BEEF OXTAIL STEW



Beef Oxtail Stew image

Rich, flavorful and hearty stew with beef oxtails simmered a long time on the stove.

Number Of Ingredients 14

5-6 pounds beef oxtails
1/2 cup flour
3 tablespoons oil (divided between batches of browning the oxtails)
1 cup red wine
1/3rd cup soy sauce
4 cloves minced garlic
1 15oz can stewed tomatoes (I find stewed tomatoes add more flavor than diced because there are extra spices added. )
1 15oz can tomato sauce or marinara sauce ((marinara sauce adds more flavor))
2 tablespoons tomato paste
1 tablespoon grated or finely minced ginger
1 1/2 tablespoon brown sugar
2 bay leaves
2 1/2 cups rough chopped carrots (about 4 large carrots, or 14oz)
2-3 medium russet potatoes, peeled and chunked potatoes (any type of potato should do)

Steps:

  • Wash and dry the oxtails with a paper towel. Salt and pepper them all over.
  • Dredge the oxtails with flour, and be sure to tap all the excess flour off.
  • Add 1 tablespoon of oil to the pot, and wait until the oil is hot. Then carefully place the first batch of oxtails in, one side up, with enough room for each one. Let them sit undisturbed for 1-3 minutes, until the side down is lightly browned. Then flip each of the oxtails to a different side and continue browning. Repeat until each side is browned. You may have to do 2 or 3 batches of oxtails. Use a tablespoon of oil for each new batch.
  • Set aside the oxtails in a bowl or plate.
  • Rough chop the onion and mince the garlic. Finely mince or grate the ginger.
  • Add the chopped onion, garlic, ginger, brown sugar, soy sauce, bay leaves, stewed tomatoes, tomato sauce, and wine to the same pot. Then add the oxtails back in. Fill the pot with water until the oxtails are mostly submerged, and give the pot a stir or two.
  • Bring the pot to a boil, then lower the heat to low and cover the pot. Simmer for 2 hours, until the oxtail is tender. Once in awhile, give the pot a stir and make sure the meat isn't sticking to the bottom of the pot. Simmer another 30 minutes if you want fall-off-the-bone texture.
  • Remove the bay leaves. Take the fat off the stew. It is best to wait until the stew cools so that the fat is easier to skim. You can also cool it in the fridge for 30 min to an hour and skim the fat.
  • Chop the carrots and potatoes into bite sized pieces.
  • Add the carrots and potatoes to the pot and give the pot a stir. Heat the pot up to boiling, then low-medium heat and simmer another 30-45 minutes, until the carrots/potatoes are cooked but not mushy. Careful again that the meat doesn't stick to the bottom of the pot. Once the veggies are just right, turn off the heat.
  • Serve with a big pot of rice!

12 ounces dried lima beans
4 pounds oxtails
2 large Vidalia onions, chopped
3 scallions, chopped
4 garlic cloves, smashed
1 bunch fresh thyme
2 tablespoons red pepper flakes
4 teaspoons hot paprika
2 bay leaves
2 tablespoons hot sauce
4 tablespoons gravy master
6 cups low-sodium beef broth
4 teaspoons tomato paste
2 tablespoons salt
Right rice, recipe follows
2 cups rice

Steps:

  • In a large bowl, cover lima beans with water, cover with a towel and soak overnight.
  • In a large pot, add oxtails, onions, scallions, garlic, thyme, red pepper, paprika, bay leaf, hot sauce, and gravy master and marinate at least 4 hours or overnight in the refrigerator, stirring occasionally.
  • Add enough water to just cover the oxtails and bring the mixture to a boil. Lower to a simmer, cover and cook 2 hours. Every 30 minutes for 2 hours add 2 cups of water or broth, alternating, as necessary, to keep oxtails covered with liquid.
  • At 2 hours, add the beans, tomato paste, and 2 more cups of beef broth and water, if needed. Bring to a boil then simmer uncovered 2 hours, skimming fat off top and stirring occasionally. In the last 1/2 hour of cook time, season with 2 tablespoons salt. Serve with rice.
  • Rinse rice 3 times to remove starch. Put rice in a medium saucepan. Fill saucepan with enough water to cover the rice by 1/2-inch or measure by placing your thumb tip on the rice and filling the pot with water until the water reaches the middle of your thumbnail. Bring rice to a simmer, cover and cook until tender and liquid is evaporated, about 15 minutes. Remove from heat and let rice stand another 5 minutes, covered.
  • Yield: 4 to 6 servings

