CAJUN STYLE MEATLOAF

This is meatloaf with some kick! The seasonings really bring out the flavor of the meat.

2 bay leaves
1 teaspoon salt
1 teaspoon ground cayenne pepper
1 teaspoon ground black pepper
½ teaspoon ground white pepper
½ teaspoon ground cumin
½ teaspoon ground nutmeg
4 tablespoons butter
¾ cup chopped onion
½ cup chopped green bell pepper
¼ cup chopped green onions
4 cloves garlic, minced
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
½ cup evaporated milk
½ cup ketchup
1 ½ pounds ground beef
½ pound andouille sausage, casings removed
2 eggs, beaten
1 cup dried bread crumbs

Steps:

  • In a small bowl, combine the bay leaves, salt, cayenne pepper, ground black pepper, ground white pepper, cumin, and nutmeg; set aside.
  • Melt the butter or margarine in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and reserved seasoning mix. Saute until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the milk and ketchup; continue cooking for 2 more minutes, stirring occasionally.
  • Remove vegetable mixture from heat, and allow to cool to room temperature. Place the beef and sausage in an ungreased 9x13 inch baking dish. Add the eggs, the vegetable mixture, and the bread crumbs. Remove the bay leaves. Mix well by hand, and form into a loaf about 1 1/2 inches high.
  • Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes. Let stand for 5 minutes before serving.

CAJUN MEATLOAF WITH CREOLE SAUCE

I woke up thinking creole and cajun. I then thought why not combine it in a meatloaf. This was a huge success! The meatloaf was so flavorful and the creole sauce took it over the top. I served it with fried cabbage and mashed potatoes. I put the creole sauce on the meatloaf and the mashed potatoes.

1/2 c diced celery
1/2 c diced green pepper
1/2 c onion
1 lb lean ground beef
1/2 lb ground pork
1 Tbsp cajun seasoning
2 dash(es) worcestershire sauce
1 egg, blended
3/4 c plain bread crumbs
1 small can of tomato sauce
CREOLE SAUCE
1 c diced celery
1 c diced onion
1 c diced green pepper
2 dash(es) tabassco sauce
2 Tbsp dried basil
2 tsp bacon grease
1 1/2 tsp plain flour
1 can(s) petite diced tomatoes
1 small can of tomato sauce
3 clove garlic minced

Steps:

  • 1. Mix up all meatloaf ingredients. Shape into a loaf. Place in a baking dish and cover with foil. Bake at 350 degrees for 45 mins, remove foil and bake about 10 to 15 mins to brown. Remove and let it rest for about 10 mins.
  • 2. While the meatloaf is in the oven, start cooking the creole sauce.
  • 3. In a skillet saute the trinity (peppers, onions and celery) in the bacon grease until tender.
  • 4. Add the flour and stir it in until blended.
  • 5. Next, add the tomatoes and tomato sauce.
  • 6. Add all of the remaining ingredients and simmer for 30 mins.
  • 7. It's taste time! Taste the creole sauce and and add more tabassco to your liking or let folks add the heat on their own.
  • 8. Next time, I make this I am going to try all beef and see which I like best. I hope that you enjoy this flavorful dish.

1 onion, chopped
1 green pepper, chopped
1 lb. ground turkey
1 large tomato, chopped
1 cup KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses
1/2 cup old-fashioned or quick-cooking oats
1 egg, beaten
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1 Tbsp. Cajun seasoning

Steps:

  • Heat oven to 375°F.
  • Heat oil in large skillet on medium heat. Add onions and peppers; cook 5 to 6 min. or until tender, stirring frequently.
  • Mix turkey and remaining ingredients in large bowl. Add onion mixture; mix lightly. Shape into loaf in 13x9-inch baking dish.
  • Bake 45 to 50 min. or until done (160ºF). Let stand 5 min.

1/2 cup beef broth or milk
1/2 cup ketchup
1 -1/2 tablespoons Traeger Cajun Rub, or your favorite Louisiana-style rub
1 to 2 tablespoons Worcestershire sauce
1 to 2 tablespoons Louisiana-style hot sauce such as Crystal or Frank's RedHot
1 tablespoon Creole-style mustard, brown mustard, or yellow mustard
1 teaspoon black pepper
1-1/2 pounds ground beef
1/2 pound ground pork
1/2 pound andouille or other spicy sausage, removed from casing
1 large egg, lightly beaten
1 cup dry bread crumbs
1 cup ketchup (for the glaze)
3 tablespoons brown sugar (for the glaze)
1 tablespoon Louisiana-style hot sauce, or more to taste (for the glaze)
1 tablespoon white vinegar, or more to taste (for the glaze)

