CREAMY CAJUN CHICKEN PASTA

This Cajun Chicken Pasta is ridiculously creamy, packed with warm spicy flavor, and, to top it all off, it's cheesy too! This easy pasta dinner, filled with juicy bites of chicken, is one of our favorite restaurant style dishes to make at home.

12 ounces penne pasta
2 tablespoons butter
1 tablespoon olive oil
1 cup diced white onion
1 red bell pepper, seeded and diced
4 large cloves garlic, minced
2 teaspoons Cajun seasoning
1 teaspoon dried basil
1 teaspoon paprika powder
1 teaspoon ground black pepper
1 teaspoon salt
1/4 teaspoon cayenne pepper**, more or less depending on taste
1 ½ pounds chicken breast tenders, cut into bite size pieces
1 cup parmesan cheese, freshly shredded
1 cup heavy cream
4 ounces cream cheese, at room temperature
¼ cup chicken broth

Steps:

  • Boil 6 cups of water in a large pot over high heat and cook the pasta according to the package directions. Drain the pasta, rinse with cold water (so it doesn't clump, can also toss a little olive oil on it to prevent clumping) and set aside.
  • While the pasta is cooking, add the butter, olive oil and onion to a large pot over medium-high heat and cook for 3-4 minutes, or until the onion becomes translucent.
  • Add the red bell pepper, garlic, Cajun seasoning, basil, paprika, ground black pepper, salt and cayenne pepper. Stir to combine and cook for 3 more minutes or until the bell pepper starts to become soft.
  • Add the chicken and stir and cook for another 6-8 minutes or until the chicken is cooked through.
  • Add the parmesan, heavy cream, cream cheese and chicken broth and stir and cook for 8-10 minutes or until the sauce starts to thicken and the cream cheese has fully melted.
  • Add the cooked and drained pasta and stir to coat pasta with sauce. Cook for 2-3 minutes, then serve with freshly chopped parsley on top, if desired.

1 broiler/fryer chicken (3 to 4 pounds), cut up
1 to 1-1/2 teaspoons cayenne pepper
3/4 teaspoon salt
3 tablespoons canola oil
1 package (14 ounces) smoked sausage, sliced
1 large sweet onion, chopped
1 medium green pepper, chopped
1 celery rib, chopped
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (14-1/2 ounces) diced tomatoes with mild green chiles, undrained
1 package (16 ounces) spaghetti

Steps:

  • Sprinkle chicken with cayenne and salt. In a Dutch oven, heat oil over medium-high heat. Brown chicken in batches. Remove from pan., Add sausage, onion, green pepper and celery to same pan; cook and stir over medium heat 3 minutes. Add garlic; cook 1 minute longer. Stir in tomatoes. Return chicken to pan; bring to a boil. Reduce heat; simmer, covered, until chicken juices run clear, about 1 hour., Cook spaghetti according to package directions. Remove chicken from pan. When cool enough to handle, remove meat from bones; discard skin and bones. Shred meat with 2 forks; return to pan. Bring to boil. Reduce heat; simmer, uncovered, until slightly thickened, 8-10 minutes. Skim fat. Drain spaghetti; serve with chicken mixture.

1 medium spaghetti squash (4 pounds)
1 can (14-1/2 ounces) diced tomatoes, undrained
2 tablespoons prepared pesto
1/2 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/4 cup dry bread crumbs
1/4 cup shredded Parmesan cheese
1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1 tablespoon plus 1 teaspoon olive oil, divided
1/2 pound sliced fresh mushrooms
1 medium onion, chopped
1 garlic clove, minced
1/2 cup chicken broth
1/3 cup shredded cheddar cheese

Steps:

  • Cut squash in half lengthwise; discard seeds. Place squash cut side down on a microwave-safe plate. Microwave, uncovered, on high for 14-16 minutes or until tender., Meanwhile, in a blender, combine the tomatoes, pesto, garlic powder and Italian seasoning. Cover and process until blended; set aside. In a small bowl, combine bread crumbs and Parmesan cheese; set aside., In a large skillet, cook chicken in 1 tablespoon oil until no longer pink; remove and keep warm. In the same skillet, saute mushrooms and onion in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in the broth, chicken and reserved tomato mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes., When squash is cool enough to handle, use a fork to separate strands. In a large ovenproof skillet, layer half of the squash, chicken mixture and reserved crumb mixture. Repeat layers., Bake, uncovered, at 350° for 15 minutes or until heated through. Sprinkle with cheddar cheese. Broil 3-4 in. from the heat for 5-6 minutes or until cheese is melted and golden brown.