3 to 4 pounds oxtail pieces
1/2 cup brandy
Juice of 3 limes
2 tablespoons extra-virgin olive oil
Kosher salt and black pepper
2 to 3 cups red wine
2 to 3 cups beef broth
3 tablespoons tomato paste
1 1/2 tablespoons garlic powder
1 tablespoon herbes de Provence
1 tablespoon Italian seasoning
1 tablespoon paprika
1 1/2 teaspoons lemon pepper
1/2 teaspoon ground cumin
1/2 teaspoon garlic pepper seasoning
1/2 teaspoon ground nutmeg
1/2 teaspoon dried sage
4 ribs celery, cut in 1-inch pieces
3 large carrots, cut in 1 1/2-inch pieces
3 large russet potatoes, peeled and cut in 1 1/2-inch pieces
1 tablespoon cornstarch

Steps:

  • Trim any excess fat from the oxtail pieces. Combine the oxtail with the brandy and lime juice in a large bowl and marinate for at least 2 hours and up to overnight in the refrigerator.
  • Preheat the oven to 350 degrees F. Remove the oxtail from the marinade, rub all over with the oil and season with salt and pepper. In a large heavy-bottomed pan, cook the oxtail in the oven, uncovered, until brown, about 30 minutes. Add the red wine and cook uncovered for 15 minutes more.
  • Combine the beef broth, tomato paste, garlic powder, herbes de Provence, Italian seasoning, paprika, lemon pepper, cumin, garlic pepper, nutmeg and sage in a bowl. Add to the oxtail and mix well. Cover and cook until the meat is almost tender, about 1 hour 30 minutes. Add the celery, carrots and potatoes and cook until the meat is fully tender and the vegetables are done, 15 to 20 minutes. Remove from the oven and skim any excess fat from the top using a flat wide-bottomed spoon.
  • Combine the cornstarch with 1 cup cold water in a small bowl, stirring until the cornstarch is fully dissolved. Stir the cornstarch into the stew and cook until thickened, 15 to 20 minutes. Season with salt and pepper to taste. Ladle into bowls and serve.

3 pounds beef oxtail, cut into pieces
1 ½ pounds russet potatoes, peeled and cut into chunks
4 carrots, peeled and cut into large chunks
3 stalks celery, cut into large chunks
1 onion, chopped
1 (15 ounce) can tomato sauce
1 cup beef broth
½ cup dry red wine
2 tablespoons chopped fresh parsley
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
½ teaspoon smoked paprika
1 (8 ounce) package sliced mushrooms
1 cup frozen peas
1 pinch salt and freshly ground black pepper to taste

Steps:

  • Heat oil in a large skillet over medium-high heat. Cook oxtail for 4 minutes. Flip and continue cooking until browned on all sides, about 4 minutes. Transfer oxtail to a slow cooker.
  • Add potatoes, carrots, celery, onion, tomato sauce, beef broth, red wine, parsley, Worcestershire sauce, thyme, and paprika.
  • Cook on Low for 7 hours. Add mushrooms and peas. Cook for 1 additional hour.
  • Ladle into bowls and season with salt and pepper.

2 pounds oxtails, trimmed
2 tablespoons olive oil
4 medium carrots, sliced (about 2 cups)
1 medium onion, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (15 ounces) beef broth
3 bay leaves
1 teaspoon salt
1 teaspoon dried oregano

Steps:

  • In a large skillet, brown oxtails in oil over medium heat. Remove from pan; place in a 5-qt. slow cooker. , Add carrots and onion to dripping, cook and stir until just softened, 3-5 minutes. Add garlic, cook 1 minute longer. Transfer vegetable mixture to slow cooker. Add tomatoes, broth, bay leaves, salt, oregano, thyme and pepper; stir to combine. , Cook, covered, on low 8 hours. 3 pounds beef oxtail
3 medium carrots, diced
2 stalks celery, diced
1 large onion, diced

3 tablespoons all-purpose flour
3 leaf (blank)s bay leaves

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Heat oil in a cast iron casserole dish over medium-high heat. Add oxtail and brown on all sides, about 10 minutes. Transfer oxtail to a plate.

