CAJUN LOWFAT TURKEY MEATLOAF

Number Of Ingredients 10

1 1/2 pounds ground turkey
1 large onion, chopped
1/2 cup fresh bread crumbs
1/2 cup chopped fresh parsley
3 large garlic cloves, chopped
1 tablespoon plus 2 teaspoons Creole or Cajun seasoning
1 egg white (beaten to blend)
2 teaspoons ground cumin
1 teaspoon dried thyme, crumbled
Creole mustard or other spicy mustard

Steps:

  • Preheat oven to 350°F. Combine first 9 ingredients in large bowl. Season with salt and pepper. Place turkey mixture in 9x5-inch nonstick loaf pan. Cover and bake 20 minutes. Spread top with mustard. Bake uncovered another 35 minutes. Let stand 10 minutes. Remove from pan and cut into slices.

Next time you are making turkey meatloaf try kicking it up a notch! While this won't be featured on a Brennan's menu anytime soon it is delicious. The original recipe was from Bon Appetit but I've modified it over time. If you are leary of using only turkey, consider a mix of 1 part beef to 2 parts turkey.

1 1/2 lbs lean ground turkey
1 medium onion, finely chopped
2/3 cup quick-cooking oatmeal
1/2 cup chopped fresh parsley
3 large garlic cloves, minced
4 teaspoons cajun seasoning
2 egg whites (beaten to blend)
2 teaspoons ground cumin
1 teaspoon dried thyme
1/3 cup creole mustard or 1/3 cup another grainy or spicy mustard

Steps:

  • If you don't have a pre-made Cajun spice blend, there are several good ones on this site. Try Cajun Seasoning Mix #14190 or Cajun Seasoning #33092. Look for one that has no added salt.
  • Preheat oven to 350°F
  • Optional Step: You can ground the oatmeal in the food processor one or two pulses. You are not looking for flour, just bits of oatmeal somewhat smaller than the whole grain.
  • Combine all ingredients except mustard in large bowl. Season with salt and pepper.
  • Place meat mixture in a nonstick loaf pan.
  • Cover and bake 20 minutes. Scrape off any crud that may appear on the surface. Spread top with mustard.
  • Bake uncovered another 35 minutes.
  • Remove from pan and cut into slices.

1 1/2 lbs extra lean ground beef
1/2 cup onion, diced
2 garlic cloves, minced
1/4 cup fat free chicken broth
1/2 cup roasted red pepper, canned, diced
1/4 cup tomato paste
1/2 cup chili sauce, bottled
2 tablespoons cajun seasoning
2 tablespoons Worcestershire sauce
1 cup seasoned dry bread crumb

Steps:

  • Preheat oven to 350°F.
  • Saute onion and garlic in chicken broth until soft.
  • Stir in red peppers, tomato paste, chili sauce and Cajun spices.
  • Cook on low heat for 10 minutes; cool slightly.
  • In a large bowl, combine ground beef, sauteed onion mixture and bread crumbs.
  • Form into a loaf shape and place into ungreased loaf pan.
  • Brush with 2 tablespoons of chili sauce.
  • Bake until cooked through, 40-50 minutes.
  • Cool before cutting into slices.

I've never been a fan of meat loaf. After all, its a loaf of meat with ketchup on it...or so I thought. My friend made this for me last night and it was so good! The recipe is from Paul Prudhomme (of K-Paul's, New Orleans). Warning: this is very spicy and if you're not used to eating "cajun" type foods, you might want to back off on the cayenne & hot sauce just a bit.

2 whole bay leaves
1 tablespoon salt
1 teaspoon cayenne (ground red pepper)
1 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon ground cumin
1/2 teaspoon ground nutmeg
4 tablespoons unsalted butter
3/4 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped green bell pepper
1/4 cup finely chopped green onion
2 teaspoons minced garlic
1 tablespoon Tabasco sauce
1 tablespoon Worcestershire sauce
1/2 cup evaporated milk
1/2 cup catsup
1 1/2 lbs ground beef
1/2 lb ground pork
2 eggs, lightly beaten
1 cup very fine dry breadcrumb

Steps:

  • Combine the seasoning mix ingredients in a small bowl and set aside.
  • Melt the butter in a 1-quart saucepan over medium heat. Add the onions, celery, bell peppers, green onions, garlic, Tabasco, Worcestershire and seasoning mix.
  • Saute until mixture starts sticking excessively; about 6 minutes, stirring occasionally and scraping the pan bottom well.
  • Stir in the milk and catsup.
  • Continue cooking for about 2 minutes, stirring occasionally.
  • Remove from heat and allow mixture to cool to room temperature. REMOVE BAY LEAVES.
  • Place ground beef and pork in an ungreased 9 x 13 inch baking pan.
  • Add the eggs, cooked vegetable mixture (cooled) and the bread crumbs. Mix by hand until thoroughly combined.
  • In the center of the pan, shape the mixture into a loaf that is about 1 1/2 inches high, 6 inches wide and 12 inches long.
  • Bake uncovered at 350° for 25 minutes, then raise heat to 400° and continue to cook until done, about 35 minutes longer.
  • Serve Immediately as is or with "Very Hot Cajun Sauce for Beef".

A healthy version of meatloaf that does not sacrifice the taste for a healthy alternative! Leftovers are great on onion rolls with lettuce and tomato for a great sandwich treat. Your can use either Creole or Cajun seasoning. I've been making this for years, and I can't remember where I got it. Sometimes, I put slices of pancetta (or bacon) on the outside. Of course, it isn't as healthy - but it sure is pretty and tastes great.

  • Combine first 9 ingredients in large bowl. Season with salt (remember that the creole or cajun seasoning can be salty) and pepper. Place turkey mixture in 9x5-inch nonstick loaf pan. Cover and bake 20 minutes. Remove from oven, and spread top with mustard. Bank uncovered another 35 minutes. Let stand 10 minutes. Remove from pan and cut into slices.
