Cajun-Style Potato Salad image

Not your average potato salad.

1 (24-oz.) bag gold new potatoes, cut into 1½-inch pieces
6 thick-cut bacon slices, cut into 1-inch pieces
¾ cup mayonnaise
2 tablespoons pickle juice (from a jar of dill pickles)
2 tablespoons Creole mustard
2 teaspoons Cajun seasoning
1 cup (1-inch) chopped red bell pepper (from 1 medium bell pepper)
1 cup (1-inch) chopped yellow bell pepper (from 1 medium bell pepper)
½ cup (1-inch) chopped green bell pepper (from 1 medium bell pepper)
½ cup coarsely chopped dill pickles
½ cup (¼-inch) diagonally sliced celery (from 1 medium celery stalk)
5 hard-cooked eggs, peeled and cut into eighths (quartered lengthwise, then halved crosswise)
¼ cup sliced scallions (2 small scallions), plus more for garnish

Steps:

  • Bring a large pot of water to a boil over high. Add new potatoes, and cook until tender when pierced with a knife, about 15 minutes. Drain and spread on a large rimmed baking sheet to cool to room temperature, about 45 minutes.
  • Meanwhile, cook bacon in a large skillet over medium, stirring often, until crisp, about 12 minutes. Remove from skillet, and place on a paper towel-lined plate. Set aside.
  • Stir together mayonnaise, pickle juice, Creole mustard, and Cajun seasoning in a large bowl. Add bell peppers, pickles, celery, hard-cooked eggs, scallions, cooled potatoes, and three-fourths of the bacon pieces; stir gently until evenly coated (trying not to break bacon pieces or eggs). Transfer to a serving bowl, and garnish with remaining bacon pieces and additional scallions. Store, covered, in refrigerator until ready to serve.

Blackened Portobello Mushroom Salad image

A SPEEDY cajun themed main-dish salad. Recipe from Cooking Light, May 1998. It is very highly rated on their website. After making this recipe, I have to say I was pleased. I marinated my mushrooms for about 30 minutes and they had great flavor. I used Emeril Essence (left over from another recipe) as the Cajun seasoning. My only suggestion would be to cut the mushrooms very thin so that they aren't rubbery after cooking. ENJOY!

1/4 cup red wine vinegar
1/4 cup balsamic vinegar
1/4 cup tomato juice
1 tablespoon olive oil
2 teaspoons Dijon mustard
2 teaspoons stone ground mustard
1/4 teaspoon fresh coarse ground black pepper
4 (4 ounce) portobello mushroom caps (about 5 inches wide)
1 tablespoon cajun seasoning
2 teaspoons olive oil
cooking spray
16 cups mixed greens
1 large tomatoes, cut into 8 wedges
1/2 cup thinly sliced red onion, separated into rings
1 (15 ounce) can cannellini beans, rinsed and drained
1/4 cup crumbled blue cheese

Steps:

  • Combine first 7 ingredients in a large zip-top plastic bag. Add mushrooms to bag; seal. Marinate 10 minutes, turning occasionally. Remove mushrooms from bag, reserving marinade.
  • Sprinkle mushrooms with Cajun seasoning. Heat 2 teaspoons oil in a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add mushrooms; cook 2 minutes on each side or until very brown. Cool; cut mushrooms diagonally into thin slices.
  • Arrange 4 cups salad greens on each of 4 plates. Top each with mushroom slices, 2 tomato wedges, and onion rings. Sprinkle each with 1/4 cup beans and 1 tablespoon blue cheese. Drizzle the reserved marinade evenly over salads.

