1/3 cup frozen orange juice concentrate, thawed
1/3 cup unseasoned rice vinegar
1/3 cup canola oil or vegetable oil
2 (8-ounce) bags coleslaw mix
4 ears of fresh corn, shucked, kernels cut from cob
2 medium carrots, peeled, coarsely grated
1 medium red bell pepper, stemmed, cored, cut into thin strips
6 medium green onions, thinly sliced
1/2 cup chopped fresh cilantro

Steps:

  • Whisk orange juice concentrate, rice vinegar, and canola oil in small bowl. Season with salt and pepper. DO AHEAD Dressing can be made 1 day ahead. Cover and refrigerate.
  • Combine slaw mix, corn kernels, carrots, red bell pepper strips, sliced green onions, and chopped cilantro in large bowl. Toss with enough dressing to coat. Season slaw to taste with salt and pepper. Let stand 15 minutes for flavors to blend. Toss again and serve.

1 large orange, zested and juiced
2 teaspoons white wine vinegar
2 teaspoons sesame oil
1/2 teaspoon salt
4 cups green cabbage, thinly sliced
4 cups red cabbage, thinly sliced
4 scallions, thinly sliced
3 medium carrots, shredded
8 cabbage leaves, for garnish
black sesame seed, for garnish
white sesame seeds, for garnish

Steps:

  • In a bowl, whisk together orange juice, 1 1/4 teaspoon orange zest, vinegar, sesame oil and salt until blended.
  • Add green cabbage, red cabbage, scallions and carrots; toss gently to coat. Cover and chill 1 hour.
  • Arrange cabbage leaves on serving platter, if desired. Top with slaw.
  • Garnish with black and white sesame seeds, if desired.

One 4-pound boneless pork butt
3/4 cup canola oil
1/2 cup fresh oregano leaves
10 cloves garlic, finely chopped
Kosher salt
1 1/2 cups guava jelly
1/4 cup Dijon mustard
1/4 cup fresh orange juice
2 tablespoons fresh lime juice
Freshly ground black pepper
16 corn tortillas, warmed
Chipotle Mayonnaise, recipe follows
Sour Orange, Red Cabbage and Jicama Slaw, recipe follows
Fresh cilantro leaves, for serving
3/4 cup mayonnaise
2 tablespoons pureed chipotles en adobo
Juice of 1/2 lime
1/2 cup fresh orange juice
1/4 cup fresh lime juice
2 tablespoons honey
1 tablespoon granulated sugar
1/2 jicama, grated on large holes of box grater
1/2 small red onion, grated on large holes of box grater
1/4 head red cabbage, grated on large holes of box grater
1 large carrot, grated on large holes of box grater
3 tablespoons chopped fresh cilantro
Salt and freshly ground black pepper

Steps:

  • For the pork: Using a paring knife, make small slits over the entire surface of the pork. Put the pork in a large roasting pan or bowl. Combine the oil, oregano, garlic and a big pinch of salt in a blender and blend until smooth. Rub into the slashes. Cover and refrigerate at least 8 hours and up to 24 hours.
  • Whisk together the guava jelly, mustard, orange and lime juices in a bowl and season with salt and pepper.
  • Prepare the roaster box according to manufacturer's instructions.
  • Sprinkle the pork liberally with salt and pepper and put fat-side up on the rack over the roasting pan in the roaster box. Cook for 1 hour, flip, and cook another 2 hours. Glaze the top with the guava mixture, flip, glaze again, cover the box and cook another 30 minutes, or until the internal temperature of the pork is about 195 degrees F. You can check the meat occasionally to make sure the glaze on the top of the meat isn't burning, so you can add sufficient charcoal to keep the box hot without burning the glaze. Total cooking time will be between 4 and 5 hours. Remove the pork, tent lightly with foil and let rest 15 minutes. Pull the pork into bite-size pieces and toss with more of the guava glaze.
  • Lay the warm tortillas on a flat surface. Smear some Chipotle Mayonnaise on each one. Fill the center with some of the pork, some of the Sour Orange, Red Cabbage and Jicama Slaw and top each with some cilantro leaves. Fold over and eat.
  • Whisk the mayonnaise, pureed chipotles en adobo and lime juice together until smooth.
  • Whisk together the orange juice, lime juice, honey and sugar in a large bowl. Add the jicama, onions, cabbage, carrots and cilantro and season with salt and pepper. Refrigerate for at least 1 hour before serving to allow flavors to meld.

