CAFé ROYALE
From "650 Cocktails and Mixed Drinks". Used as a digestif this is considered somewhat ostentatious. Makes four after-dinner drinks bound to impress your guests...all flaming things do, don't they?

Steps:
- Rinse out four coffee cups with boiling water to warm the cups. Pour out. Add a sugar cube to each cup then fill a little below the rim with hot coffee. Float 1 1/2 tbsp cognac on each of the four cups and set aflame. Let flame for a few seconds then extinguish by stirring with a spoon.

When in New Orleans, you must try their Café Royale. I purchased some Café Royale spoons that grab the rim of a cup so you can ignite easily. Wonderful after dinner drink.

Steps:
- 1. Place lump / cube of sugar in a Café Royale spoon. You can use a regular spoon, also.
- 2. Put the cube of sugar and pour cognac so the sugar cube soaks of the brandy.
- 3. Ignite. When flame burns out, pour contents into black coffee.
