If you've ever been to the California Pizza kitchen and tried this pizza, you'll never want to go back to the greasy East Coast style...

10 ounces boneless skinless chicken breasts, cut into 3/4-inch cubes
1 tablespoon olive oil
2 tablespoons favorite barbecue sauce (we use a spicy-sweet sauce)
bbq chicken pizza dough
semolina or flour, for handling
1/2 cup favorite barbecue sauce
2 tablespoons shredded smoked gouda cheese
2 cups shredded mozzarella cheese
1/4 small red onion, sliced into 1/8-inch pieces
2 tablespoons chopped fresh cilantro

Steps:

  • To make BBQ Chicken: In a large frying pan, cook the chicken in olive oil over medium-high heat until just cooked, 5 to 6 minutes. Do not overcook. Set aside in the refrigerator until chilled through.
  • Once chilled, coat the chicken with 2 tablespoons BBQ sauce; set aside in the refrigerator.
  • To make the pizza: Place the pizza stone in the center of the oven and preheat to 500 degrees F for one hour before cooking pizzas.
  • Use a large spoon to spread ¼ cup BBQ sauce evenly over the surface of the prepared dough within the rim. Sprinkle 1 tablespoon smoked Gouda cheese over the sauce. Cover with ¾ cup shredded Mozzarella. Distribute half the chicken pieces evenly over the cheese (approximately 18 pieces). Place approximately 18 to 20 pieces of red onion over the surface. Sprinkle an additional ¼ cup Mozzarella over the top of the pizza.
  • Transfer the pizza to the oven; bake until the crust is crisp and golden and the cheese at the center is bubbly, 8 to 10 minutes. When the pizza is cooked, carefully remove it from the oven; sprinkle 1 tablespoon cilantro over the hot surface. Slice.

Steps:

  • 1. HEAT oven to 400 degrees F.
  • 2. COOK and stir chicken and vegetables in large skillet sprayed with cooking spray on medium-high heat 4 to 5 min. or until chicken is done.
  • 3. SPREAD pizza crust with barbecue sauce; top with chicken mixture and cheese.

2 tablespoons low-calorie barbecue sauce (I used Walden Farms Calorie Free BBQ Sauce)
1 lb pizza dough (double par baked recipe of Marsha's Whole Wheat Pizza worked for me)
1/2 cup low-calorie barbecue sauce
2 cups shredded lowfat mozzarella cheese
1/4 small red onion, sliced into 1/8-inch pieces
2 tablespoons chopped fresh cilantro

Steps:

  • Pre heat broiler and spray a cookie sheet with PAM and scatter chicken cubes on the greased sheet and broil until cooked fully. Place chicken in fridge until chilled then toss in 2 tbs BBQ sauce.
  • To make the pizzas place a pizza stone in the center of the oven and preheat to 500 degrees F for one hour before cooking pizzas.
  • spoon 1/4 cup low cal BBQ sauce evenly over each prepared dough.

A family favorite! I often make it to freeze in portions for my family to take to work (reheats easily in a microwave). I generally make this as low-fat as possible using skim milk, low-fat cheeses, tortillas & soups.

4 whole chicken breasts (skin removed)
1 dozen flour tortilla
1 (10 3/4 ounce) can cream of mushroom soup
1 (10 3/4 ounce) can cream of chicken soup
1 small onion, chopped
1 (15 ounce) can chili without beans
1/2 cup milk
3/4 cup green chili salsa
1/2 lb grated sharp cheddar cheese
1/2 lb grated monterey jack cheese

Steps:

  • Microwave (or otherwise cook) chicken until tender.
  • Bone and lay in chunks in a greased large shallow baking dish.
  • Break up 1 dozen flour tortillas and lay them on top of the chicken.
  • Mix together the soups, onion, chili, milk and salsa.
  • Spread this mixture evenly over the top of the chicken and tortillas.
  • Sprinkle both cheeses on top of the casserole.
  • You can freeze the casserole at this point if you wish.
  • Bake the thawed casserole at 350F for 45 minutes.
  • This also freezes well after it has been cooked.

This recipe comes from the American Diabetes Assoc., so you know that in addition to having a to die for taste - it's good for you.

1 (3 lb) chicken, cut up into 8 pieces
2 teaspoons olive oil
1/4 cup chopped fresh basil or 2 teaspoons dried basil
1 tablespoon chopped fresh oregano or 1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
40 garlic cloves, separated, peeled
4 celery ribs, cut into 1 inch pieces
1 cup chopped onion
1/4 cup chopped fresh parsley
3/4 cup dry white wine
2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 375°F.
  • Prepare a medium baking dish with olive oil flavored nonstick pan spray.

1 (3 lb) whole chickens, cut up
2 tablespoons olive oil
2 teaspoons garlic, minced
2 teaspoons lemon zest
4 tablespoons lemon juice
1 tablespoon honey
1/4 teaspoon kosher salt
1/4 teaspoon pepper
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1 pinch red pepper flakes

Steps:

  • Cut off all excess fat from chicken. Rub 1 Tablespoon oil onto sides and bottom of a baking dish. Rub garlic onto chicken; place skin side down in baking dish. Sprinkle with lemon rind. Combine remaining oil, lemon juice and honey. Pour over the chicken. Sprinkle with salt, pepper, oregano, thyme and red pepper. Bake at 400* F. for 30 minutes. Turn chicken and bake another 20 minutes. Baste the chicken during the last 20 minutes.