6 cups water
1 (14 ounce) can beef broth (such as Swanson®)
1 large onion, chopped
2 cloves garlic, minced, or more to taste
½ teaspoon onion salt

6 medium unpeeled red potatoes, cubed
1 cup sliced carrots
1 cup sliced fresh mushrooms

1 pound onions, minced
1 ounce salt
1 ounce sugar
1/2-ounce garlic powder
1/4 cup ketchup
1/3 cup soy sauce
2 teaspoons liquid browning or soy sauce
1 teaspoon ground allspice
2 tomatoes, diced
1 bunch scallions, minced
2 cans butter beans, drained
Cornstarch mixed with a little cold water, if necessary

Steps:

  • Put the oxtails, onions, salt, sugar, garlic powder, ketchup, soy sauce, liquid browning, allspice, tomatoes and scallions in a 10- to 12-quart pot. Fill with enough water to cover everything. Bring to a boil, then reduce the heat to medium or medium-low and cook until tender, 2 hours. Add the beans and stir. Thicken with cornstarch if using.

6 pounds oxtail, cut into chunks
1/4 cup olive oil
4 cloves garlic sliced then mashed in salt to puree consistency
1 red onion chopped
1 cup red wine
3 cups crushed tomatoes with juice
Water, to cover
3 bay leaves
2 pounds carrots peeled and chopped into large chunks
6 pounds potatoes peeled and chopped into large chunks

Steps:

  • In a shallow bowl, add the flour. Season well with salt and pepper. Dredge the meat in the flour, shaking off any excess. In a large stock pot or Dutch oven over high heat, add the olive oil and heat. When the oil is hot, add the meat, and brown on all sides, about 3 minutes per side. When all of the meat is browned, remove the meat from the pan and set aside on a plate.
  • To the pot, add the garlic and red onion and sweat. Add the wine to the pot. Add the browned meat back into the pot and add the crushed tomatoes. Add enough water to cover the meat and add the bay leaves. Bring to a simmer and simmer over low heat for 2 1/2 hours.
  • Add the carrots and the potatoes and simmer for another 45 minutes. Remove from heat and serve.

3 -4 lbs oxtails, cut about 1-1/2 inches thick
1 tablespoon reduced sodium soy sauce
2 tablespoons oyster sauce
2 tablespoons vodka or 2 tablespoons dry sherry
3 medium onions, divided
3 garlic cloves, minced
2 whole bay leaves
1 teaspoon oregano leaves
2 cups beef broth, divided
1 1/2 cups celery, sliced
1 lb carrot, sliced 1/2 inch thick

Steps:

  • Place oxtails in a heavy soup kettle or dutch oven. Add soy sauce, oyster sauce, and liquor. Cover and marinate for one hour.
  • Cook covered over medium heat for 30 minutes to draw out juices.
  • Uncover. Bring to a boil and turn often till meat is browned and liquid is evaporated. Add garlic, bay leaves, oregano, and one onion, coarsely chopped, along with 1/4 cup beef broth. Cook and stir to deglaze pan.
  • Add remaining beef broth. Cover and simmer gently until meat is tender when piereced (about 3 hours).
  • Remove pan from heat. Strain broth into a large saucepan or bowl. Discard onion and herbs; set meat aside. When meat is cool, remove it from bones, cut in bite-sized pieces, and return to broth. Refrigerate several hours or overnight.
  • Skim off and discard fat. Bring broth to a boil. Add celery, carrot, and 2 medium onions, coarsely chopped. Reduce heat, cover, and simmer until veggies are tender (about 20 minutes).
