A tasty omelet that we have enjoyed in our house. Make sure that you use a skillet that can be used on the stove top as well as the oven, as the omelet finishes up in the oven.

4 eggs
2/3 cup cheddar cheese, divided
1 tablespoon butter
1 medium potato, cooked, peeled and diced
1 cup red bell pepper, diced
1/2 cup onion, diced
1/2 cup Canadian bacon, diced
2 garlic cloves, minced
1/4 cup sour cream

Steps:

  • Combine eggs and 1/3 cup of the cheese.
  • Melt butter in a skillet.
  • Add potato, bell pepper, onion, bacon and garlic then saute 5 minutes.
  • Stir in egg mixture and spread evenly in bottom of skillet.
  • Cook over medium heat for 5 minutes or until almost set.
  • Place skillet in preheated 450 degree oven for 5 minutes.
  • Sprinkle with remaining cheese then bake until cheese melts.
  • Cut into wedges and serve with a dollop of sour cream.

This omelet is based on a recipe I saw in Redbook magazine that was a take on IHOP's Country Omelet. This version is now mine, lol. Theoretically, this is one serving but it served the two of us just fine.

2 large eggs
2 large egg whites
1/2 cup chopped Canadian bacon (or bacon bits or sausage crumbles)
1 tablespoon cilantro, chopped
1/4 teaspoon salt
1 dash pepper
2 tablespoons canola oil
1/4 cup chopped green onion
1 jalapeno pepper, seeded and chopped
1/2 cup diced potato (like frozen Southern style)
1 teaspoon butter
1/4 cup shredded cheddar cheese
sour cream
pico de gallo

Steps:

  • Whisk together eggs, egg whites, canadian bacon, cilantro, salt and pepper. Set aside.
  • In non-stick skillet, add oil and saute onion for 1 minute then add potatoes and cook over medium heat until browned, about 5 minutes. Remove potatoes to a plate and set aside.
  • Melt butter in the skillet and pour in egg mixture. The eggs should begin to set around the edges almost immediately. Lift edges and tilt skillet to allow uncooked egg to roll under cooked eggs. Continue until eggs are set.
  • Sprinkle eggs with cheese and add potatoes to top of omelet then fold eggs over to enclose cheese and potatoes. Remove to a plate.
  • At this point, I cut the omelet in half and place on two plates. I sprinkle a bit more cheese over top of omelet, add a dollop of sour cream and a sprinkling of pico de gallo.
  • NOTE: I recently read a tip to cut the heat in jalapinos without sacrificing the flavor -- After seeding the peppers place in abowl of hot tap water for 10-20 minutes to soak out pepper oils which hold the heat of the peppers.

1 tablespoon sour cream
1 tablespoon butter
2 slices Canadian bacon, diced
1/8 cup shredded cheddar cheese
salt and pepper

Steps:

  • Whisk eggs and cream together.
  • Melt butter in a large skillet. Pour in eggs hot, lifting edges into center allowing uncooked egg to reach pan.
  • When egg is set add the ham and cheese to one half of the omelet. Fold over other half cook for 15-25 seconds and invert onto a plate.

1 lb Canadian bacon, cut into 24 1/8 inch slices
1/4 cup maple syrup
1/4 cup butter
18 eggs
1 cup sour cream
1 cup milk
2 teaspoons salt
1/3 cup chopped scallion
1/2 bunch chopped fresh parsley

Steps:

  • Prepare Canadian bacon in the oven by pouring the syrup over the bacon and broiling until desired doneness, flipping once.
  • Heat oven to 325° F degrees.
  • Heat the butter in a 13 x 9 x 2 inch dish until melted.
  • Tilt dish to coat the bottom.
  • Beat eggs, sour cream, milk and salt in a large bowl until blended.
  • Stir in the chopped scallions.
  • Pour into the baking dish.
  • Bake omelet mixture about 35 minutes or until the eggs are set but moist.
  • Arrange the omelet on a large platter and top with the broiled bacon.
  • Sprinkle with parsley.

1 lb Canadian-style bacon, cut into 24 (1/8-inch) slices
1/4 cup maple-flavored syrup
1/4 cup butter or margarine
18 eggs
1 cup sour cream
1 cup milk
2 teaspoons salt
4 medium green onions, chopped (1/4 cup)
Chopped fresh parsley

Steps:

  • Heat oven to 325°F. Place bacon slices on sheet of heavy-duty foil. Pour syrup over bacon. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • In 13x9-inch (3-quart) glass baking dish, melt butter in oven. Tilt dish so butter coats bottom. In large bowl, beat eggs, sour cream, milk and salt with wire whisk until blended. Stir in onions. Pour into baking dish.
  • Bake omelet and bacon packet about 35 minutes or until eggs are set but moist and bacon is hot. Arrange bacon on omelet. Sprinkle with parsley.

We took the classic diner breakfast of an omelet and hash browns and combined them into a no-fuss dish that's both hearty and satisfying. Frozen shredded hash browns are browned in a skillet until golden and crisp, then cooked directly with the eggs for crusty potatoes in every bite. We also loaded the inside of the omelet with sautéed bell peppers, Canadian bacon, tomatoes and melty cheese and topped the whole thing with avocado slices for the ultimate diner-style meal you can easily make at home.

3 tablespoons olive oil
1/4 cup finely diced green bell peppers
1/4 cup finely diced Canadian bacon
Kosher salt and freshly ground black pepper
2 cups frozen shredded hash browns (about 5 ounces; do not thaw)
2 large eggs
2 slices American cheese
1/4 cup finely diced tomatoes
1 tablespoon thinly sliced scallions
1/2 ripe avocado, thinly sliced

Steps:

  • Heat 1 tablespoon of the olive oil in a medium nonstick skillet over medium-high heat. Add the bell peppers, Canadian bacon, a pinch of salt and a couple grinds of black pepper. Cook, stirring occasionally, until the peppers are just tender and the bacon begins to brown in spots, 3 to 4 minutes. Use a slotted spoon to transfer the veggies to a small bowl, then return the skillet to the heat.
  • Add 1 tablespoon of the olive oil to the same skillet, swirling the pan to evenly coat. Add the shredded hash browns in a single layer, pressing them down with the back of a heatproof spatula. Cook, undisturbed, until the bottom is golden brown and crispy, about 8 minutes. Flip the hash browns over, add the remaining 1 tablespoon olive oil around the edge of the skillet, then continue to cook until the other side is golden, 4 to 5 minutes more.
  • Meanwhile, whisk the eggs with a pinch of salt and a couple grinds of black pepper in a small bowl until thoroughly combined.
  • Reduce the heat to medium-low. Break apart the hash browns slightly, then pour the eggs over top in an even layer. Cook until the eggs are just set, about 1 minute. Lay the cheese on one side of the omelet, then sprinkle over the reserved peppers and bacon, the tomatoes and scallions. Continue to cook until the cheese is just melted, 30 seconds to 1 minute. Fold the omelet in half over the filling like a book, then slide onto a plate. Top with the sliced avocado and serve immediately.
