2 packages (16 ounces each) frozen corn, thawed
4 small zucchini, finely chopped
1 large sweet red pepper, finely chopped
2 cans (4 ounces each) chopped green chilies, drained
1 medium onion, chopped
2/3 cup olive oil
1/4 cup fresh lime juice
2 tablespoons cider vinegar
2 to 2-1/2 teaspoons ground cumin
1-1/2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon garlic salt

Steps:

  • In a large bowl, combine the corn, zucchini, red pepper, chilies and onion. , In a jar with a tight-fitting lid, combine remaining ingredients; shake well. Drizzle over salad and stir gently. Chill for several hours or overnight.

1 small onion, chopped (1/4 cup)
1/4 cup chopped green bell pepper
1 can (7 oz) whole kernel corn, drained
1 jar (2 oz) diced pimientos, drained
2 eggs, slightly beaten
2/3 cup Original Bisquick™ or Bisquick Heart Smart® mix
1 cup milk
1/8 teaspoon pepper
Sour cream, if desired

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Reserve 2 tablespoons of the crumbled cooked bacon for garnish. Sprinkle remaining bacon, the onion, bell pepper, corn and pimientos in pie plate.
  • In medium bowl, stir remaining ingredients except sour cream until blended. Pour into pie plate.
  • Bake uncovered about 30 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. Serve garnished with sour cream and reserved bacon.

1/4 cup lime juice
1 tablespoon Dijon mustard
1 garlic clove, minced

Steps:

  • In a large bowl, combine the corn and peas. In a nonstick skillet, cook cumin and oregano in oil over medium heat for 2 minutes. Pour over corn mixture; stir to coat evenly. 4 cups yellow cornmeal
2 tablespoons baking powder plus 2 tsp baking powder
2 teaspoons salt
4 eggs
4 cups milk
1 cup vegetable oil
4 lbs bulk pork sausage
5 cups water
8 cups sliced celery
2 medium green peppers, chopped
2 tablespoons dried minced garlic plus 1 1/2 tsp instant minced garlic
2 teaspoons pepper
1/4 teaspoon cayenne pepper
24 slices white bread, cubed
6 (14 1/2 ounce) cans chicken broth
2 bunches green onions, sliced
1/4 cup minced sliced parsley

Steps:

  • In a large bowl, combine flour, cornmeal, baking powder, and salt.
  • In another large bowl, whisk the eggs, milk, and oil and stir into dry ingredients just until softened.
  • Pour the batter into 2 greased 13x9x2 inch pans.
  • Bake at 425 for 15 to 20 minutes or until a toothpick inserted near the center comes out clean. Cool on wire racks.
  • In a soup kettle, cook sausage over medium heat until no longer pink and drain.
  • Stir in the water, celery, green peppers, garlic, pepper, and cayenne.
  • Bring to a boil and reduce heat. Cover and simmer 5 to 7 minutes or until vegetables are crisp tender.
  • In a very large bowl, crumble corn bread into 1/2 inch pieces. Stir in the white bread, broth, onions, and parsley.
  • Divide among 4 greased pans and cover and bake at 350 for 25 minutes. Uncover and bake 10 to 15 minutes longer or until slightly browned.

4 bacon slices, cut crosswise into 1/2-inch strips
1 16-ounce bag frozen corn, thawed, drained
1/4 cup water
1/2 cup sliced pimientos, well drained
1/2 cup thinly sliced green onions
1/4 cup chopped fresh parsley
1 tablespoon fresh lemon juice
1 teaspoon salt
1 teaspoon sugar
2 teaspoon dried oregano
1/2 teaspoon ground cumin
Generous pinch of black pepper
1/2 cup whipping cream
3 large eggs, separated
1/2 cup all purpose flour
1/4 teaspoon baking powder

Steps:

