With an Italian flavor, this one dish casserole is always a hit at dinner and pot lucks. Most never realize it is cabbage. I love being able to put this together the evening or morning before to just pop in the oven. I received this recipe at a potluck 13 years ago from a coworker who was not allowed by her peers to bring any other dish. A salad and crusty bread and your meal is complete. 1 head cabbage (about 3 pounds)
1 1/2 lbs ground beef
1/2 lb ground pork
1/2 cup onion, chopped
1/2 cup rice (instant)
1/2 teaspoon salt
1/4 teaspoon pepper
1 (10 1/2 ounce) can tomato soup
8 ounces spicy hot V8
6 ounces V8 vegetable juice
6 fluid ounces water
8 ounces tomato sauce
1 cup sharp cheddar cheese, grated
1 cup mozzarella cheese, grated

Steps:

  • Cut the cabbage into medium size pieces and place in the bottom of a greased 9x13 in casserole dish.
  • Brown the meat and onion in a large skillet, drain well, return to skillet.
  • Stir the rice, salt and pepper into the meat.
  • Spoon the meat/rice mixture over the cabbage.
  • In a saucepan, heat soup, V-8 juice and water to boiling.
  • Pour over ingredients in casserole dish.
  • Sprinkle cheese over all.
  • Cover tightly with foil.
  • Bake at 350 degrees for 1 1/2 hours.

1 1/2 lbs ground beef
1 teaspoon salt
1/4 pepper
2 medium chopped onions
1 cup water
1 garlic clove, minced
1 (14 ounce) can tomato sauce
1/2 cup uncooked rice
1 small cabbage, shredded

Steps:

  • In large skillet, brown ground beef.
  • Stir in onions, garlic, salt, pepper, tomato sauce and water. Then add uncooked rice.
  • Cover and simmer almost 20 minutes or until rice is nearly tender.
  • Place half of shredded cabbage in a greased baking dish.
  • Cover with half of rice mixture.
  • Repeat layer- do not stir.
  • Cover and bake for 1 hour at 350.

1 green pepper (chopped)
1 tablespoon cooking oil
1 teaspoon salt
3 tablespoons uncooked rice
1 (10 1/2 ounce) can condensed tomato soup
1 (8 ounce) can tomato sauce
3/4 cup water

Steps:

  • Brown ground beef in oil; add onion,green pepper, salt and rice.
  • Slice cabbage in bottom of casserole dish; spread beef mixture over cabbage.
  • Mix tomato soup and water; add tomato sauce.
  • Pour over cabbage and meat.
  • Cover and bake at 350° for 1 1/2 hours.

1 onion, chopped
1 (10 3/4 ounce) can tomato soup
salt and pepper, to taste

Steps:

  • Brown beef with onion.
  • Boil cabbage 3 min, than drain.
  • Alternate layers of beef and onion with cabbage in 2 qt casserole or crock pot.
  • Pour soup, undiluted, over top.
  • Bake uncovered 30 min at 350 F, or 6-8 hrs on low in crock pot.
