Easy Chicken and Bacon Pasta Bake image

This Easy Chicken and Bacon Pasta Bake recipe is a delicious and healthy dinner for all the family. The simple creamy sauce is packed with vegetables and bacon and topped with cheese.

300 g Pasta
1 tsp Olive oil
200 g Bacon (Chopped into small pieces)
300 g Chicken breast chunks ((About 2 large chicken breasts))
3 Cloves Garlic (Peeled and crushed)
1 Large onion (Peeled and chopped into chunks)
200 g Courgettes (Chopped into small chunks)
500 ml Milk
30 g Cornflour
Salt and freshly ground black pepper
100 g Cheese (See notes)

Steps:

  • Cook the pasta in a pan of boiling water as instructed on the packet (usually about 10 minutes). Remove the pasta from the water and drain about 2 minutes BEFORE the end of the cooking time.
  • Meanwhile, heat the olive oil in a large pan. I like to use a wok as it's good for frying and cooking the sauce in.
  • Fry off the bacon for 5 mins, then add the chicken and fry for about 5 minutes until coloured all over.
  • Add the onions, garlic and courgettes and cook until just softened and the chicken is cooked through. About 10 minutes.
  • While everything else is cooking, put the cornflour into a mug and mix with a small amount of the measured milk until it forms a paste.
  • Put the remaining milk into a sauce pan over a medium heat. Pour in the cornflour 'slurry' and whisk for about 5 minutes until it thickens, whisking often.
  • Add half of the cheese to the white sauce, plus salt and pepper, and whisk until it's thick.
  • Preheat the grill.
  • Add the drained, cooked pasta to the bacon, chicken and vegetables, plus the sauce, and sprinkle the cheese on top.
  • Put under the grill for about 10 minutes until crispy and bubbling.

Cheesy Pasta Bake With Chicken And Bacon - a family favourite (and it makes great leftovers too!).

400 g dried pasta shapes ((I used rigatoni))
1 tbsp vegetable oil
3 large chicken breasts (cut into bitesize chunks)
1 large onion (peeled and chopped)
1 red bell pepper (de-seeded and chopped)
1 yellow bell pepper (de-seeded and chopped)
pinch of salt and pepper
2 cloves garlic (peeled and minced)
1 tbsp tomato puree
½ tsp dried oregano
½ tsp dried thyme
800 g tinned chopped tomatoes
120 ml double (heavy) cream
100 g fresh baby spinach
6 rashers cooked bacon (chopped)
100 g strong cheddar cheese (grated)
100 g mozzarella (grated)
Small bunch parsley (roughly torn)

Steps:

  • Preheat the oven to 190c/375f. Boil a large pan of water and cook the pasta for 1 minute less than recommended on the pack. Drain.
  • Whilst the pasta is cooking, heat the oil on a medium heat, in a large frying pan. Add the chicken, and cook until just sealed - about 5 minutes.
  • Add the onion and cook for a further 3-4 minutes until the onion is softened.
  • Add the chopped peppers, salt, pepper, garlic, tomato puree, oregano and thyme. Stir and cook for 2-3 minutes.
  • Stir in the tinned tomatoes and cream, bring to a gentle bubble, then add the pasta, spinach and cooked bacon. Stir everything together, then transfer to a large baking dish.
  • Top with the cheddar and mozzarella, and place in the oven for 20-25 minutes, until the cheese is golden brown.
  • Take out of the oven and top with parsley before serving.

nonstick cooking spray
1 lb chicken breast, diced
1 medium onion, diced
3 cloves garlic, minced
1 green pepper, chopped
2 zucchini, chopped
2 (15 ounce) cans tomatoes seasoned with basil garlic & oregano
1 (6 ounce) can tomato paste
1/4-1/2 teaspoon crushed red pepper flakes
1 (15 ounce) container fat-free ricotta cheese
1 (6 ounce) package Canadian bacon
1 cup light mozzarella cheese
2 tablespoons parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta according to package directions without added fat or salt.
  • In a large skillet sprayed with nonstick cooking spray sauté chicken, onion, garlic, green pepper for 10-15 minutes.
  • Add zucchini, tomatoes, tomato paste and red pepper.
  • Cover and simmer 10-15 minutes, stirring frequently.
  • In a prepared 9-x 13-inch baking dish layer pasta, ricotta cheese, Canadian bacon and sauce.
  • Sprinkle with mozzarella and Parmesan cheese.
  • Bake uncovered 15-20 minutes or until cheese is melted and dish is warmed throughout.

1 (16 ounce) package farfalle (bow tie) pasta
½ cup butter
1 (8 ounce) package cream cheese, cubed
2 tablespoons ranch dressing mix
2 cups milk
1 (8 ounce) package shredded Monterey Jack cheese
8 slices cooked bacon, divided
2 cooked chicken breasts, shredded
1 cup shredded Cheddar Jack cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13 baking dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • Meanwhile, melt butter in a saucepan over medium heat. Add cream cheese and ranch dressing mix; whisk until smooth. Slowly whisk in milk. Stir in Monterey Jack cheese; cook until cheese has melted and sauce has thickened, 5 to 10 minutes. Crumble 6 slices bacon and stir into sauce.
  • Combine cooked pasta and shredded chicken in a large bowl. Pour sauce on top and mix until well combined. Transfer to the prepared baking dish. Top with Cheddar Jack cheese and crumble remaining 2 slices of bacon on top.
  • Bake in the preheated oven until cheese has melted, about 20 minutes.
