¼ cup all-purpose flour
1 tablespoon paprika
1 teaspoon ground sage
1 teaspoon Creole seasoning
½ teaspoon cayenne pepper
½ teaspoon black pepper

2 teaspoons olive oil

Steps:

  • Place flour, paprika, sage, Creole seasoning, cayenne pepper, black pepper, and garlic powder in a large, resealable plastic bag. Place pork chops in the bag, seal, and shake to coat chops.
  • In a large skillet, heat oil over high heat for about 1 minute. Arrange chops in pan, and reduce heat to medium. Cook until pork chops are dark brown, about 6 to 8 minutes per side.

Steps:

  • Mix paprika, cumin, black pepper, cayenne pepper, sage, and garlic salt on a plate. Liberally coat each pork chop with the spice mixture.
  • Heat olive oil and several pumps of non-stick, butter-flavored spray in a large skillet over high heat. Place pork chops in the skillet, reducing heat to medium. 2 tablespoons butter
½ teaspoon cayenne pepper
1 teaspoon dried oregano
½ teaspoon ground black pepper
½ teaspoon dried thyme
½ teaspoon ground mustard
2 cloves garlic, minced
1 (4 pound) pork loin roast
salt and pepper to taste
1 tablespoon olive oil
2 carrot, cut into 1/2 inch pieces
1 red bell pepper, cut into 1/2 inch pieces
1 stalk celery, cut into 1/2 inch pieces
1 large onion, cut into 1/2-inch pieces
3 tablespoons all-purpose flour
½ cup chicken broth

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Melt the butter in a small skillet over medium heat. Stir in the cayenne, oregano, pepper, thyme, mustard, and garlic. Cook for 1 minute. Use a paring knife to make several small incisions in the fat side of the meat. Stuff the slits with the spice mix, and rub the remaining mix over the surface of the meat. Sprinkle the roast with salt and pepper.
  • Heat the olive oil in a roasting pan over medium heat. Put the roast in the pan, and surround with the carrots, red pepper, celery, and onion. Lightly salt and pepper the vegetables. Place roasting pan in preheated oven, and cook for 1 hour and 45 minutes. Increase the oven temperature to 425 degrees F, and cook for an additional 15 minutes to brown the meat. Cook until meat is 145 degrees F (63 degrees C). Remove roast from pan, and let stand 10 minutes before slicing.
  • Place the roasting pan, with the pan juices, over medium heat. Whisk the flour into the hot drippings, and cook for 3 minutes. Pour in the chicken stock and cook, whisking occasionally, for 6 minutes. Strain sauce, and serve with the sliced pork roast.

1 small green pepper
3 tablespoons butter
3 garlic cloves, minced

1/3 cup ketchup
1/4 cup plus 2 tablespoons Creole or spicy brown mustard
1 tablespoon molasses

1 3-to-4-pound boneless pork shoulder
2 links andouille sausage
1/3 cup mayonnaise
8 soft sesame buns
Pickle slices and potato chips, for serving

  • Whisk 1 1/2 cups water, the vinegar, ketchup, 1/4 cup mustard, the molasses and 1 tablespoon brown sugar in a 7-to-8-quart slow cooker. Combine the remaining 1 tablespoon brown sugar, the paprika, 1 teaspoon salt and 1/2 teaspoon pepper in a small bowl. Rub all over the pork, then add to the slow cooker along with the sausage. 2 lbs pork tenderloin (two tenderloins, 1 lb each)
2 tablespoons creole seasoning (Zatarains or Tony Cacheres)
1/2 cup dark brown sugar
1/4 cup Bourbon
1/8 cup Worcestershire sauce
1/2 cup cane syrup
2 tablespoons TABASCO® brand Chipotle Pepper Sauce
1/4 cup creole mustard
Tabasco sauce, to taste

Steps:

  • Wash the pork tenderloins and pat dry. Rub them generously with the Cajun rub.
  • Preheat the grill on medium high heat. Place on grill for a few minutes on high. Sear until grill marks appear on all sides of the pork. Blackening will enhance the flavor.
  • Turn the grill down to the lowest heat, or move to the side where they will only receive indirect heat. You want to set the grill to about 325 to 350°F Cover the grill, and let the pork cook for about 30 minutes.
  • Meanwhile, make the glaze by placing all ingredients in a small saucepan and bringing to a boil. Lower heat and cook for 5 minutes, stirring occasionally. Set aside.
  • After 30 minutes on the grill (from Step 3), turn and baste the tenderloin with the bourbon-mustard glaze. Continue grilling for 15 minutes, turn and baste again, and continue grilling for 15 more minutes, for about an hour total.
  • Insert a meat thermometer and when the pork reaches 150°F, remove to a platter. Cover with foil and let rest about 15 minutes. Slice and serve with extra glaze.

