These little treats in a cup or mug are just right for that "I gotta have something sweet" right now! So take your pick: Spice cake Chocolate Carrot Vanilla Or turn them into a: Muffin in a Cup by adding a couple Tablespoons of frozen wild blueberries or other fruit.

SPICE CAKE:
4 Tbsp all purpose flour
3 Tbsp granulated sugar
2 tsp spice-cinnamon, ginger,whatever you like. more or less to taste
1/8 tsp baking powder
1 medium egg white,lightly beaten or whole egg may be used, cake will not rise as much
3 Tbsp milk or soy milk
2 Tbsp vegetable oil
1/4 tsp vanilla extract
1 microwave safe cup or mug or bowl

Steps:

  • 1. MAKE SURE TO USE POT HOLDER AS THE CUPS WILL BE HOT! i LIKE TO USE A CUP CAKE LINER IN THE MUG BEFORE PUTTING IN THE BATTER I MIXED IN A SMALL BOWL-THEN POUR IN THE CUP-THIS HELPS IF YOU WANT TO TAKE CAKE OUT OF MUG TO EAT! --- Mix flour,sugar,spice and baking powder; mix in egg white. Pour in milk, oil and vanilla, and mix well. Put in microwave for 2.5 minutes(add 30 seconds if necessary) on maximum powder(1000 watt) Wait until it stops rising and sets in the cup or mug.
  • 2. Chocolate: 5 Tablespoons all purpose flour 2 1/4 Tablespoons unsweetened cocoa powder 2 1/4 Tablespoons granulated sugar 1/8 teaspoon baking soda 1/8 teaspoon salt Mix these ingredients together and add 3 Tablespoons milk 2 Tablespoons vegetable oil 1/4 teaspoon vanilla 1/4 teaspoon white vinegar (yes) Mix it all up and heres the good part...lick the spoon! You can add some chocolate chips or nuts now if you like. Place in microwave for 1 minute or 1 1/2 minutes... since there are no eggs it cooks really fast.. if the top is bouncy and a fork stuck in it comes out clean, its ready. It's good with ice cream dumped right into the mug!
  • 3. Carrot Cake: 6 Tablespoons all purpose flour 2 Tablespoons brown or white, your choice 1/4 teaspoon baking soda 1/8 teaspoon salt 1/4 teaspoon cinnamon 1/8 teaspoon nutmeg Mix the dry ingredients up with a fork and then add: 4 Tablespoons orange juice 2 Tablespoons vegetable oil 1/4 teaspoon vanilla 3 Tablespoons finely grated carrot 1 Tablespoon chopped pecans 1 Tablespoon chopped raisins Mix it all up and make sure there are no lumps on the bottom and put it in the microwave for 2 to 2 1/2 minutes. Let it cool a little and eat it. Great with a little cream cheese and honey!
  • 4. Vanilla Cake: Use a 8 or 12 ounce mug for this one: 6 Tablespoons all purpose flour 2 rounded Tablespoons granulated sugar 1/2 teaspoon baking soda 1/8 teaspoon salt(that's a pinch you know) Mix all this with a fork and add: 4 Tablespoons milk 1 Tablespoon vegetable oil 1/2 teaspoon vanilla Mix it all up real good and make sure no flour lumps ore at the bottom of the mug. Microwave for 2 minutes and the minute it comes out of the nuke put a handful of chocolate chips on top. Wait a few minutes it it melts and spread it out. --- NOTE: You can forgo the chocolate at the end and after mixing everything together just before you nuke it you could add a couple Tablespoons of frozen berries for a muffin in a cup!

3 ingredients, microwavable, GOOD! I found this recipe somewhere, but I go to SO many recipe sites, I can't remember where. This is a VERY easy, VERY good, VERY quick, single serve cake! Your choice of flavors. I prefer Chocolate! The 3-2-1 comes from 3 tablespoons cake mix, 2 tablespoons water and 1 minute in the microwave. You can make it a little bigger by adding more cake mix and a little more water to cake battter consistency. I made this for the hubby and he loved it! Going to try other flavor cake mixes with it too. Made the chocolate cake and topped it with sliced sugared strawberries! Whipped cream, ice cream and toppings, even icing would be good toppers!

1 (16 ounce) box angel food cake mix
1 (18 ounce) box cake mix (any flavor)
3 tablespoons of the cake mix
2 tablespoons water

Steps:

  • Mix Angel Food cake mix and your choice flavor cake mix (I used devils' food).
  • Put both in zip lock bag and mix well.
  • When ready for your quick cake snack attack, take 3 tablespoons cake mix.
  • Put in microwavable small ramekin or bowl.
  • Mix in 2 tablespoons water; mix well.
  • Microwave on high, 1 minute.
  • Cool and top with whipped cream or icing of your choice or just eat it plain.
  • Just enough for that quick fix, snack attack!
  • Prep time includes opening and mixing the cake mixes in zip lock bag and measuring out mix and water and mixing together.
  • ENJOY!

This is my own version of the chocolate microwave mug cake. This chocolaty fudgy treat is truly decadent and great for nights when I need a yummy dessert that is ready in less than 10 minutes! Chocolate chips make this recipe even better.
