The B.L.T. has met its match. Sweet cabbage lightly sautéed with a hint of lemon, anchovy, and onion complements crisp, salty bacon and a smear of mayonnaise on lightly toasted bread.

4 slices thick-cut bacon, such as Nueske's (6 ounces), halved crosswise
2 tablespoons unsalted butter
2 anchovies in oil, minced
1/2 small yellow onion, chopped (3/4 cup)
Kosher salt and freshly ground pepper
1/2 small green cabbage, cut into 1 1/2-inch pieces (4 cups)
1 teaspoon fresh lemon juice
Mayonnaise, for spreading
4 slices (each 1/2 inch thick) soft white sandwich bread, preferably shokupan, lightly toasted

Steps:

  • Cook bacon in a large skillet over medium‐high heat, flipping once, until crisp and golden brown, about 8 minutes. Transfer to a paper‐towel‐lined plate.
  • Wipe skillet clean; return to medium‐high heat. Swirl in butter until melted. Add anchovies and onion; season with salt and pepper and cook, stirring occasionally, until just beginning to brown, about 6 minutes. Add cabbage and 1/4 cup water; season with salt and pepper. Cook until cabbage is wilted slightly but still crisp‐tender, about 5 minutes. Stir in lemon juice; season with salt and pepper. Spread mayonnaise onto one side of each bread slice; sandwich cabbage mixture and bacon. Serve immediately.

5 thick bacon strips, cut into small pieces
1 large onion, chopped
2 cloves garlic, minced, or more to taste
1 medium head cabbage, shredded or chopped
1 teaspoon paprika
1 pinch white sugar
salt to taste
ground black pepper to taste

Steps:

  • Cook bacon in a skillet over medium heat until crisp, about 5 minutes. Remove bacon and set aside. Add onion and garlic and cook in bacon grease until onion is soft and translucent, about 5 minutes. Stir in cabbage, paprika, sugar, salt, and pepper; mix to combine. Cook for about 10 minutes.
  • Stir cooked bacon into the skillet with the cabbage mixture. Simmer over low heat until cabbage reaches the desired consistency, 20 to 30 minutes. Serve hot or warm.

6 slices bacon, chopped
1 large onion, diced
2 cloves garlic, minced
1 large head cabbage, cored and sliced
1 tablespoon salt, or to taste
1 teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
⅛ teaspoon paprika

Steps:

  • Place the bacon in a large stockpot and cook over medium-high heat until crispy, about 10 minutes. Add the onion and garlic; cook and stir until the onion caramelizes; about 10 minutes. Immediately stir in the cabbage and continue to cook and stir another 10 minutes. Season with salt, pepper, onion powder, garlic powder, and paprika. Reduce heat to low, cover, and simmer, stirring occasionally, about 30 minutes more.

1 (2 pound) green cabbage
2 large garlic cloves, or more to taste, smashed
1 ½ tablespoons olive oil
kosher salt and ground black pepper to taste
1 pound bacon
2 tablespoons brown sugar, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Spray a baking sheet with nonstick cooking spray.
  • Pull outer leaf off cabbage. Cut cabbage into 1-inch thick steaks and place on the baking sheet. Rub both sides of cabbage steaks with smashed garlic. Use a pastry brush to evenly spread olive oil on both sides. Sprinkle salt and pepper over each side.
  • Roast in the middle of the preheated oven for 30 minutes. Carefully flip the cabbage steaks and place 1 to 2 bacon slices on each steak. Sprinkle brown sugar on top. Roast until cabbage is tender and bacon is crisp, about 30 minutes more.

1 head cabbage
2 tablespoons butter, or as needed
1 sweet onion (such as Vidalia®), chopped
½ pound bacon, or more to taste
1 cup barbeque sauce
2 slices bacon, or as desired

Steps:

  • Cut the knot from the bottom of the cabbage and remove the core.
  • Heat 1 tablespoon butter in a skillet over medium heat; cook and stir onion until softened, about 10 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels, reserving bacon drippings. Chop bacon into small pieces. Mix onion, bacon, and barbeque sauce together in a bowl.
  • Fill the hole in the cabbage with onion-bacon mixture and place pieces of butter into the core to fill completely. Drape 2 bacon strips over filling and hold in place with toothpicks.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Make a ring out of aluminum foil and place on grill.
