F. Spray 10-inch glass pie dish with vegetable oil spray. Steam potato rounds until just tender, about 6 minutes. Transfer to rack and cool. Line prepared pie dish with enough potato rounds to cover, overlapping slightly (reserve any remaining potatoes for another use).
  • Heat olive oil in heavy large saucepan over medium-high heat. Add onion, red bell pepper and thyme and sauté 5 minutes. Add Canadian bacon; sauté until heated through, about 1 minute. Spoon bacon mixture over potatoes in pie dish.
  • Whisk eggs, salt and pepper in large bowl to blend. Mix in cheese. Pour egg mixture over bacon mixture in dish. Bake quiche until set in center, about 35 minutes. Cool 20 minutes. Cut into wedges. Serve warm or at room temperature.

4 large eggs beaten
1 c of milk or heavy cream
dash(es) salt and pepper
1 tsp ground mustard
10 oz washed and dried spinach
10 slice canadian bacon
1/2 small onion diced
1 small can of mushrooms 4 oz drained
1 pkg refrigerated pie crust
1 1/3 c grated mozzarella cheese or sharp cheddar

Steps:

  • 1. Pre heat oven to 375* Place pie crust in an 9 inch pie pan.
  • 2. In a large skillet melt butter over a medium heat, adding onions,garlic till golden brown,
  • 3. Chop clean and washed spinach
  • 4. Add Spinach and the mushrooms, cook til sauteed, add salt and pepper,scoop into pie crust.
  • 5. Chop Canadian Bacon into hunks and sauteed in 4 tabs of butter, add on top of Spinach and mushrooms.
  • 6. Grate cheese and spread over entire fillings
  • 7. Beat four eggs and milk, add 1 tsp of ground mustard. Pour over pie crust, and bake for 45 mins at 375*
  • 8. Remove from oven and let rest for 10 mins before serving! Add a dollop of sour cream and or salsa (optional) And Enjoy!!!!

10 slices Canadian bacon (about 1 oz. each)
8 eggs, beaten
1/2 cup mayonnaise
1/2 teaspoon white pepper
1/2 cup parmesan cheese, grated
4 1/2 ounces brie cheese, cubed
1/2 teaspoon dried Italian herb seasoning

Steps:

  • Place Canadian bacon slices, slightly overlapping, around the side and the bottom of a 9 inch deep dish pie plate, coated with cooking spray.
  • Set aside.
  • Combine eggs, mayonnaise, pepper, Parmesan cheese, Brie, and Italian herb seasonings.
  • Pour into pie plate over bacon and bake at 375ºF for 30 minutes.
  • After 15 minutes of baking, place foil over bacon to protect it from overcooking and drying out.

vegetable oil cooking spray
6 slices bread, your choice
1 cup diced Canadian bacon or 1 cup lean ham
1/2 cup red bell pepper, finely diced
2 green onions, thinly sliced
1 cup low-fat milk
1/2 cup egg substitute (or 2 more eggs)
2 whole eggs
1/2 cup grated parmesan cheese
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350°F.
  • Spray a 9-inch pie dish with vegetable oil spray.
  • With a rolling pin, flatten each slice of bread on a cutting board or flat surface.
  • Cut 5 slices in half vertically (from top crust to bottom crust).
  • Cut a 3-inch circle from the remaining slice with a round cookie cutter or a knife (this will go in the center of the crust).
  • Place slices of bread in the bottom of the pie dish, slightly overlapping each piece to form a crust, gently pressing in the bottom and partially up the side of the pie dish.
  • Place the reserved bread circle in the center and gently press down into the other slices of bread.
  • Bake for 10 minutes, or until bread is toasted and golden brown. Remove from oven and place on a cooling rack.
  • Scatter Canadian bacon evenly in the bottom of the crust. Top evenly with red bell pepper and green onions.
  • In a medium bowl, whisk together the milk, egg substitute, eggs, Parmesan cheese, oregano, salt, and pepper, until blended.
  • Carefully pour egg mixture over the meat and vegetable filling and place the pie dish on a baking sheet.
  • Bake for 35 to 40 minutes, or until center is set. Remove from oven and let mixture rest 5 minutes before cutting into wedges.

7 tablespoons cold unsalted butter
1/2 cup 4% large curd cottage cheese
3/4 cup flour
1 tablespoon flour
1 1/2 teaspoons unsalted butter
1/2 cup onion, diced
1/2 garlic clove, minced
1 cup cheddar cheese, shredded
4 ounces Canadian bacon, diced
6 eggs
1/4 teaspoon black pepper
1 dash cayenne pepper

Steps:

  • In mixing bowl, use beaters to cream butter, add cottage cheese and beat with mixer, using spoon gradually stir in flour.
  • Form into disk, cover with plastic wrap, and chill for at least 1 hour or up to two days. I cut plastic wrap big enough so that I can later roll pastry out on it so clean up is easy.
  • Roll out pastry to fit a 9 inch pie plate.
  • Transfer pastry to greased pie pan.
  • Trim pastry to 1/2 inch beyond edge of plate; flute edges.
  • In skillet, sauté onions in remaining butter (1 1/2 t.) until golden brown. It is important to get the onions done to your preference because the baking steps do not cook it much more than this step does.
  • Remove skillet from heat.
  • Stir in garlic and set aside.
  • Put cheese at bottom of pastry, top with Canadian bacon.
  • in large bowl, add egg and peppers, lightly beat, stir in onion mixture from skillet.
  • Pour into pastry shell.
  • At this point, either wrap well and freeze or bake at 350 degrees for 40 to 45 minutes or until a knife inserted near the center comes out clean. (After 25 minutes, I peek to see if crust is browned enough and cover just the crust with foil so it is browned just enough. I hate real dark crust. It is not easy to do but worth it IMO.) Let sit for 10 minutes before cutting.
  • TO USE FROZEN QUICHE: Remove frozen quiche from freezer 30 minutes before baking. Put rack in middle. Preheat oven to 350 degrees. Place pie on a baking sheet. Bake at 350 degrees for 40 minutes, then cover with foil and move to lowest shelf and bake another 25 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

1 cup frozen country-style diced potatoes, thawed

1 1/2 cups shredded Havarti cheese (6 ounces)
4 eggs
1 cup milk
1/2 teaspoon dried marjoram leaves

  • Heat oven to 375°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie. Bake about 8 minutes or until light golden brown.
