California-Style Cauliflower Rice and Beans image

1 head cauliflower, cut into florets
2 tablespoons olive oil
1 onion, finely diced
2 cloves garlic, minced
1 red, orange or yellow bell pepper, seeded and diced
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon kosher salt
One 15-ounce can black beans, drained and rinsed
1 cup salsa
1/4 cup chopped cilantro

Steps:

  • Working in batches, add the cauliflower to a food processor and pulse until the mixture resembles rice. Set aside.
  • Heat a large skillet over medium heat. Add the oil and cook the onion and garlic, stirring often, for 2 minutes. Add the bell pepper and cook, stirring often, for 1 minute. Add the cauliflower rice, cumin, paprika, salt and black beans and cook, stirring occasionally, until the cauliflower is tender, about 3 minutes. Stir in the salsa and cook for 1 more minute. Stir in the cilantro and serve.

It contains lots of antioxidants, and not too many carbs! It works as a vegan main dish with the addition of a salad and some naan. It also works as a sub for rice with almost any type of meat. Bonus: Lefties are great, too!

2 tablespoons extra-virgin olive oil
½ cup chopped onion
½ cup julienned carrots
½ cup French-cut green beans
½ cup diced fresh mushrooms
¼ cup thinly sliced red bell pepper
1 pound frozen riced cauliflower
1 tablespoon minced fresh garlic
1 teaspoon ground turmeric
¼ teaspoon sweet paprika
⅛ teaspoon curry powder, or to taste
salt and ground black pepper to taste
2 tablespoons blanched slivered almonds
1 pinch chopped fresh parsley, or to taste

Steps:

  • Heat oil in a 12-inch nonstick skillet over medium heat. Add onion to the hot oil and saute for about 1 minute. Add carrots, green beans, mushrooms, and bell pepper. Cook and stir for 3 to 4 minutes.
  • Stir riced cauliflower, garlic, turmeric, paprika, curry powder, salt, and pepper into the skillet. Continue cooking and stirring over medium heat until vegetables reach desired texture, about 5 minutes.
  • Serve warm garnished with almonds and parsley.

2 pounds riced cauliflower
1 red bell pepper, sliced, or more to taste
1 small red onion, halved and sliced
¼ cup extra-virgin olive oil
4 cloves garlic, grated
1 ½ tablespoons fajita seasoning
2 teaspoons ground cumin
1 ½ teaspoons kosher salt
1 (15.5 ounce) can pinto beans, rinsed and drained
4 ounces crumbled cotija cheese
½ cup chopped fresh cilantro
½ cup pepitas (pumpkin seeds)
2 green onions, thinly sliced
1 lime, juiced

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Cover a baking sheet with aluminum foil, ensuring the foil goes up the sides of the sheet to catch all the juices.
  • Combine cauliflower, red bell pepper, red onion, olive oil, garlic, fajitas seasoning, cumin, and salt in a large bowl; stir until coated. Spread vegetable mixture onto the prepared baking sheet.
  • Roast in the preheated oven for 15 minutes; stir and continue roasting until tender and lightly browned, about 15 minutes more.
  • Top vegetable mixture with pinto beans, cotija cheese, cilantro, pepitas, green onions, and lime juice. Spoon into 4 serving bowls.
