4 lbs raisins
4 lbs currants
4 lbs figs
1/2 lb sweet almonds, blanche & chop
1 lb candied peel
4 lbs brown sugar
4 lbs flour, baked brown
4 lbs butter, beaten to a cream
16 ounces sherry wine
16 ounces brandy
32 eggs, beaten seperately
2 pieces grated nutmeg
cinnamon
essence of ratafia
lemon essence
1 teaspoon baking soda, in whites of eggs
1 teaspoon salt

Steps:

  • Bake 10 hours in a slow oven.
  • One-quarter of this makes a nice large cake; full quantities, 4 stories high.

2 cups flour
2 teaspoons cinnamon
2 teaspoons baking soda
1 teaspoon salt
1 (8 ounce) can crushed pineapple, drained
1 1/4 cups vegetable oil
3 eggs
2 cups sugar
2 cups finely shredded carrots
1 cup chopped nuts
3/4 cup shredded coconut
1 cup chopped dates (optional) or 1 cup raisins (optional)
1 (3 ounce) package cream cheese, softened
1 tablespoon milk
1/2 teaspoon vanilla
1/4 cup butter, softened
1 cup toasted coconut
3 cups confectioners' sugar

Steps:

  • Preheat oven to 350°F.
  • Grease a 13-by-9-inch baking pan and set aside.
  • In a large mixing bowl, using a wooden spoon (do not use a mixer), combine oil and sugar until blended.
  • Add eggs, one at a time, mixing well after each addition, and vanilla. Gradually add dry ingredients, stirring until well blended.
  • Add shredded carrots, chopped nuts, pineapple and coconut and mix just until combined.
  • Bake for 50 minutes or until top of cake springs back when lightly touched.
  • After cake has cooled, top with cream cheese frosting or serve plain.
  • Cream Cheese Frosting:.
  • Cream together the cream cheese and butter.
  • Add confectioners' sugar, milk, vanilla and most of the toasted coconut. Let cake cool completely and spread frosting on top. Decorate top with toasted coconut, if desired. Variation: Substituting 1 teaspoon of lemon zest for the vanilla and 1/2 teaspoon of fresh lemon juice for the milk will produce a nice lemony frosting.

Every occasion I went to as a child, I can remember seeing this cake. I hated it back then. I guess I have acquired a taste for it as the years have gone by. I love it now. This is not overly sweet. This is very similar to date squares.

1 1/2 cups all-purpose flour
1 1/2 cups rolled oats
1 cup brown sugar, packed
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter, softened
2 cups dates, chopped, pitted
1/2 cup sugar
1 teaspoon lemon juice
3/4 cup boiling water

Steps:

  • Filling: In saucepan, cook dates, sugar, lemon juice and water over medium heat, stirring often, until the dates are soft, about 15 minutes.
  • Let cool.
  • In a bowl, combine flour, rolled oats, sugar, baking soda and salt; blend in butter until mixture is crumbly.
  • Pat half onto bottom of 9 inch square pan.
  • Spread filling evenly over the top.
  • Sprinkle with the remaining flour mixture, patting lightly.
  • Bake in a 350F oven for 30 to 35 minutes or until nicely browned.
  • Let cool; cut into squares.

2 cups butter, softened
1 cup confectioners' sugar
1 teaspoon vanilla extract
4 cups all-purpose flour
1 cup finely chopped pecans
Additional confectioners' sugar

Steps:

  • Preheat oven to 350°. Cream butter and 1 cup confectioners' sugar until light and fluffy, 5-7 minutes; beat in vanilla. Gradually beat in flour. Stir in pecans. , Shape tablespoons of dough into 2-in. crescents. Place 2 in. apart on ungreased baking sheets., Bake until light brown, 12-15 minutes. Roll cookies in additional confectioners' sugar while warm; cool on wire racks.