Steps:

  • n a large frying pan, sauté the onion, celery, bell pepper, green onion, garlic, and jalapeno(s) in the oil until the vegetables soften, about 5 minutes. Add the beef broth, ketchup, Traeger Cajun Rub, Worcestershire sauce, hot sauce, mustard, and pepper, and stir to combine. Remove from the heat and let cool completely. In a large mixing bowl, combine the ground beef, pork, and andouille sausage. Add the egg, bread crumbs, and the cooled vegetable mixture. Mix lightly but thoroughly with your hands until well combined. Form a rectangular loaf about 8 inches long and 1-1/2 to 2 inches high. Bake the meatloaf at 350 for 1 to 1.5 hour. In the meantime, make the glaze: Combine the ketchup, brown sugar, hot sauce, white vinegar, and mustard in a small saucepan. Simmer for 5 to 10 minutes. Pour the glaze evenly over the meatloaf, or brush it on with a pastry brush. Continue to cook the meatloaf for 30 minutes more, or until the internal temperature in the thickest part is 160 degrees F. Let the meatloaf rest for 10 minutes before slicing and serving.

Gravy-Smothered Cajun-Style Meatloaf Patties with Maple Pecan-Glazed String Beans image

1 pound ground sirloin (90-percent lean ground beef)
1/3 pound ground pork
1/4 cup plain bread crumbs
1/8 cup milk (a generous splash)
1 egg, lightly beaten
Salt and freshly ground black pepper
3 tablespoons Worcestershire sauce (eyeball it)
1/4 teaspoon ground or freshly grated nutmeg (eyeball it)
1 rounded tablespoon tomato paste
1 green bell pepper, cored, seeded, and finely chopped
1 large garlic clove, finely chopped
5 scallions, white and green parts, thinly sliced
2 tablespoons vegetable oil (twice around the pan)
1/2 cup pecan halves, chopped
1 3/4 cups chicken stock or broth
1 1/2 pounds green beans, stem ends removed
4 tablespoons unsalted butter
1/4 cup maple syrup
1 small onion, finely chopped
1/4 teaspoon crushed red pepper flakes
2 tablespoons all-purpose flour
1/4 cup heavy cream
1/4 cup fresh flat-leaf parsley leaves (a generous handful), chopped

Steps:

  • Place the meat in a large mixing bowl and create a well in the center of the meat. Fill the well with the bread crumbs and dampen them with the milk. Pour the egg over the bread crumbs and then add salt, pepper, the Worcestershire, nutmeg, tomato paste, green peppers, garlic, and scallions. Mix together and form into 4 large oval patties, 3/4 inch thick. Preheat a large nonstick skillet over medium-high heat with the vegetable oil. Fry the meatloaf patties for 7 minutes on each side.
  • Preheat another large skillet over medium-high heat. Add the chopped pecans and toast them, stirring frequently, for about 3 minutes. Remove the toasted pecans from the pan and reserve. Return the skillet to the heat and add 3/4 cup of the chicken stock; bring it up to a simmer. Add the trimmed string beans and spread out in an even layer. Cook the beans for about 3 minutes, or until almost tender. Add 2 tablespoons of the butter, the maple syrup, salt, and pepper to the skillet with the beans, turn the heat up to high, and cook until the liquid has evaporated and the beans are shiny and glazed, 2 to 3 minutes. Toss with the pecans.
  • Remove the meatloaf patties to a platter, tent with foil, and return the pan to the heat. Reduce the heat to medium and add the remaining 2 tablespoons of butter, the onions, and the red pepper flakes. Cook for about 2 minutes and then sprinkle the onions with the flour. Cook the flour for 1 minute and then whisk in the remaining cup of chicken stock and the heavy cream. Bring the gravy to a bubble. If the gravy is too thick, thin with additional stock. Taste and season with salt and pepper. Stir in the parsley and remove the gravy from the heat.
  • Slice the meatloaf patties and smother with the gravy. Serve with a pile of maple pecan-glazed string beans.

CAJUN TURKEY MEATLOAF

Next time you are making turkey meatloaf try kicking it up a notch! While this won't be featured on a Brennan's menu anytime soon it is delicious. The original recipe was from Bon Appetit but I've modified it over time. If you are leary of using only turkey, consider a mix of 1 part beef to 2 parts turkey.

