1 package (16 ounces) dried black-eyed peas
5 cups water
1 green onion, chopped
3 teaspoons chicken bouillon granules
3 teaspoons Cajun seasoning
1 teaspoon garlic powder
1 teaspoon dried parsley flakes
1 teaspoon chili powder
1 teaspoon coarsely ground pepper

Steps:

  • Sort peas and rinse with cold water. Place in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 to 4 hours or until softened. Drain and rinse peas, discarding liquid., Return peas to the pan; add the water, onion, bouillon and seasonings. Bring to a boil. Reduce heat; cover and simmer for 40-45 minutes or until peas are tender.

A great alternative to ham and beans or pea salad! Serve with warm, crusty bread and a tomato salad. Use fresh or frozen corn.

2 cups fresh corn kernels
2 (15 ounce) cans black-eyed peas, rinsed and drained
1 cup cubed fully cooked ham
3 stalks celery, finely chopped
2 tablespoons chopped red onion
⅔ cup sour cream
1 tablespoon ketchup
1 tablespoon dried cilantro
1 teaspoon Cajun seasoning
2 dashes hot pepper sauce (such as Tabasco®), or to taste

Steps:

  • Place the corn into a saucepan, cover with water, and bring to a boil. Reduce heat and simmer until the corn is fully cooked, about 2 minutes. Drain the corn in a colander set in the sink.
  • Mix together the warm corn, black-eyed peas, ham, celery, and onion in a salad bowl.
  • Whisk together the sour cream, ketchup, cilantro, Cajun seasoning, and hot pepper sauce in a bowl until smooth. Stir the dressing lightly into the black-eyed pea mixture until thoroughly mixed. Serve immediately.

Black Eyed Peas:
1 tbsp olive oil
1 small medium onion chopped
1 clove garlic chopped
2 15 oz cans of black eyed peas
1 15 oz can of diced tomatoes
3 tsp cajun seasoning (more if you like spicer foods)
Cajun Seasoning:
4 teaspoons paprika
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons mustard powder
1 teaspoon black pepper
1 teaspoon white pepper
1 teaspoon cayenne pepper
1 teaspoon ground nutmeg
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon cumin powder
Combine all seasoning ingredients in spice grinder or use a mortar and pestle. Use 3 tsp for black eyed peas. Store remaining spice mix in a tightly sealed jar. Makes 2 oz.
Fresh Cilantro leaves

Steps:

  • Heat oil in a Dutch oven. Add onion and garlic, saute till soft. Add black eyed peas, tomatoes and cajun seasonings. Bring to a boil then reduce heat and simmer for 20 minutes over medium-low heat stirring occasionally. Garnish with cilantro.

3/4 cup uncooked white rice
1 can black-eyed peas, drained
1 tablespoon parsley flakes

Steps:

  • In a pot heat oil over medium-high heat.
  • Stir in onion, celery, carrot, garlic powder, Cajun seasoning, and salt; cook, stirring occasionally, 3-4 minutes.
  • Add broth; bring to a boil.
  • Stir in rice.
  • Reduce heat to medium-low.
  • Cover and simmer for 15 minutes.
  • Stir in black-eyed peas.

1 (10 ounce) can Rotel Tomatoes
1 (14 ounce) can chicken broth
2 cups water

1/3 cup chopped onion
grated cheddar cheese (optional)

Steps:

  • Mix all ingredients in 2 quart Dutch oven.

1 tablespoon chopped jalapeno chile
1/2 teaspoon ground cumin
1/2 teaspoon salt
2/3 cup quick-cooking grits
1 cup packaged Mexican blend cheese
3/4 cup black-eyed peas or 3/4 cup cooked dry-packaged black-eyed peas, rinsed, drained, coarsely chopped
blackeye salsa (recipe posted separately.)

Steps:

  • Combine water, jalapeno chili, cumin and salt in medium saucepan; heat to boiling.
  • Gradually stir in grits. Reduce heat and simmer, stirring occasionally, until thickened, about 7-8 minutes.
  • Stir in cheese and Blackeyes.
  • Spoon grits onto plates, then spoon Blackeye Salsa over grits.