5 pounds medium Yukon Gold potatoes, peeled and cut into 3/4-inch cubes
1 large yellow onion
1/2 medium lemon
1/2 teaspoon salt
8 hard-boiled large eggs, chopped
1-1/2 cups mayonnaise with olive oil and coarsely ground pepper
1 cup dill pickle relish
1/4 cup yellow mustard
1 to 2 tablespoons Cajun seasoning
1/4 cup minced fresh parsley
Paprika

Steps:

  • Place potatoes in a Dutch oven; add water to cover. Cut onion in half crosswise; add one half to saucepan. Bring to a boil. Add lemon and salt to cooking water. Reduce heat; cook, uncovered, until potatoes tender, 5-6 minutes., Meanwhile, chop remaining onion. Combine with eggs, mayonnaise, dill pickle relish, mustard and Cajun seasoning., Drain potatoes; rinse under cold water. Discard onion and lemon. Add potatoes to egg mixture; gently toss until well mixed (do not overmix, or potatoes will break down). Refrigerate, covered, 1-2 hours. Just before serving, sprinkle with parsley and paprika.

1/4 cup extra virgin olive oil
2 shallots, chopped
2 garlic cloves, minced
2 -3 tablespoons low salt cajun seasoning
1/2 cup dry white wine
1 1/2 tablespoons white wine vinegar (or white balsamic vinegar)
4 large portabella mushrooms, stemmed, gills removed, cut on the bias into 1/4-inch slices
1 cup mayonnaise (vegan preferably)
1 tablespoon ketchup
1 tablespoon dijon-style mustard
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce (vegan preferably)
1 tablespoon fresh lemon juice (or lime)
1/4 teaspoon sea salt
2 teaspoons capers, minced
2 teaspoons shallots, minced
1 teaspoon fresh parsley, minced
2 teaspoons red bell peppers, minced
1/4 cup remoulade sauce
4 soft sandwich buns, split
4 -8 lettuce leaves, rinsed and dried (romaine works well)
1 large tomatoes, thinly sliced
1 ripe avocado, peeled, sliced

Steps:

  • Mushrooms:.
  • Place a large pot over medium heat. Sprinkle the bottom with a pinch of salt and heat for 1 minute. Add the oil and heat for 1 minute, being careful not to let it smoke. This will create a nonstick effect.
  • Add the shallots and garlic and cook for 3-4 minutes, until softened. Add 1 tbls. of the Cajun seasoning, along with the wine, vinegar, and 1 cup water, bring to a boil, lower heat and simmer 20 minutes.
  • Add mushrooms and cook 1 minute. Pour the mushrooms and liquid into a shallow container, cover, and set aside to marinate for 1 hour.
  • Remove the mushrooms from the marinade and press between paper towels or in a dish towel to remove excess marinade, then sprinkle with remaining Cajun seasoning, pressing the seasoning into both sides of the mushroom slices. Discard the marinade(or save for another use).
  • In a cast iron skillet over medium high heat, cook the mushrooms in a single layer(you may need to do this in two batches) until blackened, 2-3 minutes on each side. Remove to a plate.
  • Remoulade:.
  • Place all the ingredients in a food processor or blender and blend on high for 1 minute. Store, covered, in the refrigerator for up to 1 week.
  • Makes 1 3/4 cups.
  • Putting it together:.
  • Spread a spoonful of the remoulade on one half of each roll. Top each with 1 or 2 lettuce leaves and a few slices of tomato and avocado. Divide the mushroom slices among the rolls. Close each sandwich and cut in half. Serve and enjoy!

5 medium potatoes
5 slices bacon
1/2 cup chopped onion
2 tablespoons sugar
1 tablespoon flour
1 1/2 teaspoons salt
2 teaspoons tabasco peppers
1/2 cup water
1/4 cup vinegar
1/2 cup sliced red radish

Steps:

  • Cook un-peeled potatoes in boiling water in saucepan until tender, almost 40 minute.
  • Fry bacon in skillet until crisp, about 10 minutes.
  • Remove, drain on paper toweling, crumble & reserve.
  • Cook onion in bacon drippings until partially tender, about 5 minutes.
  • Blend together sugar, flour, salt, pepper, water and vinegar, add to onion mixture.
  • Cook stirring constantly, until mixture thickens and bubbles, about 5 minutes.
  • Remove from heat.
  • Peel & slice potatoes, add potatoes to onion mixture, heat well, about 5 minutes.
  • Add radishes and toss.
  • Serve hot, topped with bacon.