BAKED SPAGHETTI SQUASH AND CHICKEN



Baked Spaghetti Squash and Chicken image

3 1/2 pound spaghetti squash
2 tablespoons butter
2 tablespoons flour
Minced clove of garlic
1 cup chicken broth
12 ounces skinless boneless chicken breasts, cut into 1/2-inch cubes
1/2 cup milk or heavy cream
1/2 cup freshly grated Parmesan cheese
1/2 cup (packed) fresh parsley or basil leaves
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees. With a sharp knife, prick the squash in 2 to 3 places and set it on a baking pan. Bake for 30 minutes. Remove it from the oven, cut it in half lengthwise and scoop out the seeds. Return the squash halves, cut side down, to the baking sheet and bake for another 30 minutes or until tender.
  • While the squash is cooking, heat the butter in a medium sized saucepan. Add the flour and cook for 1 minute, stirring continuously. Add the garlic, broth and bring the mixture to a boil, whisking all the while. Add the chicken and simmer, uncovered, for 3 to 5 minutes or until chicken is cooked through. Remove from the heat and stir in the milk or heavy cream. Season with 1 teaspoon of salt and pepper to taste; set aside and reheat over low heat when you remove the squash from the oven.
  • Remove the squash from the oven. With a fork rake the squash until it separates fully into strands and only the shell remains. Transfer the strands to pasta bowls. Remove the chicken sauce from the heat, stir in the cheese and parsley or basil and adjust the seasoning. Serve the sauce over the strands of squash.

CAJUN CHICKEN SPAGHETTI SQUASH BAKE RECIPE

2 Medium spaghetti squash
1 1/2 tablespoons olive oil, divided
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
1 pound boneless skinless chicken breasts, chopped into small cubes
1 tablespoon plus 1 teaspoon cajun seasoning
1/2 onion, chopped
2 cloves garlic, finely chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
3 roma tomatoes, diced
2 ounces reduced fat cream cheese ( I did not use this )
1/4 cup cup chopped flat leaf parsley
3 tablespoons shredded parmesan cheese

Steps:

  • Roast the squash : Preheat oven 350. Cut each spaghetti squash in half lengthwise. Scoop out the seeds. Rub 1/2 tablespoon of olive oil on each half and sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper. Place in the oven, flesh side up, and roast for 30 minutes. Let the squash cool. Cook the chicken: While the squash is roasting, toss the chicken breast cubes in 1 tablespoon cajun seasoning until evenly coated. Add 1 tablespoon olive oil to a very large saute pan or skillet ( oven safe ) over medium high heat. Once heated, add in the chicken and saute 5 - 7 minutes, flipping to brown all sides. Don't crowd the pan, do in 2 batches if needed..Transfer to a plate. Cook the veggies: To the same pan, add the onion and sprinkle with 1/2 teaspoon salt. Saute the onions for about 2 minutes until softened. Add the garlic and saute another minute. Add the bell peppers, 1 teaspoon cajun seasoning, and saute for 2 - 3 minutes until softened. Then add in the diced tomatoes and cream cheese ( I did not use this ) Stir gently until combined. Take the mixture off the heat and set aside. Add in the spaghetti squash: When the squash is cool enough to handle, use a fork to scrape the spaghetti strands out of each half. Add the spaghetti squash and the chicken to the pan and toss to combine. Place the skillet in the oven, Bake for 20 minutes until edges are slightly crispy. Garnish with fresh chopped parsley and parmesan cheese. NOTE: Halved this recipe for me.
