1 cup tartar sauce
1 teaspoon Cajun seasoning
1 tablespoon capers, chopped
1 teaspoon prepared horseradish
3 dashes hot sauce
1 1/2 pounds ground pork
1 tablespoon Cajun seasoning
2 scallions, green part only, thinly sliced
1 teaspoon hot sauce
1/2 teaspoon salt
1/2 teaspoon pepper
Hamburger buns
Lettuce, tomato, onions, for garnish

Steps:

  • For the Remoulade Sauce: Prepare sauce by combining all sauce ingredients in a small bowl. Refrigerate covered for 1 hour while flavors meld.
  • For the burgers: In a large mixing bowl, combine ground pork, Cajun seasoning, scallions, hot sauce, and salt and pepper, to taste. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the size of the buns. Cover with plastic wrap and set aside in refrigerator if not cooking immediately.
  • Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking. Place burgers on hot oiled grill and cook 5 to 6 minutes per side or until desired doneness. Serve hot on toasted buns with lettuce, tomato, onions, and a dollop of the Remoulade Sauce.
  • INDOOR: Prepare burgers as directed. Heat 2 tablespoons of oil in a large skillet or frying pan over medium-high heat. When oil is hot add burgers and cook 6 to 8 minutes per side or until done.

3/4 pound andouille, removed from casing
1 pound ground pork
1 rib celery, finely chopped
1/2 green bell pepper, finely chopped
1 small white onion (boiling onion), finely chopped
3 cloves garlic, minced
4 sprigs fresh thyme, chopped, about 1 tablespoon or 1 teaspoon dried thyme
1 teaspoon cayenne pepper sauce, several drops
Coarse salt and black pepper
1/2 cup chili sauce
1/4 cup (3 well-rounded tablespoons) mayonnaise or reduced fat mayonnaise
1/4 cup (3 well-rounded tablespoons) prepared sweet red pepper relish
Toppings: Bibb lettuce or hearts of romaine, sliced vine ripe tomato, and 5 crusty rolls
Serving suggestion: Red Bean Salad, Cajun Oven Fries, recipes follow

Steps:

  • Cut sausage into large chunks and place in a food processor. Grind sausage into crumbles. Combine ground sausage with pork, vegetables, garlic, thyme, hot sauce and a little salt and pepper. Form mixture into patties and cook 7 minutes on each side on an indoor electric grill preheated to high. To cook in a skillet, heat a nonstick skillet over medium high heat and cook burgers 6 to 7 minutes on each side. For outdoor grill, cook patties 6-inches from hot coals or over medium high gas heat 6 minutes on each side, covered.
  • Mix chili sauce, mayonnaise, and sweet relish in a small bowl. Serve burgers on crusty rolls with special sauce, lettuce, and tomato. Serve with red bean salad and Cajun oven fries.

8 ounces sweet potatoes, cut into chunks (225 g)
1 lb fresh ground pork
1 apple, peeled, cored and grated
2 teaspoons cajun seasoning
1 lb onion
1 tablespoon fresh cilantro, chopped
2 tablespoons corn oil
8 -12 Canadian bacon, slices
salt and pepper

Steps:

  • Cook the sweet potato in a pan of lightly salted boiling water for 15-20 minutes, or until soft when pierced with a fork. Drain well, then mash and set aside.
  • Place the ground pork in a bowl, add the mashed potato, grated apple, and Cajun seasoning. Grate 1 of the onions and add to the pork mixture with salt and pepper to taste and the chopped cilantro. Mix together, then shape into 4-6 equal-size burgers. Cover and let chill for 1 hour.
  • Slice the remaining onions. Heat 1 tablespoon of the oil in a skillet. Add the onions and cook over low heat for 10-12 minutes, stirring until soft. Remove the skillet from the heat and set aside. Wrap each burger in 2 slices of bacon.
  • Preheat the barbecue. Lightly brush the burgers with oil, and cook over hot coals for 5-6 minutes on each side, or until cooked to personal preference. Serve with the fried onions.

1 tablespoon olive or vegetable oil
1 1/2 cups frozen stir-fry bell peppers and onions (from 1-pound bag)
1 medium stalk celery, sliced (1/2 cup)
2 tablespoons chopped fresh parsley
1 pound ground pork
2 tablespoons chili sauce
1/2 teaspoon garlic salt
1/4 teaspoon dried thyme leaves
1/8 teaspoon ground red pepper (cayenne)
4 sandwich buns

Steps:

  • Heat oven to 375°. Heat oil in 10-inch nonstick skillet over medium-high heat. Cook frozen bell pepper mixture and celery in oil 3 to 4 minutes, stirring occasionally, until tender. Stir in parsley; remove from skillet. Cover to keep warm.
  • Mix pork, chili sauce, garlic salt, thyme and red pepper. Shape mixture into 4 oval patties, 1/2 inch thick. Cook patties in hot skillet over medium heat 8 to 10 minutes, turning once, until no longer pink in center.
