I've made this with both black-eyed peas and butter beans and like them both equally. Spicy and loaded with fiber and nutrition.

1 medium onion, chopped
3 cloves garlic, minced
2 tablespoons vegetable oil
1 cup chopped celery
1 1/2 cups chopped green bell peppers
1/2 teaspoon dried thyme
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/4-1/2 teaspoon black pepper
salt
cayenne pepper
2 cups chopped fresh tomatoes
1 tablespoon honey
1 tablespoon Dijon mustard
4 cups cooked black-eyed peas or 4 cups butter beans
chopped green onion

Steps:

  • In a skillet, cook the onion and garlic in heated oil over medium heat until onions start to become tender.
  • Add the celery and bell pepper; cook 5 minutes, stirring frequently.
  • Add the thyme, basil, oregano, pepper, cayenne, and salt; stir to mix.
  • Cover and cook 5 minutes or until onions are golden, stirring every now and then.
  • Add the tomatoes, honey, and mustard; stir to combine; simmer 5 minutes.
  • Add the beans; cover and let cook until heated through, stirring occasionally.
  • When plated, sprinkle with chopped green onion.

1 medium onion, chopped
3 clove garlic, minced
2 Tbsp olive oil
3 stalk(s) celery, chopped (about 1 cup)
2 green or red bell peppers, chopped (1 1/2 cups)
1 tsp fresh thyme (1/2 teas. dried)
1 Tbsp fresh basil (1 teas. dried)
1/4 tsp black pepper, or to taste
1 pinch salt, or to taste
1 pinch cayenne pepper, or to taste
2 c chopped fresh tomato or 14 oz. canned tomato
1 Tbsp honey or molasses
1 Tbsp dijon mustard
4 c cooked black-eyed peas or butter beans (20 ounce frozen or 2 16-oz cans, drained)
chopped green onion, garnish
grated cheddar cheese, garnish

Steps:

  • 1. Heat oil in heavy skillet and sauté onions and garlic until starting to soften.
  • 2. Add peppers and celery and continue to sauté for about 5 minutes, stirring occasionally.
  • 3. Add herbs and seasonings. Cover and cook for 5 minutes or until onions are golden. Stir occasionally.
  • 4. Add tomatoes, honey or molasses, and mustard. Simmer for 5 more minutes.
  • 5. Add beans, cover and stir occasionally until heated through. (10 - 20 minutes, depending if you use canned or frozen beans.)
  • 6. Top with scallions and cheese, as desired. Serve.
