CAJUN CHICKEN WRAP RECIPE
This cajun chicken wrap recipe is perfect for meal prep! Ready in under 20 minutes, packed full of veggies, and SO delicious for lunches or dinners!

- Cook Chicken - Heat olive oil in a medium non-stick pan over medium heat. Add the chicken, and sprinkle with 1 ½ tablespoons of cajun seasoning. Cook, stirring frequently, for 5-7 minutes, until cooked through.
- Sautée Veggies - Remove the chicken from the pan and place in a clean bowl. Add the bell pepper and onion to the pan, sprinkling with another 1 ½ tablespoons of cajun seasoning. Cook for 5 or so minutes, until slightly softened.Add the tomatoes to the pan, cook for 1 minute until soft. Add back the chicken, toss everything up, then remove from the heat.
- Portion - (For meal prep only)- Divide between four 2-cup capacity storage containers.
- Serve - When you are ready to serve, spoon heated filling into wraps or tortillas and enjoy!

WW CAJUN CHICKEN SPINACH WRAPS 5 POINTS
WW friendly. Similar to the WW site chicken wrap, but with more spice and perfect for leftovers. The cajun spice is very robust, and with the addition of cayenne, this is a real zinger. WW counter figures 5 points, but by using smaller "Mission" 6 1/2" carb blance tortillas I think it's closer to 4 points, you could also sub fat free mayo, skip the evo and sub cooking spray.

- Chop chicken breast into small 1/2" chunks.
- Combine 1 t. cajun seasoning,1 T. flour, paprika, cayenne, salt & pepper in small bowl.
- Add chicken to dry ingredients, tossing to combine.
- Add oil to small skillet, add chicken, cook 1-2 minute per side, set aside.
- In a very small bowl, mix mayonnaise, 1/4 teaspoons cajun spice, a dash or cayenne & paprika, spread equally on 6 1/2" fajita size whole wheat tortilla.
- Top with spinach, chicken,red onion & cilantro.
- Fold tortilla and seal with moisture from mayonnaise mixture.

- Mix the 3 tablespoons of Cajun seasoning, paprika and flour. Season chicken with salt and pepper and coat with seasoning mixture. Spray a large, nonstick skillet with cooking spray. Over medium-high heat, add chicken to pan and sauté until cooked through (approximately about 1 to 2 minutes per side). Remove chicken from heat and set aside. In a separate bowl, mix mayonnaise, lemon juice and 1/2 teaspoon Cajun seasoning for the dressing. On each tortilla, spread 1 teaspoon dressing, add greens, onion slices, two basil leaves and some slices of tomatoes. Top with chicken pieces and wrap. Enjoy!

- 1. As it says above slice the chicken while partly frozen. It is easier. Then add the spices and toss well. put in fridge for 1-4 hours before starting this dish.
- 2. 20 minutes before dinner Put together the wraps by putting on a plate and smearing lightly with honey mustard. We like the marzetti's from the produce isle. Then add a couple of layers of spinach over the honey mustard. set a side.
- 3. In a wok or fry pan add a spray of oil. over Med high heat toss the chicken to fry until done. adding the onion strips the last 3 or so minutes just to lightly cook.
- 4. divid chicken and onion mix between three wraps and play down the center of each. Now just roll and serve. Eric had two I ate one. was a wonderful and light dinner. You could add a cream of potatoe soup or potato chips of you wish
CAJUN CHICKEN CAESAR WRAP (FOR 1)
Very simple and so tasty. I eat this just about every day for lunch. I use McCormick Bayou Cajun Seasoning and Cardini's Original Caesar Dressing. NOTE: I cook one whole chicken breast and save the other half of the chicken for the next day.

- Combined chicken strips, olive oil and Cajun seasoning in a bowl until the chicken is well coated.
- Cook chicken in grill pan over high heat so it gets slightly blackened/ browned and grill marks. About 3 minutes each side.
- Toss lettuce with Caesar salad dressing.
- Microwave flour tortilla about 30 seconds until soft.

CAJUN CHICKEN STUFFED WITH PEPPER JACK CHEESE & SPINACH RECIPE - (4.1/5)

- Preheat oven to 350 degrees fahrenheit. Flatten the chicken to 1/4-inch thickness. Season the chicken with salt and pepper. In a medium bowl, combine the pepper jack cheese, spinach, salt and pepper. Combine the Cajun seasoning and breadcrumbs together in a small bowl. Spoon about 1/4 cup of the spinach mixture onto each chicken breast. Roll each chicken breast tightly and fasten the seams with several toothpicks. This part requires a tiny bit of skill and I typically use about 8 toothpicks in each roll to ensure none of the filling seeps out. Be sure to count how many total toothpicks were used! Brush each chicken breast with the olive oil. Sprinkle the Cajun seasoning mixture evenly over all. Make sure you get underneath, too. Sprinkle any remaining spinach and cheese on top of chicken (optional). Place the chicken seam-side up onto a tin foil-lined baking sheet (for easy cleanup). Bake for 35 to 40 minutes, or until chicken is cooked through. Remove the toothpicks before serving. Count to make sure you have removed every last toothpick. Serve whole or slice into medallions. *If you have little ones eating this or your spice tolerance is fairly low, halve the Cajun seasoning and double the breadcrumbs. Also, try substituting some of your favorite vegetables in place of the spinach. Some of my favorites include broccoli (parboiled before stuffing in the chicken) and crunchy chopped celery.