Cilantro leaves
2 cups fresh orange juice
1 cup red wine vinegar
1 cup white wine vinegar
3 cups granulated sugar
1 orange, zest grated
3 tablespoons canola oil
1 large Spanish onion, coarsely chopped
1 head garlic, coarsely chopped
1 habanero chile, coarsely chopped
3 cups canned plum tomatoes and juices, chopped
3 cups canned plum tomatoes and juices, chopped
1/4 cup ketchup
1 tablespoon Worcestershire sauce
2 tablespoons dark brown sugar
2 tablespoons honey
1/4 cup molasses
2 tablespoons Dijon mustard
3 tablespoons ancho chili powder
2 canned chipotle chiles, pureed

1 cup prepared mayonnaise

Steps:

  • Heat grill to high.
  • Brush salmon with oil and season with salt and pepper, to taste. Grill the salmon skin-side down for 3 to 4 minutes or until charred and a crust has formed. Brush with some of the BBQ sauce, flip over and continue grilling for 2 to 3 minutes for medium doneness. Remove from the grill and brush with more of the sauce. Let rest 5 minutes and flake with a fork.
  • Grill tortillas for 20 seconds per side. Divide the salmon among the tortillas, top with the red cabbage slaw and smoked chile sauce and cilantro leaves; fold and eat.
  • Place orange juice, vinegars and sugar in a medium nonreactive saucepan and cook until reduced to approximately 1 cup and thickened. Remove from the heat and stir in the zest. Set aside.
  • Heat oil in a large saucepan over high heat. Add the onion, garlic and habanero and cook until soft. Add the remaining ingredients and cook until the tomatoes are soft and the sauce has thickened, about 40 minutes. Transfer the mixture to a food processor and process until smooth. Season with salt and pepper, to taste.
  • Transfer the sauce to a medium saucepan and whisk in the reduced orange/vinegar mixture and cook for 10 minutes. Let cool.
  • Whisk together all ingredients in a small bowl and season with salt and pepper to taste.
  • Combine all ingredients, except cabbage, in a blender and blend until smooth. Season with salt and pepper, to taste. Place cabbage in a large bowl and toss with the vinaigrette. Season with salt and pepper and let sit 30 minutes in the refrigerator before serving.

Steps:

  • 1. Special equipment: roaster box with probe thermo- meter, such as La Caja China; sufficient charcoal to cook pork butt for 4 to 5 hours (about 30 pounds) 2. Combine the oil, oregano, garlic and a big pinch of salt in a blender and blend until smooth. 4. Rub into the slashes. Cover and refrigerate at least 8 hours and up to 24 hours. 5. DRESSING:
1/3 c frozen orange juice concentrate, thawed but not diluted
1/3 c unseasoned rice vinegar
1/3 c canola oil or vegetable oil
salt and pepper to taste
VEGGIE PREP:
2 pkg 8 oz. each coleslaw mix (in produce)
2 c frozen whole kernel corn(4 ears fresh cut from cob in summer)
2 medium carrots, peeled and coarsely grated
1 medium red bell pepper, trimmed and cut into strips
6 medium green onions, thinly sliced
1/4 c chopped fresh cilantro

Steps:

  • 1. Dressing: Whisk the ingredients together in a small bowl.Set side in fridge. This is a great do ahead dressing- can be made a day ahead. Cover and refrigerate.
  • 2. Veggie Prep: Combine all ingredients in a large bowl. Toss with enough dressing to coat. Season slaw to taste with salt and pepper. Let stand 15 minutes for flavors to blend. Toss again and serve. Oh so good!
  • 3. Note: For added taste sprinkle on fried bacon crumbles,or strawberries halves, of orange segments or apple chunks.

3 Oz. slivered almonds
3 Oz. sesame seeds (not toasted)
1 small can mandarin orange sections drained.
Dress with:
1/2 C. olive oil
6 T. sugar
6 T. rice vinegar of
5 T. white vinegar
1/2 t. salt
1/4 t. black pepper
Toss and top salad bowel with layer of thin chow mein noodles.
Serve immediately.

  • Toss first 5 ingredients. Prepare dressing and toss salad with dressing. Top with thin layer of thin chow mein noodles. Serve immdiatley.
