2 tablespoons balsamic vinegar
1 tablespoon fresh chives, chopped
1 tablespoon lemon juice
1 tablespoon grainy mustard
2 teaspoons olive oil
1 teaspoon fresh dill, chopped
1 teaspoon honey
1/4 teaspoon black pepper
1/8 teaspoon salt
4 cups mixed salad greens
2 cups savoy cabbage, thinly sliced
1 cup cherry tomatoes, halved
1/2 cup green onion, diagonally cut

Steps:

  • Combine 1st ten ingredients, stirring well with a whisk.
  • Combine salad greens, cabbage, tomatoes and onions in a large bowl. Drizzle dressing over veggies and serve.

From the back label of a package of Trader Joe's brand organic herb salad mixed greens. If you cannot find herb salad mixed greens, simply use any loose leaf lettuce or mixed greens and add about two to three tablespoons each fresh parsley, dill and cilantro. In a previous life I was a rabbit.

1 (5 ounce) package herb mixed salad greens
1 large orange, peeled and segmented
6 ounces jicama, peeled and julienned (substitute carrots or parsnips if you wish)
1 cup pistachios, shelled and toasted
1/2 cup goat cheese (your choice, chevre, feta, etc.)
1 lemon, zest of
1 orange, zest of
3 tablespoons fresh lemon juice
1 large shallot, minced finely
1/4 cup extra virgin olive oil
salt, to taste
fresh ground black pepper, to taste

Steps:

  • Toast the pistachio nuts and set aside to cool.
  • Prepare the vinaigrette in a small, non-reactive bowl and allow to marinate. Best made at least 1 hour in advance.
  • In a large salad bowl, toss the lettuce of your choice with the remaining salad ingredients and 1 tablespoon of the salad dressing.
  • Serve the remaining salad dressing on the side.

NOTE after making dish: Mine turned out VERY thick and so I thinned it with some water and vinegar, but then it needed more seasoning (garlic worked well). So don't be afraid to play around with this recipe a little, as it truly is a good springboard for a dressing. It is fresh tasting and beautiful in color.

1 garlic clove
1 small shallot
1/4 cup fresh parsley, loosely packed
1 small sprigs fresh tarragon
3 fresh basil leaves
1 sprig rosemary, stem removed
3 tablespoons white wine vinegar
1 tablespoon light agave nectar
1/4 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
2 teaspoons dijon-style mustard
1/2 cup safflower oil (or olive oil)
1/2 English cucumber, cut into 1/4-inch thick half moons
2 heads romaine lettuce, roughly chopped
1/2 vidalia onion, finely diced
1 kohlrabi, peeled and finely diced

Steps:

  • Mince the garlic and shallot in a food processor. Scrape down sides and the add parsley, tarragon, basil and rosemary. Pulse to chop.
  • Add the vinegar, agave nectar, salt, pepper, mustard, and 1 tbls. water. Pulse again. With the machine running, slowly pour in the oil in a thin stream.
  • Place the cucumber, lettuce, onion, and kohlrabi in a large bowl. Drizzle with vinaigrette and toss to coat. Enjoy!
