SPICY CAJUN BBQ SAUCE

Thanks to BHG for a great trendy sauce. Try putting a spicy rub (chili rub or Jamaican jerk rub recipes, perhaps?)on your meat first to kick your chicken or steak up a notch and u have some kicking goodness! Enjoy !

1/4 c chopped onion
1/4 c chopped sweet red pepper
1 Tbsp olive oil
1/2 c beer
1/2 c cold water
1 Tbsp creole or cajun seasoning mix
1/4 tsp crushed red pepper
1/4 tsp salt

Steps:

  • 1. In a small saucepan over medium heat, cook chopped onion and chopped red sweet pepper in the olive oil-about 4-5 minutes til tender.
  • 2. In a small bowl, whisk together the beer, cold water and Creole seasonings. Add to onion mixture and stir til thickened and bubbling. Cook and stir 2 minutes more.

Spicy Crab Boil BBQ Chicken with Cajun Barbeque Sauce image

1/2 cup green onions, chopped
2 whole chickens, cut into pieces
1 cup spicy crab boil spice mix
Garlic powder
2 cups Cajun barbeque sauce
1/2 cup fresh parsley, chopped

Steps:

  • In a large stock pot, bring 1 gallon of water and 1/4 cup of the green onions to a boil. Add crab boil, mix and reduce heat to a slow boil or simmer. Add all chicken pieces and continue to simmer for 8 to 10 minutes. Turn off heat and allow the chicken to soak for 5 to 15 minutes.
  • Strain water. Place chicken on a large tray. Season with a light coating of garlic powder, to taste, and parsley and rub into meat.
  • Place all chicken pieces on grill. Baste chicken with generous portions of sauce, repeat if necessary. Grill until the chicken skin is crispy.
  • This dish is delicious if you have a taste for red pepper and something cold to drink nearby. However, if you are not a fan of peppery foods, I would not suggest this dish for your table.

These are now my all time favorite. Sweet smoky with a Cajun flare. You are going to need tons of napkins or even better wet wipes. These are delicious. You may want to double or triple the recipe because these don't last long. You could also make these with chicken legs or thighs.

WINGS
10 chicken wings separated at joint tips discarded
2 Tbsp liquid smoke
1 Tbsp each cajun seasoning,garlic powder, and smoked paprika
1 tsp black pepper
SWEET CAJUN SAUCE
1 Tbsp olive oil
4 clove garlic minced
1 medium shallot minced or two small shallots
2 Tbsp lemon juice
1 Tbsp cajun seasoning
1 tsp salt
3/4 c chili sauce
3 Tbsp honey
2 Tbsp worcestershire sauce
1 stick cold butter cut into 8 pieces

Steps:

  • 1. Preheat oven 425 degrees.
  • 2. Place wings in a large bowl and drizzle the liquid smoke over them rubbing with fingers to mix well.
  • 3. Mix spiced together in a small bowl. Pour over wings and mix well.
  • 4. Line a baking sheet with foil and arrange the wings in a single layer. Bake for 30 minutes turning once. Check for doneness may take longer depending on size of wings.
  • 5. Meanwhile make the sauce.
  • 6. Place olive oil in saucepan and cook shallots and garlic until translucent. Add remaining ingredients except butter.
  • 7. Cook until warmed through. Add the butter 1 pat at a time stirring constantly until each is melted and incorporated into a sauce.
  • 8. Remove wings from oven. Toss in sauce and serve with favorite dipping sauce or just as is with plenty of napkins

CATALINA CAJUN BBQ SAUCE

2 Tbsp cajun seasoning and sirracha sauce

No cooking allowed with this BBQ sauce! It is best eaten by dipping homemade bread or your favorite BBQ meat in the sauce. This is my mother's recipe and it brings back great childhood memories of the family and dinner time. I had to make this a few times to get the taste I wanted, but once I did....YUM!

2 clove(s) garlic
1/2 cup(s) vegetable oil
5 or 6 can(s) small tomato sauce
1 or 2 tablespoon(s) sugar
3 or 4 tablespoon(s) mustard

Steps:

  • Grind onions and garlic, simmer in vegetable oil until tender. Add tomato sauce and simmer for about 30 minutes. Add sugar and mustard, blend well.
  • Like any Cajun dish, it is usually better the next day! Adjust tomato sauce, sugar and mustard to the cook's preference.

Food courts in malls serve up a wide variety of food. In so many malls cajun food is one of the types of food that is served. What makes this sauce special is brown sugar, bourbon, Ketchup and a variety of seasonings

1/2 cup dark brown sugar (plus 1 tablespoon)
1/2 cup blended bourbon
1/2 cup Heinz ketchup
2 teaspoons liquid smoke
1 clove minced garlic
1 tablespoon minced onion

Steps:

  • In a saucepan combine brown sugar, and bourbon. Turn heat to medium and mix well. Add Ketchup and remaining. Stir until all is well blended. Heat through for about 15 - 20 minutes.
  • You want to make sure the most of the alcohol cooks away. You can use this as a basting sauce for BBQ, or you can spoon it over chicken breasts and pop those into a 400-degree oven covered for about 30 minutes. You can also prepare this with wings for a great change on hot wings.