1 medium onion, finely chopped
2/3 cup quick-cooking oatmeal
1/2 cup chopped fresh parsley
3 large garlic cloves, minced
4 teaspoons cajun seasoning
2 egg whites (beaten to blend)
2 teaspoons ground cumin
1 teaspoon dried thyme
1/3 cup creole mustard or 1/3 cup another grainy or spicy mustard

Steps:

  • If you don't have a pre-made Cajun spice blend, there are several good ones on this site. Try Cajun Seasoning Mix #14190 or Cajun Seasoning #33092. Look for one that has no added salt.
  • Preheat oven to 350°F
  • Optional Step: You can ground the oatmeal in the food processor one or two pulses. You are not looking for flour, just bits of oatmeal somewhat smaller than the whole grain.
  • Combine all ingredients except mustard in large bowl. Season with salt and pepper.
  • Place meat mixture in a nonstick loaf pan.
  • Cover and bake 20 minutes. Scrape off any crud that may appear on the surface. Spread top with mustard.
  • Bake uncovered another 35 minutes.
  • Remove from pan and cut into slices.

1/2 c green pepper diced
1 medium onion diced
4 clove garlic minced
1/2 c bread crumbs

1 Tbsp cajun seasoning
8 oz can tomato sauce
SAUCE
4 Tbsp butter
1 large onion diced
1 c green pepper diced
3 clove garlic minced
1 Tbsp dried basil
1 Tbsp cajun seasoning
1 Tbsp flour
1/2 c dry red wine
15 oz can petite diced tomatoes
8 oz can tomato sauce

Steps:

  • 1. Preheat oven 350 degrees. Mix all ingredients for meatloaf together and place in a greased loaf pan. Cover with foil and bake 1 hour. Remove foil and bake another 15 minutes to brown.
  • 2. Sauce Place butter in skillet. Once melted and hot stir in green pepper, onion and garlic. Cook until tender. Stir in the basil, and Cajun seasoning. Deglaze the pan with the wine scrapping up bits and let most evaporate. Stir in the flour then the tomatoes and tomato sauce. Cook until thickened. Transfer to a food processor or immersion blender and blend until smooth.
  • 3. Serve over meatloaf.

  • stir in the milk and 1/2 cup catsup.
  • continue cooking for about 2 mins, stirring occasionally.
  • remove from the heat and allow mixture to cool to room temperature.
  • place the ground beef and pork in an ungreased 13 x 9 inch baking pan.
  • add the eggs, the cooked vegetable mixture removing the bay leaves, the bread crumbs.
  • mix by hand until thoroughly combined in the center of the pan -- shape the mixture into a loaf that is about 1 1/2 inches high x 6 inches wide and 12 inches long.

This is a spicy, not hot, Cajun meatloaf. It contains the Holy Trinity, onions, celery, and bell peppers, and cayenne, black, and white peppers. It ain't Cajun if it doesn't contain these six ingredients!

1 lb Italian sausage
2 lbs lean ground meat
1 cup crushed oats
3/4 teaspoon black pepper
3/4 teaspoon white pepper
3/4 teaspoon cayenne pepper

1 cup chopped green bell pepper
1/2 cup chopped celery
2 garlic cloves, chopped
2 cups catsup, divided use

Steps:

  • Mix all ingredients except one cup of ketchup and the meats in a large mixing bowl. Add the meats and knead well, then put in three 4-by-8 glass or metal bread pans (I use 1 1/2 quart Pyrex glass bread pans). The remaining cup of ketchup will be used later.
  • Cover with tinfoil and bake at 325 degrees for 30 minutes.
  • Pour off grease, bake another 30 minutes, pour off grease.
  • Remove tinfoil, spread remaining cup of catsup over the top of the meatloaf and along the sides, and bake about 10 minutes until catsup begins to caramelize and slightly blacken - this must be watched closely so as not to burn.
  • The carmelized and blackened catsup on the top of the meatloaf and the sides of the pan both add a great flavor to the meatloaf.
  • Cut contents of each bread pan into four 2 inch wide pieces. Makes 12 pieces, each 2 inches wide, 4 inches long, and 3 inches high.
  • This makes a mild to medium hot meatloaf, if you want it milder or hotter, change the three peppers by 1/4 teaspoon each.

A healthy version of meatloaf that does not sacrifice the taste for a healthy alternative! Leftovers are great on onion rolls with lettuce and tomato for a great sandwich treat. Your can use either Creole or Cajun seasoning. I've been making this for years, and I can't remember where I got it. Sometimes, I put slices of pancetta (or bacon) on the outside. Of course, it isn't as healthy - but it sure is pretty and tastes great.

