GRILLED TURKEY BREAST WITH VINEGAR AND CRACKED PEPPER



Grilled Turkey Breast with Vinegar and Cracked Pepper image

2 1/4 pounds raw turkey breast, cut into thin scallops
Salt and freshly ground black pepper
Olive oil for brushing
7 1/2 tablespoons unsalted butter, cold
2 medium red onions, diced
1 cup white vinegar
2 cups turkey or chicken stock or canned broth
1 tablespoon cracked black pepper

Steps:

  • Cover the turkey slices with plastic wrap and pound to flatten. Sprinkle all over with salt and pepper, brush lightly with olive oil and reserve. Preheat the grill or broiler. Melt 3 tablespoons of the butter in a medium skillet over low heat. Cook the onions with 1 1/2 teaspoons salt, stirring and shaking the pan frequently, until the onions are golden, about 15 minutes. Pour in the vinegar, turn the heat up to high and reduce by half.
  • Thinly slice the remaining cold butter. Reduce the heat to low and whisk the butter into the sauce a little at a time. Remove from the heat. Stir in the cracked pepper. Grill or broil the turkey slices less than a minute per side. Serve over a bed of seared greens, if desired, with the sauce over all.

5 slices sun-dried tomato flat bread (such as Flatout brand)
5 ounces spicy honey mustard dressing
4 -5 cups fresh Baby Spinach
10 tablespoons shredded carrots
1 red pepper, sliced 1/8-inch thick
40 mild banana pepper rings
20 slices deli peppered turkey breast, deli thin
5 slices mozzarella cheese

Steps:

  • Spread dressing across one slice of Flatbread.
  • Layer spinach, carrots, red pepper, banana pepper, turkey and mozzarella.
  • Roll up tightly.
  • Slice into 1" pinwheels.
  • Serve.

This recipe is from the Muscle and Fitness Total Nutrition guide. I'm usually wary of recipes from these kinds of sources, but there are several excellent ones in this one. This is hands down the best turkey burger recipe I have found. The only change I will make next time is to saute the onions first. I am sensitive to them raw. Try this recipe. You'll be glad you did.

1 lb ground turkey
1/4 cup diced onion
1 tablespoon balsamic vinegar
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 whole roasted red peppers, halved (from water packed jar)
4 ounces part-skim mozzarella cheese, in 4 slices
4 multigrain hamburger buns
nonstick cooking spray

Steps:

  • If grilling, spray grill rack with cooking spray and fire it up.
  • If pan-frying like me, spray pan, but wait to heat it until almost ready to cook the patties.
  • Mix turkey, onion, vinegar, oregano, salt and black pepper in a bowl until combined; but try not to overwork the turkey, since too much handling will make it tough.
  • Form mixture into four patties.
  • Sear patties one minute per side, then turn down heat, or move to cooler part of grill.
  • Cook 3-5 minutes per side, or until center isn't pink anymore.
  • Top with roasted peppers and cheese, and keep on heat until cheese melts.
  • Transfer to buns, add preferred condiments and enjoy.

1/2 teaspoon active dry yeast
1/2 cup warm water (110° to 115°)
1 teaspoon olive oil
1/2 teaspoon salt
1/3 cup whole wheat flour
1 cup all-purpose flour
FILLING:
1 beef flank steak (1 pound)
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded lettuce
1/4 cup sliced ripe olives
2 tablespoons crumbled feta cheese

Steps:

  • In a small bowl, dissolve yeast in warm water. Add the oil, salt, whole wheat flour and 3/4 cup all-purpose flour; beat on medium speed for 3 minutes. Stir in enough remaining flour to form a firm dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a large bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 45 minutes., Punch dough down. Turn onto a lightly floured surface; divide into 4 portions. Roll each into an 8-in. circle., Heat a large nonstick skillet over medium heat; add a portion of dough. Cook for 30-60 seconds or until bubbles form on top. Turn and cook until the second side is golden brown. Remove and keep warm. Repeat with remaining dough, adding cooking spray as needed., Lightly oil the grill rack. Sprinkle steak with salt and pepper. Grill, covered, over medium-high heat or broil 4 in. from the heat for 6-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Let stand for 5 minutes before cutting steak thinly across the grain.
