Got this recipe from another web site and it is already cooling in the refrigerator. Easy to make, not cheap to make, but it smells amazing. I used chopped pecans and walnuts,lightly toasted, not halves. Use Duncan Hines cake mix.

1 lb candied red cherries
1 lb candied green cherries
8 ounces candied pineapple, diced
1 cup pecan halves
1/2 cup walnut halves
1 cup dates, chopped
18 1/2 ounces white cake mix
3 1/2 ounces vanilla instant pudding mix
3 eggs
1/2 cup vegetable oil
1/4 cup water
1/4 cup flour
Karo light corn syrup

Steps:

  • Preheat oven to 300 degrees.
  • In a large mixing bowl combine all fruits and nuts.
  • Add flour and toss until fruits and nuts are well coated.
  • In another large mixing bowl combine cake mix, pudding mix, eggs, oil and water.
  • Beat for 3 minutes.
  • Fold in fruit/nut mixture;batter will be very stiff.
  • Grease and flour a 10 inch Bundt pan very well.
  • Bake for 2 hours or until toothpick inserted in center comes out clean.
  • Cool completely in pan.
  • Heat light Karo syrup until warm.
  • Brush cake with warm syrup.
  • When glaze and cake are cold cover with aluminun foil.

This is my own fruitcake recipe and it's a family favorite. The mixture of fruits and nuts helps make it a tasty treat. -Allene Spence, Delbarton, West Virginia

1-1/2 cups whole red candied cherries
1-1/2 cups whole green candied cherries
3 cups diced candied pineapple
1 pound walnut halves
10 ounces golden raisins
1 cup shortening
1 cup sugar
5 large eggs
4 tablespoons vanilla extract
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt

Steps:

  • Preheat oven to 300°. Combine fruit and nuts. In another bowl, cream shortening and sugar until light and fluffy. Beat in eggs and vanilla. Combine flour, baking powder and salt; add to creamed mixture and mix well. Pour over fruit and nuts; stir to coat. , Transfer to a greased and floured 10-in. tube pan. Bake until a toothpick inserted in center comes out clean, about 2 hours. Cool 10 minutes; remove from pan to a wire rack to cool completely. Wrap tightly and store in a cool place. Bring to room temperature before serving; slice with a serrated knife.

1 (18 ounce) box pineapple cake mix
1 (18 ounce) box lemon cake mix
1 1/2 cups candied pineapple
1/2 cup candied cherry
1 cup dried cherries
1 cup raisins
1 cup coconut flakes
1 cup slivered almonds
1 cup powdered sugar
2 tablespoons milk

Steps:

  • Combine cake mixes per package.
  • Add remaining ingredients.
  • Bake per package in loaf pans.
  • Cool Until cool to the touch.
  • Top with Icing Mixture.