  • Cook bacon in heavy large skillet over medium-high heat until crisp. Using slotted spoon, transfer to paper towels. Pour all but 1 tablespoon drippings from skillet into small bowl; reserve. Add corn to skillet; brown well, about 5 minutes. Add 1/4 cup water; boil until all liquid evaporates, stirring often. Transfer to large bowl; cool.
  • Mix bacon, pimientos and next 8 ingredients into corn mixture. Mix in whipping cream and egg yolks, then flour and baking powder. Beat egg whites in medium bowl until stiff but not dry. Stir 1/4 of egg whites into batter to lighten. Fold in remaining egg whites.
  • Heat large skillet over medium heat. Brush with some of reserved bacon drippings. Working in batches, spoon batter into skillet by 1/4 cupfuls; spread with back of spoon to form 3-inch pancakes. Cook until golden, about 2 minutes per side, brushing skillet with drippings as needed. (Can be made 1 day ahead. Cool; cover and chill. 2 c whole kernel corn - frozen that's thawed works, that's what i always use - make sure its drained
1 sweet onion, chopped small
2 medium stalks, celery, chopped small
1 medium red or green bell pepper, diced small
1 c crushed saltine crackers
3 eggs, lightly beaten
1 tsp salt
1 1/2 c milk
1 c shredded, cheddar cheese - divided

Steps:

  • 1. Preheat oven to 325 degree F. Lightly grease a shallow baking dish - a deep dish 9 inch pie plate works great. Mix all ingredients in a bowl, just half the cheese, until well blended.
  • 2. Pour into prepared baking dish. Bake for 40 - 45 minutes, sprinkle with remaining cheese and bake for another 5 - 10 minutes or until cheese is melted and casserole is baked through the center. Check with a knife, should come out clean.
  • 3. Serve as a side dish to any meat you might be preparing. I love making this at Christmas time too, because of the colors.

  • In a large bowl, combine the flour, cornmeal, baking powder and salt. In another large bowl, whisk the eggs, milk and oil; stir into dry ingredients just until moistened.

1 tablespoon canola oil
1 poblano pepper, diced
1 small red bell pepper, diced
2 cups fresh corn kernels
1 teaspoon chili powder
1/2 cup ground cumin
1/4 teaspoon salt
1 (14 ounce) can hominy, rinsed

Steps:

  • Heat oil in a large nonstick skillet over med-high heat.
  • Add poblano, bell pepper, and corn; cook, stirring occasionally, until just tender, 3-5 minutes.
  • Stir in chili powder, cumin, and alt; cook for 30 seconds more.
  • Add hominy and cook, stirring, until heated through, about 2 minutes.
  • 98 calories, 3 g fat, 16 g carb, 3 g fiber.

CALICO CORN BREAD

I came up with this the day after I made the Mexican soup du jour. The corn was gone and I thought ....hmmmm what can I serve with the soup today? And then it hit me cornbread! And even though this is a premade "sort of " box corn bread { I usually make it from scratch but just had little energy today } feel free to start from scratch to make the cornbread if you wish. And my husband asked me to make this again, so I'll whip up another batch during the week and serve it with.....????

- 1 package 8.5 ounce jiffy cornbread mix
- 1 cup sour cream
- 1 cup extra sharp shredded cheddar cheese
- 1 tablespoon minced serrano's
- 2 tablespoons finely minced red onion
- green onions { finely chopped } about 2/3s of a cup
- 2 tablespoons melted unsalted butter
- pam spray
- 8x8 baking dish

Steps:

  • Pre heat the oven to 375 and spray the baking dish with the Pam.
  • In a frying pan sauté the Serrano peppers and red onions for a minute or two on a low heat, you just want to soften them not caramelize them, put in a bowl and set aside.
  • Mix the 2 tablespoons melted butter with the egg and whisk briskly, then add the sour cream and mix again.
  • Add the 1/3 cup of milk, whisk and add the Jiffy and mix again for only long enough to mix everything, and then let this sit on the counter for 30 minutes.
  • Divide the batter in ½.
  • In ½ of the batter add the sautéed peppers and onions, mix.
  • In the other ½ mix in the cheddar cheese.
  • Put the ½ of the cornbread with the pepper mixture into the pan.
  • Sprinkle the chopped green onion on the top.
  • Put the rest of the cornbread on top, the one with the cheese in it. Carefully spread it around.
  • Add a wee bit more cheese to the top and bake for about 55 minutes, baking times will depend on your oven. This is a dense cornbread so baking times will be longer.
