1 lb cut up chicken
1/2 cup chicken broth (fat free)
1 green pepper, thinly sliced
1 (8 ounce) package mushrooms, halved
2 (14 1/2 ounce) cans diced tomatoes seasoned with basil garlic & oregano (undrained)
6 ounces uncooked penne pasta (1 1/3 cup)
3 tablespoons shredded fresh parmesan cheese

Steps:

  • Spray Dutch oven with non-stick cooking spray.
  • Heat over high heat until hot.
  • Add chicken; cook and stir 1 to 2 minutes or until browned.
  • Remove chicken from Dutch oven; place on plate.
  • In same Dutch oven, combine broth, bell pepper, mushroom, tomatoes, and penne; mix well.
  • Top with chicken; press into mixture slightly.
  • Reduce heat to medium; cover tightly and cook 15 minutes or until chicken is no longer pink in the center.
  • Remove Dutch oven from heat, let stand 5 minutes to finish cooking pasta.
  • To serve, ladle mixture into serving bowls.
  • Sprinkle with cheese.

2 medium onions, thinly sliced
1 broiler/fryer chicken (3 to 4 pounds), cut up and skin removed
2 garlic cloves, minced
1 to 2 teaspoons dried oregano
1 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon pepper
1 bay leaf
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 can (4 ounces) mushroom stems and pieces, drained, or 1 cup sliced fresh mushrooms
1/4 cup white wine or water
Hot cooked pasta

Steps:

  • Place onions in a 5-qt. slow cooker. Add the chicken, seasonings, tomatoes, tomato sauce, mushrooms and wine., Cover and cook on low for 6-8 hours or until chicken is tender. Discard bay leaf. Serve chicken with sauce over pasta.

6 boneless skinless chicken thighs (about 1-1/2 pounds)
2 medium zucchini, cut into 1-inch slices
1 medium green pepper, cut into 1-inch pieces
1 large sweet onion, coarsely chopped
1/2 teaspoon dried oregano
1 jar (24 ounces) garden-style spaghetti sauce
Hot cooked spaghetti
Optional: Sliced ripe olives and shredded Parmesan cheese

Steps:

  • Place chicken and vegetables in a 3-qt. slow cooker; sprinkle with oregano. Pour sauce over top. Cook, covered, on low 4-5 hours or until chicken is tender., Remove chicken; break up slightly with 2 forks. Return to slow cooker. Serve with spaghetti. If desired, top with olives and cheese. Freeze Option: Place the first 6 ingredients in a freezer container and freeze. To use, place container in refrigerator 48 hours or until contents are completely thawed. Cook and serve as directed.

This is one of my husband's favorite meals. I came up with this recipe after sampling a similar dish in a restaurant. This one is just as good.

1/4 medium green or sweet yellow pepper, julienned
3 tablespoons chopped onion
1 garlic clove, minced
1-1/2 teaspoons olive oil
1 Italian sausage link (about 1/4 pound), casing removed
1 cup canned diced tomatoes, undrained
2/3 cup tomato juice
15 slices pepperoni, halved
1/4 teaspoon dried oregano
1/8 teaspoon dried basil
Pepper to taste
1/3 cup sliced fresh mushrooms
1 tablespoon sliced ripe olives
2 tablespoons Romano or Parmesan cheese
Hot cooked linguine orfettuccine

Steps:

  • In a skillet, saute the green pepper, onion and garlic in oil until crisp-tender. Crumble sausage into skillet; cook over medium heat until meat is no longer pink. Drain. Add the tomatoes, tomato juice, pepperoni, oregano, basil and pepper. Reduce heat; cover and simmer for 10 minutes. Add mushrooms and olives. Simmer, uncovered, for 10-15 minutes or until slightly thickened. Stir in cheese. Serve over pasta.

This baked chicken cacciatore was inspired by a lonely can of stewed tomatoes that were in the pantry. This is simple to make and sooooo good! I love to serve this with mashed potatoes, but it also goes great with rice or pasta. We like it just as is, but feel free to "spice it up" any way you wish.

nonstick cooking spray
¼ cup all-purpose flour
½ teaspoon salt, divided
¼ teaspoon ground black pepper
¼ teaspoon garlic powder
6 (4 ounce) skinless, bone-in chicken thighs
2 tablespoons olive oil, or more as needed
2 small onions, chopped
2 cloves garlic, minced, or more to taste
1 (8 ounce) package sliced fresh mushrooms
½ cup red wine, or more as needed
1 (14.5 ounce) can stewed tomatoes with juice
1 (8 ounce) can tomato sauce
aluminum foil

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Coat a 9x13-inch baking dish with cooking spray.
  • Mix together flour, 1/4 teaspoon salt, pepper, and garlic powder in a shallow bowl. Dredge chicken in the flour mixture, shaking off any excess.
  • Heat oil in a large skillet over medium-high heat. Add chicken and cook until nicely browned, 4 to 5 minutes per side. Transfer chicken to the prepared baking dish.
  • Add onions and garlic to the skillet and saute until onion has softened and turned translucent, about 5 minutes. Add mushrooms and more oil, if necessary, and cook until mushrooms have softened, about 5 minutes. Pour 1/2 cup wine into the pan, scrape the browned bits of food off the bottom of the pan with a wooden spoon, and cook until liquid has evaporated, about 5 minutes. Stir in stewed tomatoes with juice, tomato sauce, and remaining 1/4 teaspoon salt. Simmer for 1 to 2 minutes, adding extra wine if sauce seems too thick. Pour mixture over chicken in the baking dish and cover with aluminum foil.
  • Bake in the preheated oven until chicken is no longer pink at the bone and the juices run clear, about 45 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

2 cups cooked chicken breasts, cubed
1 cup canned reduced-fat chicken broth
1 small green bell pepper, thinly sliced
1 (8 ounce) package mushrooms, whole halved
2 (14 1/2 ounce) cans tomatoes seasoned with basil garlic & oregano, undrained
2 cups penne pasta
1/4 cup parmesan cheese

Steps:

  • Advance Prep---Cook chicken; Cut into cubes. Slice green pepper. Halve mushrooms. Cook pasta according to package directions until just tender. Rinse in cold water; place in large pan of cold water; store in refrigerator until ready to use.
  • Preparation---In large skillet combine broth, sliced green bell pepper, mushrooms, and tomatoes. Cook over medium-hign until green pepper slices are tender and cooked through.
  • Remove from heat. Stir in chicken and drained pasta.
  • Pour into labeled freezer bag; seal and freeze.
  • To Serve---Thaw completely. Reheat in large skillet until heated through. Serve hot, sprinkled with Parmesan cheese.