1/2 cup green bell pepper, chopped
1/4 cup green onion, finely chopped
2 teaspoons garlic, Minced
1 tablespoon Tabasco sauce
1 tablespoon Worcestershire sauce
1/2 cup evaporated milk
1/2 cup catsup
1 1/2 lbs ground beef
1/2 lb ground pork
2 eggs, lightly beaten
1 cup breadcrumbs

Steps:

  • Combine the seasoning mix ingredients in a small bowl and set aside.
  • Melt the butter in a 1-quart saucepan over medium heat.
  • Add the onions, celery, bell peppers, green onions, garlic, tabasco, Worcestershire and seasoning mix.
  • Saute until mixture starts sticking excessively, about 6 minutes, stirring occasionally and scraping the pan bottom well.
  • Stir in the milk and catsup.
  • Continue cooking for about 2 minutes, stirring occasionally.
  • Remove from heat and allow mixture to cool to room temperature.
  • Place the ground beef and pork in an ungreased 13x9-inch baking pan.
  • Add the eggs, the cooked vegetable mixture and the bread crumbs, remove the bay leaves.
  • Mix by hand until thoroughly combined.
  • In the center of the pan, shape the mixture into a loaf that is about 1-1/2 inches high, 6 inches wide and 12 inches long.
  • Bake uncovered at 350F for 25 minutes, then raise heat to 400F and continue cooking until done, about 35 minutes longer.
  • Serve immediately as is or with Very Hot Cajun Sauce for Beef.
  • This is best using both ground pork and ground beef, as the pork gives more flavor diversity.
  • However, you can make it with ground beef only.

My mother made this last week, and the guests complained that there was no second helping. Really, I am not a meatloaf fan, but this is the best I've ever had. Plus, it is so easy to do! (only three steps). My mother got the recipe from her "internet budies", but wherever you are, Grandma B, God bless you. :0))

3 lbs ground beef
1/4 cup chopped fresh parsley
1 small bell pepper, diced
1 onion, chopped
1 (6 ounce) can tomato paste
2 slices stale bread or 2 slices rolls
2 eggs
1 teaspoon cajun seasoning
1/2 teaspoon Tabasco sauce (more or less, to taste)
1 tablespoon gumbo file powder
1 teaspoon salt
2 tablespoons Worcestershire sauce

Steps:

  • Pre-heat oven to 350°F.
  • Combine all ingredients in a large mixing bowl and mix well by hand (a requirement, so that you can work in all the love).
  • Pat into ungreased loaf pan and bake for about 45 minutes, until done.

1 lb. ground turkey

1 cup KRAFT Natural 2% Milk Colby & Monterey Jack Cheese Crumbles
1/2 cup old-fashioned or quick-cooking oats
1 egg, lightly beaten
2 Tbsp. chopped fresh parsley
1 Tbsp. LEA & PERRINS Worcestershire Sauce
1 Tbsp. Cajun seasoning
1 can (8 oz.) tomato sauce

Steps:

  • Heat oven to 375°F.
  • Heat oil in large skillet on medium heat. Add onions and peppers; cook 5 to 6 min. or until tender. Cool slightly.
  • Place turkey and remaining ingredients except for tomato sauce in large bowl. Add onion mixture; mix lightly. Shape into loaf in 13x9-inch baking dish. Pour tomato sauce over loaf.
  • Bake 45 to 50 min. or until done (165ºF). Let stand 5 min.

I got this recipe from the Orlando Sentinel under Thought You'd Never Ask - LOCAL RESTAURANT RECIPES - This dish is spicy and my favorite meatloaf. I have added notes to make this low carb. Very good leftovers too.

4 ounces unsalted butter
1 1/2 ounces sliced green onions
1/2 cup chopped yellow onion
2/3 cup chopped celery
2/3 cup chopped bell pepper
1 tablespoon minced garlic
3/4 cup heavy cream
3/4 cup ketchup (May use Low Carb Ketchup)
2 1/4 lbs ground beef
12 ounces ground pork (can omit pork and use 3 lbs hamburger meat)
4 eggs (3 eggs if Low Carb)
1 1/2 cups fresh breadcrumbs (substitute pork rinds for Low Carb)
1 tablespoon hot sauce
1 1/2 tablespoons Worcestershire sauce
1 1/2 teaspoons salt
1 1/2 teaspoons cayenne
1 1/2 teaspoons black pepper

Steps:

  • Heat oven to 325°F Line a loaf pan with parchment paper.
  • Melt butter in large pan. Sauté onions, celery, bell peppers, garlic until tender. Stir in cream, ketchup. Cook 5 minutes. Cool. Combine with remaining ingredients. Fill pan with mixture, packing to make sure there are no air pockets. Bake 2 hours, or until internal temperature is 160°F Let stand at room temperature 10 minutes. Drain grease. Refrigerate 2 hours.
  • How to make gravy: Saute 1 1/2 pounds mushrooms, 10 ounces diced Spanish onions, 10 ounces diced bell peppers and 10 ounces diced celery in 1/4 cup hot vegetable oil until soft and mushrooms have released their liquid. Add 1/2 teaspoon black pepper, 1/2 ounce Worcestershire sauce and 1 1/2 teaspoons chicken base. Turn off heat. Drizzle in 3 1/2 ounces flour ( Substitute 4 TBSP corn starch for low carb ) . Mix with whisk so that flour is well incorporated. Slowly mix in 48 ounces beef stock with whisk, making sure there are no lumps. Turn on heat. Bring to a simmer. Stir occasionally so gravy does not stick to pan. Simmer 15 minutes on low. Remove from heat. Cover meatloaf slices with gravy.

1 tablespoon vegetable oil
2 garlic cloves, finely chopped
1 onion, diced
1 carrot, diced
1/2 cup red bell pepper, diced
1 tablespoon cajun seasoning
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup corn kernel
1 egg, beaten
1 1/2 cups corn chips, roughly crushed
1/2 cup salsa
1/4 cup water
1 lb lean ground beef
1 lb ground lean pork
1/2 cup cheddar cheese, grated
2 tablespoons fresh parsley, chopped

Steps:

  • In a skillet, heat oil at medium heat. Add garlic, onion, carrot, red bell pepper, cajun seasoning, salt and pepper. Cook, stirring from time to time, for about 5 minutes or until onion has soften. Add corn and keep cooking 2 minutes. Let cool a little bit.
  • In a big bowl, mix egg, corn chips, salsa, water, beef and pork, and mixture of veggies. Put the mixture on a baking sheet with foil paper and shape in a loaf of 9 x 5 inch. Cook in a preheated oven of 350 F for 1 hour 20 minutes. Sprinkle with cheddar cheese and keep cooking for about 10 minutes or until internal temperature reads 170°F Let stand the meatloaf for 5 minutes. Remove the fat from the meatloaf, then sprinkle with parsley.

2 tablespoons butter
2 green onions, finely chopped
1 cup onion, finely chopped
1/2 cup green bell pepper, finely chopped
1/3 cup celery, finely chopped

1 1/2 teaspoons salt
1 teaspoon cumin
1/2 teaspoon pepper
1/4 teaspoon red pepper
1/8 teaspoon nutmeg
2 bay leaves
1/2 cup ketchup
1/2 cup half-and-half or 1/2 cup evaporated milk
1 lb extra lean ground beef
1 lb ground pork
2 large eggs, lightly beaten
2 teaspoons Worcestershire sauce
1 1/2 teaspoons Tabasco sauce

Steps:

  • Melt butter in medium skillet over medium heat. Add green onions, onions, green pepper, celery and garlic; cook until softened. Stir in salt, cumin, pepper, ground red pepper, nutmeg and bay leaves and cook 1 minute. Stir in ketchup and half-and-half and simmer 2 minutes. Cool. Remove bay leaves.
  • Heat oven to 350ºF. Combine ground beef, ground pork, eggs, worcestershire, and tabasco in large bowl. Stir vegetable mixture into meat mixture until well blended.
  • Spoon mixture into 9x5 loaf pan. Bake 70 minutes until meat thermometer inserted in center registers 160ºF. Cool in pan on wire rack 5 minutes. Drain and unmold onto serving platter.

3 cups heavy cream
4 tablespoons Crystal hot sauce
3 ounces Worcestershire sauce
12 ounces unsalted butter
6 ounces green onions (thinly sliced)
2 lbs onions (1/4-inch chopped)
20 ounces celery (1/4-inch chopped)
20 ounces bell peppers (1/4-inch chopped)
4 tablespoons minced garlic
2 tablespoons salt
2 teaspoons cayenne
2 teaspoons black pepper

Steps:

  • Melt butter in large rondeau. Saute all vegetables at medium heat until tender. Stir in cream and ketchup. Cook 5 minutes. Let cool completely.
  • Mix all ingredients in hobart with paddle for ten minutes at speed two. Divide into 4 inch pans lined with parchment paper 5 lb. 12 oz. per pan, 1/3 inch high.
  • Cook at 325 degrees for 2 hours, internal temperature at 160 degrees. Let set at room temperature for approximately 10 minutes then drain grease. Let stand longer (approx. 2 hours) and then drain remaining grease.
  • The serving depends on how you slice the pans.
