1 lb lean ground beef
1/2 cup chopped onion
1/2 cup uncooked brown rice
1 cup tomato sauce
1 1/2 teaspoons beef bouillon
1 tablespoon Worcestershire sauce
1 teaspoon sugar
1/2 teaspoon dried dill
3/4 cup water
4 1/2 cups coarsely chopped cabbage
6 ounces shredded swiss cheese or 6 ounces colby

Steps:

  • Brown meat and onion and season to taste.
  • Put cabbage in greased 9x13 pan. Sprinkle rice over cabbage. Sprinkle meat and onion over cabbage.
  • Mix tomato sauce, bouillon, Worcestershire, sugar, dill and water. Pour over cabbage mixture.
  • Bake, covered at 350F for 1 1/2 hours.
  • Remove from oven and sprinkle cheese over top. Let sit until cheese is melted.

We revised this classic dish by slashing the amount of oil and opting for lean beef. It'll provide true comfort, any night of the week. Savoy cabbage has deep green ruffled and veined leaves. It is not as firm as purple or green cabbage and has a mild flavor and tender-crisp texture. Refrigerate heads of cabbage wrapped in a paper towel in a plastic bag for up to 2 weeks. Don't cut or shred it until you are ready to use it in order to maximize freshness and maintain color and nutrients. Try this recipe with ground turkey for a change of pace. Leftovers reheat beautifully.

1 medium Uncooked carrot(s) peeled and grated
1 medium Uncooked onion(s) finely chopped

29 oz Canned diced tomatoes with basil, garlic and oregano

Steps:

  • Wrap cabbage leaves in plastic wrap or moist paper towels and microwave on HIGH for 2 minutes, until soft. Cut off the thickest, white portion of the spine of each leaf to make leaves pliable and easy to fold; set aside.
  • Combine beef, rice, water, bread crumbs, carrot, onion, garlic, egg white, salt and pepper in a large bowl; mix well.
  • Spoon about 1/4 cup of beef mixture onto center of each leaf. Fold up bottom of leaf to cover filling, tuck in sides and then continue rolling to make loose rolls (rice will expand during cooking so it is important not to roll them too tightly).
  • Heat oil in a large stockpot over medium-high heat; add rolls and sauté until golden brown on all sides, turning frequently, about 5 minutes. Add tomatoes and bring to a simmer. Reduce heat to low, cover and cook until cooked through, checking pot every 15 minutes and stirring to prevent sticking, about 1 hour. (If sauce thickens or reduces, add water.) Yields 2 rolls per serving.

  • Brown beef with onion.
  • Boil cabbage 3 min, than drain.
  • Alternate layers of beef and onion with cabbage in 2 qt casserole or crock pot.
  • Pour soup, undiluted, over top.

I received this recipe at a potluck 13 years ago from a coworker who was not allowed by her peers to bring any other dish. A salad and crusty bread and your meal is complete. 1 head cabbage (about 3 pounds)
1 1/2 lbs ground beef
1/2 lb ground pork
1/2 cup onion, chopped
1/2 cup rice (instant)
1/2 teaspoon salt

1 (10 1/2 ounce) can tomato soup
8 ounces spicy hot V8
6 ounces V8 vegetable juice
6 fluid ounces water
8 ounces tomato sauce
1 cup sharp cheddar cheese, grated

Steps:

  • Cut the cabbage into medium size pieces and place in the bottom of a greased 9x13 in casserole dish.
  • Brown the meat and onion in a large skillet, drain well, return to skillet.
  • Stir the rice, salt and pepper into the meat.

  • In a saucepan, heat soup, V-8 juice and water to boiling.

1 (28 ounce) can fire-roasted diced tomatoes
2 pounds ground beef
1 medium onion, diced
2 (10.75 ounce) cans condensed tomato soup
1 medium head cabbage, cored and thinly sliced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a casserole dish with cooking spray.
  • Place diced tomatoes in a colander over a bowl. Let drain and retain the juice.
  • Meanwhile, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Transfer to a large bowl. Drain and discard most of the grease from the skillet.
  • Cook onions in the remaining grease over medium-low heat until the onion is soft and beginning caramelize, about 15 minutes. Remove from the heat and add to the beef with drained tomatoes and condensed soup. Add some tomato juice if necessary to thin the mixture slightly.
  • Place the cabbage in the prepared casserole dish, mounding it in the middle. Pour beef mixture over top and cover tightly with foil.
  • Bake in the oven for 1 hour. Remove the foil and bake for 1 more hour. Remove from the oven and allow to cool for 20 minutes or so before serving. Serve hot.

1/2 teaspoon olive oil
1 lb lean ground beef (or 1 lb ground sirloin)
1 large onion, chopped fine
2 teaspoons garlic, finely minced
1 teaspoon southwest seasoning (or Cajun seasoning)
1/2 teaspoon Hungarian paprika
salt and black pepper
1 head green cabbage, chopped into bite size pieces
1 (14 1/2 ounce) can southwestern petite dice tomatoes with juice
1 (4 ounce) can tomato sauce
1/4 cup parsley, chopped
1/4 cup vegetables or 1/4 cup water
1 cup brown rice, cooked
1 cup mozzarella cheese, low-fat

Steps:

  • Cook brown rice following package's directions.
  • Chop onion finely, and cabbage into bite size pieces.
  • Preheat oven to 350 degrees. Spray an 8 x 8 or 9 x 9 baking dish.
  • In a large skillet heat to medium heat, brown ground beef crumbling into small pieces.
  • Remove ground beef and set aside.
  • Add ½ T of oil to skillet and add chopped onion. Sautee for 5 minutes or until translucent.
  • Add minced garlic, Southwestern or Cajun seasoning, paprika and cook for 2-3 minutes.
  • Add diced tomatoes, tomato sauce, parsley, ground beef, cabbage & broth. Stir thoroughly.
  • S&P to taste. Add more spice is preferred.
  • Simmer uncovered for 15-20 minutes. Mixture will thicken slightly.
  • Add cooked rice and fold in so rice doesn't break down.
  • Transfer into baking dish and cover with foil, baking for 20 minutes.
  • Uncover and sprinkle with cheese. Bake 5-10 minutes longer until cheese melts & browns lightly.