  • On a flat surface, use a sharp knife to make a pocket inside each of the pork chops. In a mixing bowl, combine the ground pork, salt, cayenne, granulated garlic, black pepper, paprika, and green onions; mix well. Divide the pork mixture into 4 equal amounts and overstuff the mixture into the pocket of each pork chop. Mix all the rub ingredients together in a small bowl. Season each pork chop with the rub. Cover and refrigerate overnight to let the seasoning infuse into the chops. Preheat a grill or BBQ pit to 375 degrees F. Put the stuffed chops on the grill or BBQ pit. After 30 minutes, turn the pork chops over. After an additional 15 minutes, turn each pork chop over and begin basting each side with BBQ sauce. This is a recipe I have fiddled with for a few years. Rich and smokey, this pulled pork recipe will knock your socks off. As far as our famiy is concerned, if you can't get the real thing this is what you want. Originally, the recipes are all for a whole small pig (the name chocon de lait is roughly a "milk pig" or suckling pig)..enough of that... this is easy, do ahead, put it in the crockpot and prepare to hurt yourself. I hope you enjoy it as much as we do. Cook time includes the overnight cure and the marinating for 2 days

5 lbs boston butt or 5 lbs country-style pork ribs
3/4 teaspoon salt
1 teaspoon pepper
1 teaspoon cajun seasoning
4 garlic cloves, slivered, you want lots of garlic
1 lemon, juice of
1 lemon, zest of
1 large orange, juice of
1 large orange, zest of
2 1/2 tablespoons crab boil
1/4 cup cane syrup (can sub dark Karo)
1/4 cup Worcestershire sauce
1/2 teaspoon Tabasco sauce
1 teaspoon liquid smoke
3/4 cup olive oil

Steps:

  • Rub meat with salt and pepper and put in a large zip lock bag over night in fridge to cure.
  • Next day, rinse and make several slits all over and stud with garlic slivers and rub with a good amount of Cajun seasoning.
  • Put the meat in the bag, mix the rest of the ingredients in a glass bowl and pour over the meat.
  • Seal and put in the fridge for two days, turning a couple of times a day.
  • Remove from fridge and let stand till the chill is off.
  • Dump everything in a crockpot and cook on low overnight.
  • Pull the meat out and trim off fat, and shred the meat or tear it into chunks.
  • Let the liquid cook down a little, and add the meat back into the pot.
  • Serve this on Pistolets, or french bread cut about 6 inches long, or any other crusty bread.
  • Dress it with a good cole slaw.

1/2 cup orange juice
2 green onions, chopped
2 tablespoons orange marmalade
2 garlic cloves, minced
1 teaspoon Cajun seasoning
4 boneless pork loin chops (4 ounces each)

Steps:

  • In a small bowl, combine the first five ingredients. Pour 1/3 cup marinade into a large resealable bag; add the pork. Seal bag and turn to coat; refrigerate for 8 hours or overnight. Cover and refrigerate remaining marinade for sauce., In a small saucepan, bring reserved marinade to a boil. Reduce heat; simmer, uncovered, for 5-7 minutes or until thickened. Keep warm., Discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill pork, covered, over medium heat or broil 4-5 in. from the heat for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. Brush with sauce.

Here in South Louisiana, we "smother" just about everything. No, we don't put a blanket or something over our food to "smother" it! We just keep the cover of the pot almost all the way on. It's best cooked in a heavy, seasoned cast iron dutch oven, which is a must have, in my opinion. The meat is cooked in a natural gravy. I personally like my food on the spicy side. It's "fall off the bone" tender! So, put a pot of rice on! :)

3 tablespoons olive oil
6 bone in pork chops
your favorite cajun seasoning
1 large onion, chopped
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1 stalk celery, finely chopped
water
6 garlic cloves, minced
2 tablespoons Worcestershire sauce
8 ounces sliced mushrooms
1/2 cup green onion, sliced
1/4 cup chopped parsley

Steps:

  • Heat olive oil in a 5 quart cast iron dutch oven on medium high.
  • Season pork chops with Cajun seasoning.
  • Place in skillet and brown well on both sides over medium - medium high heat.
  • Remove from pan and set aside.
  • Add onion, green and red bell peppers, and celery. Cook until onions are soft and transparent, stirring frequently as not to burn.
  • Return pork chops to pot.
  • Add just enough water to cover the meat. Add garlic and Worcestershire. Stir well.
  • If your gravy isn't dark, add a tablespoon of kitchen bouquet and stir.
  • Cover pot almost all of the way. Simmer until meat is tender.
  • Uncover. Add mushroom and green onions and parsley.
  • Adjust seasoning by tasting gravy. Simmer 5 minutes longer.
  • Serve over hot cooked rice.

1 medium onion, diced
2 celery ribs, diced
1 bell pepper, diced (I like to use red or yellow)
1 carrot, diced
6 -8 potatoes
3 tablespoons butter
4 -5 garlic cloves, minced
1 tablespoon thyme
2 teaspoons paprika
1/2 teaspoon salt
1 teaspoon pepper
3/4 teaspoon ground mustard powder
1 teaspoon hot pepper sauce
2 bay leaves
1 boneless pork loin roast (roughly 4 lbs.)
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Peel potatoes and slice them into 1/4" rounds. Place them in the bottom of your crock pot.
  • Finely chop the remainder of the vegetables. In a large skillet, saute the vegetables in butter until tender.
  • Add the garlic; cook 1 minute longer. Stir in pepper sauce and all seasonings but the bay leaves.
  • Cut deep slits in roast and place in crock pot on top of the potatoes slit side up.
  • Spoon vegetable mixture into slits and over the top of the roast. Add bay leaves to the crock pot.
  • Cover and cook on low for 6-8 hours or until the pork is tender.
  • Transfer roast to a serving platter. Using a slotted spoon, remove potatoes and place them around the roast on the platter. Cover platter with foil to keep the roast and potatoes warm.
  • If bay leaves are still in the crock pot, remove them. Pour juices into a small saucepan. Combine cornstarch and water until smooth; stir into the pan.
  • Bring to a boil; cook and stir for two minutes until liquid has thickened.
  • Serve gravy with roast and potatoes.
